BRUNCH OVEN OMELET WITH CANADIAN BACON

Brunch Oven Omelet with Canadian Bacon image

Nothing could be easier than baking omelets for everyone in one dish! Topped with maple-flavored Canadian bacon, it's a real crowd pleaser, too.

Provided by By Betty Crocker Kitchens

Categories     Breakfast

Time 50m

Yield 12

Number Of Ingredients 9

1 lb Canadian-style bacon, cut into 24 (1/8-inch) slices
1/4 cup maple-flavored syrup
1/4 cup butter or margarine
18 eggs
1 cup sour cream
1 cup milk
2 teaspoons salt
4 medium green onions, chopped (1/4 cup)
Chopped fresh parsley

Steps:

  • Heat oven to 325°F. Place bacon slices on sheet of heavy-duty foil. Pour syrup over bacon. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • In 13x9-inch (3-quart) glass baking dish, melt butter in oven. Tilt dish so butter coats bottom. In large bowl, beat eggs, sour cream, milk and salt with wire whisk until blended. Stir in onions. Pour into baking dish.
  • Bake omelet and bacon packet about 35 minutes or until eggs are set but moist and bacon is hot. Arrange bacon on omelet. Sprinkle with parsley.

2 tablespoons water
¼ cup shredded sharp Cheddar cheese
1 slice process American cheese, diced

OPENED-FACED OMELET WITH LEMON-DILL CREAM CHEESE, SMOKED SALMON AND GRILLED ASPARAGUS

Opened-Faced Omelet with Lemon-Dill Cream Cheese, Smoked Salmon and Grilled Asparagus image

Provided by Bobby Flay

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 11

8 ounces cream cheese, such as Philadelphia, at room temperature
1/4 cup finely chopped fresh dill
Finely grated zest of 1 lemon
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
12 thin spears fresh asparagus, trimmed
2 tablespoons canola oil, plus more to coat the pan
Kosher salt and freshly ground black pepper
12 large eggs
12 paper-thin slices nova smoked salmon
Fresh dill fronds, for garnish

Steps:

  • For the lemon-dill cream cheese: Mix together the cream cheese, dill and lemon zest and juice in a small bowl and season with salt and pepper. Cover and let sit at room temperature to allow the flavors to meld, at least 15 minutes.
  • For the omelets: Heat a grill pan over high heat. Brush the asparagus with 2 tablespoons oil and season with salt and pepper. Grill the asparagus on all sides until slightly charred and crisp-tender, about 5 minutes. Cut into thirds.
  • Heat a 6-inch nonstick pan over medium heat and brush with some oil. Whisk together 3 eggs in a small bowl until light and fluffy. Add to the pan and cook, stirring constantly with a heat-resistant rubber spatula, until barely cooked, about 20 seconds. Stir in some salt and pepper. Flip and cook until just set, but not dry, and barely golden brown on the bottom, 10 to 15 seconds more. Slide the omelet onto a plate. Spread some of the cream cheese over the omelet and top with some of the asparagus and 3 slices of the salmon. Garnish with some dill fronds. Transfer to a plate and repeat with the remaining ingredients.

OMELET WITH SMOKED BLEU CHEESE AND CARAMELIZED BACON

Omelet With Smoked Bleu Cheese and Caramelized Bacon image

I had Oregon-made Rogue Creamery 'Smokey Blue' blue cheese leftover and thought I'd throw an omelet together after reading the description of said cheese. Experiment with another fresh herb of choice. May I suggest this recipe for caramelizing the bacon?: Recipe #421812. I used a combination of garlic-flavored olive oil and butter.

Provided by COOKGIRl

Categories     Breakfast

Time 13m

Yield 1-2 serving(s)

Number Of Ingredients 8

3 eggs
cracked black pepper
1/4 cup smoked blue cheese (plus a small amount for garnish)
1 tablespoon olive oil (or combination of both and about 1 tablespoon total) or 1 tablespoon butter, for cooking (or combination of both and about 1 tablespoon total)
1 garlic clove, minced (or use garlic-flavored olive oil)
2 slices bacon, caramelized and crumbled
2 tablespoons toasted hazelnuts, coarsely chopped
1 tablespoon fresh parsley (to garnish)

Steps:

  • Whisk the eggs in a bowl with some cracked black pepper.
  • Stir in the blue cheese.
  • Heat up the (garlic-flavored) olive oil and/or butter in an omelet pan on medium heat.
  • Pour in the eggs (and garlic if using) and cook gently until just ready to fold.
  • Fold the sides in to the center of the omelet and plate. (Yes, the center of the omelet will be slightly runny.) The bottom of the omelet should not be brown at all.
  • Garnish with a small amount of bleu cheese, the crumbled bacon, chopped hazelnuts and fresh parsley.
  • We served our omelet with steamed carrots and roasted small Yukon gold potatoes for an easy weeknight meal.
