OLD-FASHIONED BANANA CAKE
Steps:
- Preheat the oven to 350 degrees. Grease and flour a 9 by 2-inch round cake pan.
- In the bowl of an electric mixer fitted with the paddle attachment, mix the bananas, granulated sugar, and brown sugar on low speed until combined. With the mixer still on low, add the oil, eggs, sour cream, vanilla, and orange zest. Mix until smooth.
- In a separate bowl, sift together the flour, baking soda, and salt. With the mixer on low, add the dry ingredients and mix just until combined. Stir in the chopped walnuts, if using. Pour the batter into the prepared pan and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, turn out onto a cooling rack, and cool completely.
- Spread the frosting thickly on the top of the cake and decorate with walnut halves, if using.
- Mix the cream cheese, butter, and vanilla in the bowl of an electric mixer fitted with the paddle attachment on low speed until just combined. Don't whip! Add the sugar and mix until smooth.

- Heat oven to 350°F.
- Drain pineapple, reserving juice. Remove 2 Tbsp. juice; reserve for later use. Pour remaining juice into 13x9-inch baking dish sprayed with cooking spray. Add drained pineapple; mix well.
- Reserve 1/2 banana for later use. Chop remaining bananas; place over pineapple. Sprinkle with dry cake mix, then nuts. Drizzle with milk.
- Bake 30 to 35 min. or until lightly browned. Cool 10 min.
- Beat Neufchatel, sugar and reserved pineapple juice with mixer until blended. Cut reserved banana half into 12 slices. Cut cake into 12 pieces.
- Serve cake pieces topped with Neufchatel mixture and banana slices, adding about 1-1/2 tsp. Neufchatel mixture and 1 banana slice to each cake piece.

- 1. Preheat oven to 350 degrees.
- 2. Grease a 9 X 13 pan.
- 3. Mix together oleo, sugar, eggs, bananas, sour cream, flour, baking soda, baking powder, and 1 tsp of vanilla until smooth and pour into 9 x 13 pan.
- 4. Bake at 350 degrees for 40 minutes.
- 5. While cake is baking, beat together the other tsp on vanilla, cream cheese, and confectioners' suger until smooth.

BANANA-CHOCOLATE CHIP UPSIDE DOWN CAKE

Steps:
- To make the topping, mix the brown sugar and water together in an 8-inch square metal cake pan or cast iron skillet.
- Heat the mixture until it begins to boil, reduce the heat and simmer 45 seconds, stirring constantly.
- Remove from heat and set aside to cool.
- When cool, slice the bananas into 1/4-inch thick slices.
- Arrange them in rows over the melted sugar in the pan, overlapping them slightly.
- Sprinkle the slices with the lemon juice.
- To make the cake, preheat the oven to 350 degrees.
- Sift the flour, baking powder, baking soda, salt and cinnamon into a large bowl.
- Stir in the granulated sugar.
- In a separate bowl, mix together the butter, egg, egg white, banana puree, sour cream and vanilla.
- Make a well in the center of the flour mixture and stir in the wet ingredients until just combined.
- Fold in the chocolate chips.
- Carefully spread the batter over the bananas and bake for 40 minutes.
- Remove from oven and allow to cool for at least 20 minutes.
- Loosen the edges of the cake from the pan and invert on a serving platter.

- Preheat oven to 325 degrees F (165 degrees C).
- Beat egg whites until stiff but not dry.
- Combine cream of tartar, baking powder, vanilla, cinnamon, oats, and mashed bananas.
- In a separate bowl combine the flour, confectioner's sugar, and salt.
- Fold the banana mixture into the egg whites. Then fold the flour mixture into the egg white/banana mixture. Pour batter into one 9 or 10 inch round cake pan, coated with a non-stick cooking spray.

- 1. Preheat the oven to 350 degrees.
- 2. Mix cake as directed on the box. Set aside.
- 3. Spray a 9x13 pan with butter cooking spray.
- 4. In a small bowl cream the butter and brown sugar. Spread the mixture on the bottom of the baking dish.
- 5. Slice the bananas long way and cut in half and arrange in bottom of pan. Put peanut butter by the teaspoons on the bottom of the pan. Arrange the jelly in open areas. Toss in chocolate morsels. Pour cake batter over the ingredients.

- 9. Cut into squares and serve.
