TUSCAN WHITE BEAN PASTA

This Tuscan White Bean Pasta is a fast and flavorful dish that is perfect for weeknight dinners. Caramelized garlic, basil, and Parmesan add BIG flavor!

8 oz. linguine or fettuccine ($0.63)
1 Tbsp olive oil ($0.13)
1 Tbsp butter ($0.13)
3 cloves garlic, minced ($0.24)
1 pint grape or cherry tomatoes ($1.99)
10 cranks freshly ground pepper ($0.03)
1/2 tsp salt ($0.02)
1/2 tsp dried basil ($0.05)
1 15oz. can cannellini beans ($0.69)
4 oz. baby spinach ($0.65)
3 oz. shredded parmesan ($1.89)

Steps:

  • Fill a large pot with water and place over high heat to bring it to a boil. Once boiling, add the pasta and cook according to the package directions (boil for 7-10 minutes). Drain the pasta in a colander.
  • While you're waiting for the water to boil, mince the garlic. Heat the olive oil and butter in a large skillet over medium-low heat. Add the garlic and sauté for about a minute, or until it has softened and become very fragrant.
  • Add the tomatoes, salt, pepper and basil. Sauté the tomatoes until the skins burst and the tomatoes begin to release their juices. It's important to not have the heat under the skillet too high here or the garlic may burn before the tomatoes break down. You want the garlic to brown and caramelize a bit, but not burn.
  • Once the tomatoes begin to break down, add the spinach and stir it into the tomatoes until it is about half way wilted.
  • Rinse and drain the can of cannellini beans. Add the beans to the skillet and stir until they are heated through. The tomato juices will have created a thick sauce-like mixture on the bottom of the skillet at this point. Taste the mixture and add a bit more salt if needed. It should be slightly on the salty side in order to properly flavor the pasta.
  • Add the cooked and drained pasta to the skillet. Toss until the pasta is coated in the sticky sauce and everything is combined. Top with shredded parmesan, plus add a bit of Parmesan to the top of each bowl.

Pasta and beans, or pasta e fagioli, is a quick and easy, inexpensive, nutritious and delicious meal that the entire family will enjoy. Children especially love it.

8 ounces bite size pasta (tubetti, small shells, broken spaghetti, linguine etc. can all be used)
use De Cecco for best results
8 ounces (one cup) cooked beans especially cannellini, Borlotti or kidney(any kind of bean will do, including garbanzo)
4 ounces pasta sauce (1/2 cup) more or less depending on your taste of course homemade is best, but the jarred kind will work
(optional: Parmigiano Reggiano, grated, to serve - please don't use a lesser quality cheese-read my rant below)

Steps:

  • Boil the pasta according to the directions on the package until it is almost al dente (a little hard, not completely cooked). Remove some water, (but reserve to use later, if needed); I usually try to make the water level with the pasta.
  • Add the beans.
  • Now add the pasta sauce. If it's too dry, add some of the reserved pasta water.
  • Stir thoroughly, and just let the pasta start to come to a boil, then remove from heat. Ladle into serving bowls, add grated Parmigiano Reggiano cheese, if desired, and dinner is served!

Pasta with Creamy White Beans image

1 1/2 teaspoons kosher salt, plus more for the pasta
1 pound shell pasta
1/4 cup olive oil
1 carrot, peeled and diced
1 small red onion, diced
1 1/2 teaspoons kosher salt
1/2 teaspoon red pepper flakes
1/4 teaspoon dried thyme
One 15-ounce can cannellini beans, drained and rinsed
1 cup low-sodium chicken broth
8 ounces smoked provolone or smoked mozzarella, grated (about 2 cups)
One 5-ounce container baby spinach, chopped

Steps:

  • Bring a large pot of water to a boil. Season well with salt. Add the pasta and cook for 3 minutes less than indicated in the package directions, about 7 minutes. Drain well reserving 1/2 cup pasta water.
  • Heat a large skillet over medium-high heat until hot. Add the oil, carrot and onion to the skillet. Season with 1 teaspoon salt and cook, stirring often, until fragrant and beginning to soften, about 3 minutes. Add the pepper flakes and thyme and cook another minute. Stir in the drained beans and chicken broth. Reduce the heat to medium to maintain a simmer and cook for 5 minutes, stirring occasionally. Use the back of a spoon to gently mash some of the beans. Set aside.
  • Add the cooked pasta to the sauce. Sprinkle the grated cheese over the pasta and toss to coat well. Stir in the remaining 1/2 teaspoon salt and add the 1/2 cup pasta water as needed to maintain a creamy, broth-like sauce. Sprinkle in the spinach and cook until wilted.

3 tablespoons unsalted butter
4 small leeks (white and light green parts only), thinly sliced
2 tablespoons fresh thyme
Kosher salt and freshly ground pepper
8 ounces ham steak (or leftover ham), cut into 1/2-inch pieces (about 1 1/2 cups)
3 tablespoons all-purpose flour
1 2/3 cups half-and-half
2 cups shredded fontina cheese (about 6 ounces)
6 ounces bow-tie pasta (about 2 1/2 cups)
2 cups frozen peas
1/4 cup grated parmesan cheese

Steps:

  • Melt the butter in a large ovenproof skillet over medium-high heat. Add the leeks, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, until the leeks are tender, 8 to 10 minutes. Add the ham and cook until warmed through, about 2 minutes. Add the flour and cook, stirring, until moistened, 1 minute. Add the half-and-half and bring to a boil, then reduce to a simmer and cook until slightly thickened, about 2 minutes. Stir in 1 cup fontina until melted.
  • Meanwhile, preheat the broiler and bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente, adding the peas in the last 2 minutes of cooking. Reserve 1/2 cup cooking water, then drain the pasta and peas.
  • Add the pasta and peas to the skillet and toss to coat, adding the reserved cooking water as needed to loosen; season with salt and pepper. Top with the remaining 1 cup fontina and the parmesan. Broil until lightly browned, 4 to 5 minutes.

1 jar (1 lb. 10 oz.) Ragú® Old World Style® Pasta Sauce
3 cups water
12 ounces uncooked whole wheat rotini pasta
1 cup shredded part-skim mozzarella cheese (about 4 oz.)

Steps:

  • 1. Brown ground beef in 12-inch skillet; drain.
  • 2. Stir in Pasta Sauce and water. Bring to a boil over high heat. Stir in uncooked rotini and return to a boil. Reduce heat to medium and cook covered, stirring occasionally, 14 minutes or until rotini is tender. Remove from heat, then sprinkle with cheese. Cover and let stand 5 minutes or until cheese is melted.

1 small yellow onion, diced
5 ounces Tuscan kale, stemmed and finely chopped (about 2 cups)
Two 15-ounce cans chickpeas, rinsed and drained
One 14-ounce can crushed tomatoes
1 tablespoon cornstarch
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup ketchup
2 tablespoons spicy brown mustard
1 tablespoon tomato paste
1 1/2 cups vegetable stock
3 cups broad egg noodles (4 ounces)
2 cups grated Cheddar (8 ounces)

Steps:

  • In a large skillet over medium-high heat, heat the oil. Add the onions and cook until softened and browning, about 3 minutes. Add the kale and cook until wilted, about 1 minute. Add the chickpeas and tomatoes and stir to combine. Cook until the tomatoes are simmering.
  • In a small bowl, mix the cornstarch with 2 tablespoons water and add to the skillet. Add the garlic powder, onion powder, paprika, salt and pepper and mix well. Return the mixture to a simmer, then add the ketchup, mustard and tomato paste. Mix well, then stir in the stock. Add the noodles, stir to coat and bring to a simmer. Reduce the heat to medium low and cover with a lid. Cook, stirring occasionally, until the noodles are cooked through and the sauce has thickened, 10 to 12 minutes.
  • Sprinkle the Cheddar over the top and cover the skillet to allow the cheese to melt, about 1 minute. Stir to mix in the cheese and serve warm in the skillet.
