1 pound of sea scallops
3 limes
1 tablespoon lime zest
1 tablespoon vegetable oil
1 cup sweet onion, chopped
1 orange bell pepper, chopped
1 tablespoon ginger paste
2 tablespoons fish sauce
5 teaspoons Thai red curry paste
2 tablespoons chili garlic sauce
1 can unsweetened coconut milk (not lite)
Salt and pepper
Steamed jasmine rice
Fresh cilantro, for garnish
Fresh Thai basil, for garnish
Lime wedges, for garnish

Steps:

  • One option for this recipe is to start with a sous vide your scallops. You can check this recipe on how to sous vide scallops.
  • If you're not going to sous vide them, skip this step and just ensure that you fully cook your scallops when searing them later in the recipe.
  • Add oil to a skillet and saute the onions and peppers for about 5 minutes or until the onions are translucent.
  • Add in ginger paste, fish sauce, curry paste, chili garlic sauce, coconut milk, juice of 3 limes, and lime zest. Season with salt and pepper to taste.
  • Simmer for about 7 minutes. In a separate pan, sear your sous vide scallop for 1-2 minutes until a nice golden sear emerges.
  • In a bowl, spoon the curry over a bed of jasmine rice and top with the scallops.
  • Garnish with fresh herbs and lime wedges.

This is a green curry recipe I've cobbled together over the years. The vegetables aren't completely traditional, but they give the whole thing a good texture and variety. Often asked for in my household, hopefully it'll become a favorite in yours. Serve over rice.

2 tablespoons peanut oil
¼ cup Thai green curry paste
3 cloves garlic, minced
1 (1/4 inch thick) slice ginger, finely grated
2 boneless, skinless chicken breasts, thinly sliced
1 (15 ounce) can baby corn pieces, drained
1 (8 ounce) can bamboo shoots, drained
2 (13.5 ounce) cans coconut milk
2 tablespoons fish sauce
2 tablespoons palm sugar
6 kaffir lime leaves
1 red bell pepper, cut into thin strips
1 orange bell pepper, cut into thin strips
¼ cup thinly sliced Thai basil, or more to taste

Steps:

  • Heat oil in a wok until it starts to shimmer. Add curry paste, garlic, and ginger; stir together and fry until fragrant, 2 to 3 minutes. Add chicken breast slices, stirring until coated. Cook until just slightly pink in the center, 3 to 5 minutes.
  • While chicken is cooking, place baby corn and bamboo shots in a small saucepan, cover with water, and place over high heat. Bring to a boil. Drain then cover with water again.
  • Pour coconut milk into the wok. Bring to a slow simmer, stirring occasionally, about 5 minutes. Drain corn and bamboo shoots and add in. Stir in fish sauce, palm sugar, and kaffir lime leaves. Bring back up to a simmer and cook for 5 minutes. Stir in bell pepper strips and cook until crisp-tender, about 3 minutes.
  • Remove curry from heat and stir in Thai basil.

Steps:

  • Heat oil in large saucepan over medium heat. Add the white and pale green parts of the green onions, 1 tablespoon cilantro, and garlic; sauté until tender, about 2 minutes. Add the curry paste; cook until fragrant, about 1 minute. Add 1 1/4 cups water, coconut milk, chiles, lime leaves, and fish sauce. Bring to simmer. Add the carrot; cover and cook until carrot is just tender, about 5 minutes.
  • Layer bok choy, shrimp, scallops, and mussels in pan. Cover and simmer until mussels open and seafood and bok choy are cooked (discard mussels that do not open), about 5 minutes. Stir in the dark green parts of green onions, 2 tablespoons cilantro, and basil.

3 scallions, white and green parts thinly sliced separately
1 lb sea scallops, tough muscle removed from side of each if necessary
3/4 lb large shrimp, shelled and deveined
1 (14-oz) can unsweetened coconut milk
1 tablespoon Thai green curry paste
1/4 cup chicken broth or water
1 tablespoon packed light brown sugar
1 1/2 tablespoons Asian fish sauce

12 oz dried thin linguine

Steps:

  • Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté chile and white parts of scallions, stirring occasionally, until lightly browned. Transfer with a slotted spoon to paper towels to drain.
  • Pat scallops and shrimp dry separately and season with salt. This is a classic Thai green curry (kaeng kiau wan) and my favorite curry of all time! You can substitute chicken or tofu for the pork, but make sure you serve it with lots of jasmine rice.

1 tablespoon white sugar
½ teaspoon salt
8 kaffir lime leaves, thinly sliced

Steps:

  • Bring a large pot of water to a boil and cook bamboo shoots for 5 minutes. Drain.
  • Heat oil in a large pot over medium heat and cook curry paste until fragrant, about 2 minutes. Add pork, increase heat and cook until starting to brown, 3 to 5 minutes. Add bamboo shoots, coconut milk, and red bell pepper. Reduce heat and bring to a simmer. Season with sugar and salt; simmer for 10 minutes. Stir in kaffir lime leaves. Cook for 1 more minute. Season with fish sauce. Stir in Thai basil and serve.

Don't be put off by the long list of exotic ingredients - they're all available in large supermarkets nowadays and the recipe is very quick to make. Serve with steamed rice.

3 lemongrass stalks, chopped
4 green bird's-eye chillies, seeds removed, chopped
4 lime leaves, chopped
1 lime, zest and juice only
1 banana shallot, chopped
2cm/¾in knob galangal (or fresh root ginger)
2 garlic cloves, peeled and chopped
4 tbsp coriander root
1 tsp ground cumin
1 tsp ground coriander
½ tsp crushed black peppercorns
2 tbsp Thai fish sauce
1 tsp palm sugar
2 tbsp vegetable oil
400ml/14fl oz coconut milk
125g/4½oz pea aubergines
2 limes, juice only
12 hand-dived scallops, scallop removed and roe discarded
2 tbsp chopped coriander leaves
2 tbsp Thai basil, torn

Steps:

  • For the paste, place all the ingredients in a blender and blend until smooth.
  • For the curry, heat a wok and add a tablespoon of oil and the paste. Cook for a couple of minutes and then add the coconut milk, pea aubergines and lime juice.
  • Meanwhile, heat a large frying pan and add the remaining oil. Once hot, add the scallops. Cook for a couple of minutes on each side.
  • To serve, place the scallops on serving plates and pour over the sauce, or drop the scallops in the sauce just before serving. Garnish with the coriander and Thai basil.

I didn't have any green or red curry paste as a base, so I had to improvise and came up with this, it might have just been a one-hit-wonder, as I haven't made this dish again and am drawing the spices from memory, so just sample the paste and if it tastes about right, go with it!

gingerroot, peeled (about 2-3-inch)
2 teaspoons garlic (minced from a jar is fine)
2 teaspoons honey
2 teaspoons chili powder
1 1/2 teaspoons turmeric
2 tablespoons fresh cilantro
2 tablespoons desiccated sweetened coconut
3 teaspoons hot madras curry (McCormicks)
1 teaspoon salt
2 tablespoons fish sauce
3 teaspoons lime juice
2 tablespoons vegetable oil (or peanut oil)
1 lb shrimp
1 lb scallops
1 (14 ounce) can coconut milk
150 g rice or 150 g bean noodles

Steps:

  • Using a food processor, puree the ginger and garlic.
  • Add in the rest of the sauce ingredients to form a relatively thick paste.
  • It's best to refrigerate the paste for a few hours to let the flavors inter-mingle, but if you have to use it right away, than do so.
  • Heat the oil over high heat, and add the scallops and shrimp when the pan (or wok) is uniformly hot.
  • At the same time, boil some water for the noodles (or you can serve with rice if you want).
  • Stir the shrimp and scallops frequently for about 2 minutes, until slightly browned.
  • Add in the paste, and reduce heat slightly, coating the scallops and shrimp thoroughly.
  • After about 90 seconds, slowly stir in a can of coconut milk.
  • Reduce heat and simmer for a few minutes to reduce the liquid.
  • Serve over noodles or rice.
