POTATO-LEEK SOUP WITH MINI PIEROGI

- 12 frozen mini pierogi (half of a 1-pound package) Chopped fresh chives, for topping
- Melt the butter in a large pot or Dutch oven over medium heat. Add the leeks and onion and cook, stirring occasionally, until softened, about 5 minutes. Add the potatoes, garlic, 1 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until well coated, about 2 minutes.
- Add 3 cups water, the chicken broth and bay leaf. Bring to a boil, then reduce the heat to maintain a simmer. Cook until the potatoes are very tender, 15 minutes. Discard the bay leaf. Working in 2 or 3 batches, puree the soup in a blender until smooth. Transfer to a clean pot and stir in the cream; season with salt and pepper. Keep warm over low heat.
- Meanwhile, cook the bacon in a nonstick skillet over medium heat, stirring, until crisp, about 7 minutes. Transfer to paper towels using a slotted spoon. Add the pierogi to the skillet and cook, flipping halfway through, until golden brown and warmed through, about 5 minutes. Top each serving of soup with pierogi, bacon and chives.

- Preheat oven to 375 degrees F (190 degrees C). Spray the bottom and sides of a lasagna-size casserole dish with cooking spray.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 10 minutes. Transfer bacon to a paper towel-lined plate to drain. Cook and stir onion in hot bacon grease until golden, 5 to 10 minutes. Transfer onion to bacon and drain bacon grease from the skillet.
- Melt butter in the same skillet over medium-high heat. Saute mushrooms in hot butter until golden and moisture evaporates, 5 to 10 minutes.
- Cover the bottom of the prepared casserole dish with a single layer of frozen pierogies and spread 1 can condensed cream of mushroom soup on top. Layer bacon, onions, and mushrooms over the top. Spread remaining pierogies over mushrooms, cover with remaining cream of mushroom soup, and top with Cheddar cheese. Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 45 minutes. Remove aluminum foil and continue baking until casserole is golden and cheese is bubbling, 10 to 15 minutes.

Steps:
- 1. Cut each pierogie lengthwise, then 3 times crosswise, so each will be cut into 8 pieces.( partially thaw them for a few minutes and they will be easier to cut)
- 2. In a soup pot, melt the butter. Add the chopped onion and cabbage; sauté for 5-7 minutes or until onions are translucent. Do not brown.
- 3. Add the pierogies and chicken broth.
- 4. Add the garlic powder, salt, pepper and paprika.
- 5. Bring to a boil. Reduce heat and gently simmer for about 15 minutes, stirring occasionally.
- 6. Add the milk and cheese. Cook and stir over low heat until heated through and cheese is melted, about 5 minutes.

- In a saute pan melt the butter and saute the onions until they are tender.
- Once the onions are tender, add the kraut and saute everything for about two minutes and then take the pan off the heat and set aside.
- Next, in a soup pot add the broth and add the Lipton mushroom onion soup mix. Stir that it is all mixes together.
- Add in the onion kraut mixture and bring to a boil.
- Add the pierogies, and turn the heat down so that simmers for about 20 minutes.
- Mix in the bacon, and turn the heat off.

- Combine three cups of chicken broth, frozen pierogies, cheddar cheese and kielbasa in a 4-6 quart crock pot. Cook on high 3-4 hours, or on low for 6 hours.
- About thirty minutes before serving, warm up cream cheese with remaining one cup of the chicken broth in microwave until the cream cheese is warm. Or you can warm it up on the stove top. Whisk it together until smooth.
- Pour this mixture into crock pot. Stir. Top with remaining one cup of cheese. Cover and cook on low for an additional 30 minutes. Then serve! Top with sliced green onions (optional)

- In a food processor, combine flour and salt; cover and pulse to blend. Add water, eggs and butter; cover and pulse until dough forms a ball, adding an additional 1 to 2 tablespoons of water or flour if needed. Let rest, covered, 15 to 30 minutes., Place potatoes in a large saucepan and cover with water. Bring to a boil over high heat. Reduce heat; cover and simmer until tender, 10-15 minutes. Meanwhile, in a large skillet over medium-high heat, saute onions in butter until tender; set aside., Drain potatoes. Over very low heat, stir potatoes until steam has evaporated, 1-2 minutes. Press through a potato ricer or strainer into a large bowl. Stir in cream cheese, salt, pepper and onion mixture; set aside., Divide dough into 4 parts. On a lightly floured surface, roll 1 portion of dough to 1/8-in. thickness; cut with a floured 3-in. biscuit cutter. Place 2 teaspoons of filling in center of each circle. Freeze option: Place cooled pierogi on waxed paper-lined 15x10x1-in. baking pans; freeze until firm. Transfer to an airtight freezer container; freeze up to 3 months. To use, for each serving, in a large skillet, saute 4 pierogi and 1/4 cup chopped onion in 1 tablespoon butter until pierogi are lightly browned and heated through; sprinkle with minced fresh parsley.

- In medium stock pot, add whole chicken, 12 cups water (or enough to cover), and 1 large bay leaf, (plus 2 large carrots, 2 ribs celery and 1 onion, quartered, if you have some but not necessary), bring to a simmer, and simmer for 1 1/2 - 2 hours with lid tilted. (Until very tender and legs fall away easily.) *I like to skim off the foam when the chicken is first starting cook.) Carefully remove with tongs, letting excess liquid from cavity drain away into pot, and place chicken into a large bowl and cover loosely until cool enough to handle. Strain broth of bay leaf, and bones that have fallen away, (and veggies if using), with a large, fine mesh strainer, into large stock pot. (*This will be used for the soup, and the extra to help cook the noodles in.) Discard bay leaf and veggies.
- To the smaller pot (that you just cooked the chicken in), add butter and onions, and sauté until softened, about 5 minutes. Add garlic and sauté 1 minute longer. Remove 6 cups broth from the large pot and add back to smaller pot that you just sautéed in. (*Leave the excess broth in the large pot to add flavor to the noodles later. *You can reserve 2 cups if you'd like. In case your soup comes out too thick for you personally, you can use it to thin it a bit to how you like it.)
- Continue adding to the small pot, the potatoes and chicken base, and bring to a low boil, covered, until potatoes are done. About 8 - 10 minutes. Check for tenderness.
- Add 1 1/2 cups of the heavy cream, Velveeta, white cheddar, pulled chicken, fresh parsley, chopped and thawed frozen spinach that has been drained and squeezed dry. Heat to a simmer, add 1/2 cup of the heavy cream mixed with 3 Tbl. cornstarch plus 1 tablespoon cold water, simmer until thickened, just a few minutes, gently stirring occasionally. Add salt & pepper to taste. Set aside.
