- Stand pineapple upright and cut in half, leaving the top attached. Remove fruit, leaving a 1-in. shell. Chop fruit; set aside 1 cup for salad and refrigerate the remaining fruit for another use., In a small bowl, combine mayonnaise and mustard. Stir in the ham, celery, green pepper and reserved pineapple. Spoon into pineapple halves.

- Cut pineapple in half lengthwise through crown. Remove fruit. leaving shells intact. Core and dice fruit.
- In large bowl, combine pineapple, ham chunks, cherry tomatoes, celery and green onions.
- In small bowl, combine all remaining ingredients for dressing, blending well.
- Spoon dressing over pineapple combination, tossing gently to mix.

- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain, rinse under cool water, and drain again.
- Meanwhile, combine mayonnaise, lime juice, soy sauce, vegetable oil, brown sugar, parsley, vinegar, allspice, thyme, marjoram, ginger, garlic powder, salt, nutmeg, pepper, and cinnamon for jerk sauce in a saucepan over medium heat. Bring to a boil. Remove from the heat and set aside to cool.
- Combine cooled pasta and cooled jerk sauce with pineapple, ham, and onion. Place in the refrigerator until chilled and flavors have developed, about 1 hour.

This is my favorite cold pasta salad. I'll eat it every day, every meal, until its gone. I love the dill and add more than the recipe suggests. This will feed an army. The number of servings is set at 8 but it seems more to me. I usually half the recipe unless I'm doing it for a potluck or company. Refrigeration time is not included in preparation or cook time. The pampered chef, I was wary of trying this even though the picture looked amazing. I am not a big fan of super spicy. So I make chicken breasts instead of tenders. It was sooo good I had seconds and wanted thirds!

- Wisk together jerk rub and olive oil. Add chicken and coat all sides. set aside.
- Slice pineapple into small chunks, or use a can or pineapple chunks drained.
- Cook chicken on both sides till cooked, then set aside. Cook pineapple in pan 1 minute on both sides. Cook bacon either in the oven or in the pan, let drain then crumble.
- Thinly slice red peppers and green onions. If you like arrange 12 lettuce leaves on a platter. Chop additional lettuce.
- Make dressing by wisking together the zest of one lime, and juice of 2. Add mayonaise and pineapple preserves. I didn't have preserves so I added pineapple juice and a few mashed up pieces of the pienapple.
- Layer salad on leaves, chopped lettuce, beans, bell peppers, chicken, pineapple, bacon and green onions.Drizle dressing over salad.
