CHEESE FILLED TRIANGLES
The only tricky part of this recipe is working with phyllo, and once you get the hang of it, it's fun. Sometimes you get a bad batch of phyllo that rips and tears easily, so I always buy an extra just in case. I have frozen these before baking. Just add a few minutes to cooking time when you cook them in a frozen state. I have also doubled this recipe for large parties.

Steps:
- Heat olive oil in a medium saucepan over medium heat. Slowly cook and stir onion until tender, about 5 minutes. Mix in spinach and salt. Stir in feta cheese, cottage cheese and egg. Cook and stir until thickened, 5 to 10 minutes. Reduce heat to simmer.
- Preheat oven to 400 degrees F (200 degrees C).
- Unroll phyllo dough sheets one at a time on a flat surface. Brush with unsalted butter. Cut into strips approximately 5 inches wide. Place 1 tablespoon of the onion, spinach and feta mixture at one end of each dough strip. Fold the end of the strip over the filling so that it forms a triangle. Continue folding the strip in triangles until a small, triangular stuffed pastry remains. Brush with unsalted butter. Repeat with remaining phyllo dough.
- Arrange stuffed triangles on a large baking sheet. Bake in the preheated oven 12 to 15 minutes, until golden brown. Serve warm.

CREAMY LEEK AND CHEESE PHYLLO CIGARS

Steps:
- For the filling: Melt the butter in a medium saute pan over medium heat. Add the leeks and saute until wilted and very soft, 4 to 5 minutes. Add the garlic and saute until fragrant, about 1 minute. Season with salt and pepper, and then transfer to a medium bowl.
- Stir in the soft cheese until it melts and the mixture becomes creamy. Stir in the Parmesan and parsley. Season with red pepper flakes if using. Set aside (you can scoop the filling later or pipe it by transferring the filling to a disposable piping bag with 1/2-inch opening cut from the tip).
- For the cigars: Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
- Open the phyllo dough and unfurl it. With one of the shorter sides facing you, cut the dough in half lengthwise (you're aiming for rectangles about 7-by-18-inches long, but exact size may vary based on brand of dough). Cover the dough with a lightly damp clean kitchen towel so it doesn't dry out while you assemble the cigars.
- Make a cigar by placing one sheet of cut phyllo on your work surface with one of the shorter sides facing you. Brush the dough all over (but lightly) with the melted butter and top with another piece of dough. Continue this process until you've layered three pieces of dough. Brush the surface of the final piece with butter, too.
- Scoop (or pipe) about 1 tablespoon of filling in a line on top of the dough on the side closest to you. Fold the outside pieces of dough inward, and then roll up the dough around the filling to make a cigar shape (a lot like rolling a burrito).
- Transfer the cigar to the prepared baking sheet, and then repeat with the remaining dough and filling. Brush any of the remaining melted butter over the assembled cigars and sprinkle smoked paprika over each one.
- Bake the cigars until golden and crisp, 17 to 22 minutes. Cool at least 5 minutes before serving warm.

Steps:
- 1. Heat 3 tablespoons of the olive oil over medium heat in a large, preferably nonstick, skillet and cook the onions until soft and lightly golden, or 10 to 12 minutes. Stir as you cook them. Remove from the heat and set aside.
- 2. Combine the cheeses, yogurt, remaining olive oil, cooked onions, and dill. Beat the eggs lightly and add to the mixture, mixing well. Season with salt and pepper.
- 3. Have the phyllo ready. Place the sheets in front of you and, using a sharp knife, cut lengthwise into 4 equal columns. Stack them, and keep the stack covered with a dry kitchen towel and then over that a damn kitchen towel. Preheat the oven to 350°F, and lightly oil 2 baking sheets.
- 4. Remove 1 strip of phyllo, brush it lightly with olive oil, and place another strip on top. Brush that with oil, too. Place a teaspoon of the filling in the lower right-hand corner of the phyllo, about 1/2 inch from the edge. Fold up the right corner to form a right triangle, and continue folding, the way one folds a flag. Place seam side down on the baking sheet. Continue until the phyllo and filling are used up. Bake in the center of the oven for 12 to 15 minutes, or until puffed and golden. Serve warm.

Steps:
- Make phyllo triangles:
- Cover phyllo stack with 2 overlapping sheets of plastic wrap and then a damp clean kitchen towel. Arrange 1 phyllo sheet on a work surface with a long side nearest you (keep remaining sheets covered) and brush with some butter. Top with 2 more phyllo sheets, brushing each with butter.
- Cut buttered phyllo stack crosswise into 5 (12- by 3 1/3-inch) strips.
- Put 2 teaspoons red peppers and 2 teaspoons goat cheese near 1 corner of a strip and fold corner of phyllo over to enclose filling and form a triangle. Continue folding strip (like a flag), maintaining triangular shape. Put triangle, seam side down, on a baking sheet and cover with plastic wrap. Make 14 more triangles in same manner, using remaining phyllo and filling (you may have a little butter left over).
- Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then fry triangles in 2 batches until golden, about 1 minute per side. Transfer with tongs to paper towels to drain.
- Make salad:
- Whisk together vinegar, mustard, and salt in a large bowl, then add oil in a slow stream, whisking until emulsified. Add frisée and olives and toss with dressing, then season with pepper. Mound salad on plates and arrange phyllo triangles alongside.

- Stem the Portobellos and cut the caps in half. Using a sharp paring knife, cut off the black gills from the undersides of the caps. Slice the caps crosswise 1/4-inch thick.
- Melt the stick of butter in a large skillet. Add the shallot and cook over low heat until softened, about 4 minutes. Stir in the Portobello and white button mushrooms and season with salt and pepper. Cook over moderate heat, stirring occasionally, until the mushrooms are tender and their liquid has evaporated, about 10 minutes. Stir in the garlic, parsley and thyme and cook for 2 minutes longer, stirring. Transfer the mushroom mixture to a food processor and pulse to a coarse puree. Scrape the puree into a medium bowl, stir in the goat cheese and season with salt and pepper. Let cool.
- Preheat the oven to 400$#176;. Lay 1 sheet of the phyllo dough on a work surface; keep the rest covered with damp paper towels. Brush the phyllo sheet with melted butter and cut it lengthwise into 4 even strips. Place 1 level tablespoon of the mushroom filling in a corner of one of the strips, about 1/2 inch from the top. Fold the corner down to form a triangle. Continue folding the triangle onto itself, across and down, until you have a neat phyllo triangle. Set the triangle on a large rimmed baking sheet. Repeat with the remaining phyllo, melted butter and mushroom filling. Brush the triangles with melted butter and bake for about 20 minutes, or until browned and crisp. Let cool slightly before serving.

Estimated Reading Time 5 mins
- Mix goat cheese, 1/4 cup of honey, and salt together until combined. Cover and refrigerate for at least 30 minutes to firm up the cheese again.
- Once cheese is firmed, preheat oven to 375 degrees. Prepare baking sheet by lining with parchment paper. Set aside.
- Remove phyllo sheets from refrigerator. Remove one sheet to work with and cover the stack of the rest with a sheet of plastic wrap. Brush half of the one sheet with melted butter. Take the short end of the sheet and fold in half to meet the other short end. Brush with butter and then fold again. You should have a rectangle strip with a width of 4 inches. Brush with butter again.
- Place ½ tablespoon of goat cheese mixture in the bottom corner of the strip. Fold corner over the cheese to make a triangle. Don't press down or else the filling will spill out. Continue to fold triangle up (like your folding a flag) until a little extra piece of phyllo is remaining. Brush the triangle and seal the extra piece of dough and place on prepared baking sheet, seal side down. Repeat with 11 other pieces of phyllo. Make sure triangles are separated at least 1 inch apart on the baking sheet.
