Steps:

  • Heat oven to 375°F. Place bread slices on ungreased cookie sheet.
  • Spread each slice bread with a scant tablespoon of the pesto. Top with tomatoes; sprinkle with cheese.
  • Bake about 8 minutes or until hot and cheese is melted.

1 garlic clove
1/2 cup grated Parmesan
1 teaspoon kosher salt, plus extra for seasoning
1/4 teaspoon freshly ground black pepper, plus extra for seasoning
1/3 cup olive oil
8 (1/2-inch thick) slices whole-grain baguette or ciabatta bread, preferably day-old, * see Cook's Note
1/3 cup olive oil
8 cherry tomatoes, halved or 1 small tomato, diced

Steps:

  • For the pea pesto: Pulse together the peas, garlic, Parmesan, 1 teaspoon of salt and 1/4 teaspoon of pepper in a food processor. With the machine running, slowly add the olive oil until well combined, about 1 to 2 minutes. Season with additional salt and pepper, if needed. Transfer to a small bowl and set aside.
  • For the crostini: Preheat a stovetop griddle or grill pan on medium-high heat. Brush both sides of the sliced bread with olive oil and grill until golden, about 1 to 2 minutes. Transfer the bread to a clean surface and spread 1 to 2 tablespoons of the prepared pesto on each slice.
  • Top with tomato halves and serve.
  • *Cook's note: If you don't have day-old bread on hand, you can dry out fresh bread by putting the slices in a preheated 300 degree F oven until slightly crisp, about 5 minutes.

½ cup baby arugula leaves
¼ cup basil leaves
2 tablespoons chopped walnuts
2 tablespoons chopped parsley
2 tablespoons + ¼ cup grated parmesan cheese
2 cloves garlic, chopped
4 tablespoons butter, softened
3 - 4 teaspoons olive oil
Salt and Pepper- optional
20- ¼ "sliced crusty bread loaf for crostini
8-10 cherry tomatoes, thinly sliced

Steps:

  • Brush crostini slices with olive oil and grill or toast in oven until golden brown. Heat oven to 375, place round slices on baking sheet, toast 8-10 minutes, at 8 minutes turn over to toast other side. Toast additional 8 minutes.
  • In food processor fitted with steel blade, pulse walnuts one or two times, add arugula leaves, basil, parsley, 2 tablespoons cheese and garlic, pulse until smooth.
  • Scrape down sides and add softened butter and olive oil. Pulse mixture until smooth and creamy. Add salt and pepper if desired to taste.
  • Spread small amount of pesto on crostini, sprinkle with parmesan cheese, top with sliced tomato.

This is a recipe based on one by Giada De Laurentiis. It's superb! It freezes well with no discoloration so it's easy to make ahead or to freeze leftovers (not that there ever is in my house). If you don't want to make the crostini, spread the pea pesto on Melba toast or other very crisp crackers. Don't skip the tomatoes as they really finish the dish. I usually use sourdough bread for this.This also makes a great sauce for chicken or fish.

Steps:

  • Preheat oven to 350°F. In shallow baking pan, toss together walnuts and pine nuts, then place in oven, stirring occasionally, and bake until golden, about 8 minutes. Cool completely.
