CROCK POT POTLUCK PIEROGIES WITH SAUTEED ONIONS AND BUTTER
Great idea for a football party, graduation party, any potluck get-together. I was assigned a hot side dish for a potluck work luncheon, served aside of hot dogs and other party appy's, and decided to try this out in the crockpot and it worked. It went over well; many people went back for seconds and came looking for the leftovers the next day.....it was the only dish that was gone! Very simple indeed, but it's one of those dishes that you hardly lift a finger yet it goes a long way. Would go great aside of hamburger BBQ, sausage sandwiches, bratwurst, hamburgers, etc or make as a main dish. Perfect if you don't have an oven or have limited oven space for your party cooking. I have figured on 16 servings/3 pierogies per person and prep time includes sautee of onion and butter.

Steps:
- Place frozen pierogies in the crockpot.
- In a medium saucepan, melt butter and fry onion on medium-low heat, until onion is golden brown.
- Pour onion and butter over pierogies; add salt and pepper.
- Cook, on high, for 3 hours.
- A few times during cooking, use tongs and gently re-arrange pierogies and ladle butter sauce to cover pierogies on top.
- Turn to low or keep warm once pierogies are cooked and/or butter sauce begins to bubble.

SAUSAGE AND PEROGY SLOW COOKER MEAL
This is a modification of a recipe in one of my slow cooker books. I switched out the potato for perogies. It can be started in the early afternoon and be ready for dinner time.

Steps:
- Cut the sausage into thin slices.
- In the slow cooker assemble in this order: 1 can cheddar cheese soup, garlic sausage, perogy, onion, garlic sausage, perogy, onion, 1 can cream of celery soup.
- Set slow cooker to high for approx 4 - 5 hours.
- Do not stir but occasionally unstick sausage or perogies from the side.
- Serve hot, salt and pepper to taste, and enjoy.

CROCK POT PIEROGIES AND BACON
I wanted to post my take on another crock pot pierogie recipe that I found on here since the technique and ingredients are a little different. I did it this way and didn't have to stir or move the pierogies around. They did get a little crispy on the edges after a while, so I think I will turn it down to warm next time.

Steps:
- Boil pierogies according to package directions (I boiled water in a large stock pot and added all of the pierogies at once). Drain.
- Spray crock of crock pot with cooking spray or add liner to keep pierogies from sticking.
- Cook bacon until done enough to crumble. Cool on paper towels. Reserve 2 Tbsp grease to cook onions.
- Reheat bacon grease and cook onions over medium/high heat in bacon grease until translucent, about 5 minutes. Add butter to pan until melted. Stir bacon back into pan with butter onion mixture.
- Place a layer of pierogies in the crock pot. Drizzle butter mixture over the top. Repeat these steps until all pierogies are in the crock pot. Drizzle any leftover butter mixture over the top. Try to split it up between layers it so 75% of it is gone when you reach the top.
- Cover and turn crock pot to low to keep heat we had it on low for about 6 hours and the edges started to get crunchy (which we liked). Turn to warm if this is a problem.

PIEROGIES IN PEPPER SHALLOT SAUCE (CROCK POT)
This is a wonderful tasting sauce, that enhances the less intense flavor of the pierogies...a great low fat meal, with no fuss.

- In a 5-6 quart slow cooker, combine the crushed tomatoes, shallots, peppers, oil, vinegar, Italian seasoning and black pepper.
- Cover, and cook on LOW for 5-9 hours, OR on HIGH for 4-5 hours.
- Add in the pierogies; cover, and cook for 1 hour.
