SOUTHERN-STYLE GREEN BEANS WITH BACON AND NEW POTATOES



Southern-Style Green Beans with Bacon and New Potatoes image

8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

3 cups thinly sliced potatoes
2 cups frozen green beans
½ teaspoon dried thyme
¼ teaspoon ground black pepper
1 teaspoon vegetarian Worcestershire sauce
1 cup vegetable broth, divided
1 teaspoon cornstarch
¼ cup chopped fresh parsley

Steps:

  • In a large skillet over medium-high heat combine potatoes, green beans, thyme, pepper, Worcestershire sauce and 3/4 cup of broth. Bring to a boil; reduce heat to medium-low, cover and simmer 15 to 20 minutes or until vegetables are tender.
  • In a small bowl blend remaining broth and cornstarch. Stir in parsley; add to potato mixture. Cook, stirring, until bubbly and thickened.

This recipe is an adaption of a recipe found in Williams-Sonoma Essentials of Healthful Cooking. The roasting blends the flavors and produces a delightful side dish.

8 -10 italian brown button mushrooms
2 yukon gold potatoes, approximately 1/2 pound total weight
1 yellow onion
1 head garlic
1/2 lb fresh green beans
1 tablespoon olive oil
1/4 teaspoon kosher salt
fresh ground pepper
2 tablespoons parmigiano-reggiano cheese
1 teaspoon dried thyme

Steps:

  • Preheat oven to 400 degrees.
  • Spray a 13 x 9 inch casserole with non-stick cooking spray and set aside.
  • Brush mushrooms clean and trim the ends of the stems.
  • Cut the mushrooms in half through the stem.
  • Cut potatoes into 1-inch pieces.
  • Cut the onion into wedges approximately 1/2 inch thick.
  • Seperate the garlic into cloves and peel.
  • Trim ends from green beans, wash and break into 1-inch lengths.
  • Set green beans aside.
  • In prepared casserole, combine the mushrooms, potatoes, garlic and onion.
  • Drizzle with olive oil, tossing to coat evenly.
  • Roast vegetables until they begin to brown on the edges, about 30 minutes.
  • Add the broken green beans to casserole dish and carefully turn and rearrange vegetables in an even layer.
  • Sprinkle with 1/4 teaspoon salt and a few grinds of pepper.
  • Return to oven and continue to roast until the vegetables are browned and tender when pierced with a knife, about 15 minutes longer.
  • Sprinkle the grated Parmigiano-Reggiano and thyme over the vegetables.
  • Return to oven and cook for 5 minutes longer to melt the cheese.

8 ounces fresh green beans, ends removed
8 -10 baby red potatoes
4 ounces bacon, thick-cut or slab
1/4 teaspoon balsamic vinegar
2 teaspoons oil

Steps:

  • Lightly scrub potatoes.
  • Cut bacon into a small dice and brown in skillet on medium-low heat. Do not cook to a full crisp.
  • While bacon is cooking, slice potatoes into small rounds about 1/4 inch think.
  • When bacon is done remove with slotted spoon. Drain skillet of all but 1 tsp bacon fat. Add oil and increase heat to medium-high.
  • Add potatoes and toss to coat. Saute while tossing occasionally until potatoes are slightly cooked. Approximately 5 minutes.
  • Add fresh beans and toss lightly. Cover and reduce heat to medium-low. Cook for 4 minutes more.
  • Uncover, add balsamic vinegar & reserved bacon. Toss and serve immediately.

8 ounces green beans, trimmed (2 cups)
4 large shallots, trimmed and quartered
2 tablespoons olive oil
3/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 375. In large bowl, combine potatoes, green beans, shallots, oil, salt and pepper; toss until well coated.
  • Spread in single layer in roasting pan; roast 45 minutes, stirring halfway through cooking time, until potatoes and shallots are golden brown. Transfer to serving dish; stir in parsley.
