Steps:
- Drain the olives of any brine and rinse thoroughly with cool water. Cover in cool water and allow to soak for at least 5 minutes and up to 5 hours.
- In a 1 to 1 1/2-quart container combine the garlic, olive oil, vinegar, lemon zest and juice, red pepper flakes, tarragon, and curry powder. Add the olives and stir or shake to combine. Make sure the olives are submerged in the marinade.
- Allow to sit in a cool dry place for 1 day. Place in the refrigerator for another day or 2 before serving.

- Heat the olive oil in a small saucepan over medium heat. Add the red pepper flakes thyme, garlic, lemon zest, orange zest, salt and pepper to taste and cook, stirring occasionally, until the garlic is pale golden, about 2 minutes. Stir in the olives and cook, stirring, until just warm, about 2 minutes. Turn off the heat. Stir in the lemon juice and orange juice and transfer to a decorative jar or serving bowl. Serve warm or at room temperature.

CITRUS MARINATED OLIVES
This is great as an appetizer or to take along on a picnic, the flavors really meld together well. The green olives really shine with the citrus flavor, so I use 2 cups green olives and 1 cup Kalamata olives. I double the garlic, orange peel and add 1 Tablespoon fresh thyme. The cooking time is the marinading time. This is adpated from Bon Appetit magazine, July 2000.

- Combine all ingredients in large heavy-duty resealable plastic bag.
- Shake bag to blend ingredients.
- Refrigerate at least 1 day and up to 3 days, turning bag occasionally. Transfer olives and some marinade to bowl.
- Let stand 1 hour at room temperature before serving.
CITRUS OLIVE OIL CAKE
Steps:
- Combine 2 cups of the sugar and the water in a medium saucepan. Bring to a boil over medium-high heat. When the sugar has dissolved, add the oranges and lemon. Make sure there's enough liquid to cover at least two-thirds of the fruit-if needed, add a little more water and an equal amount of sugar directly to the pan (you don't need to dissolve it separately). Cover the pan and lower the heat to maintain a very gentle simmer. Cook, turning the fruit occasionally, until the fruit is very soft and easily pierced with a skewer, about 40 minutes. Carefully transfer the fruit to a plate and let cool enough to handle (save the syrup for another use-see Tip for ideas).
- While the fruit is cooking, put the almonds in the bowl of a food processor and pulse until finely ground. Transfer to a large bowl and whisk in the flour and baking powder. Set aside.
- Oil a 9-inch springform cake pan (or a regular 9-inch-round by 3-inch-tall cake pan) and line the bottom with parchment. Position a rack in the center of the oven and heat to 350°F.
- Cut the fruit into quarters and remove and discard any seeds or large pieces of membrane. Put the fruit in the food processor (you don't need to wash the bowl first). Pulse, scraping down the sides as needed, until the fruit is pureed and fairly smooth-a few small lumps are okay.
- Put the eggs and salt in the bowl of a stand mixer fitted with the whisk attachment. Beat on medium-high speed until lightened in color and foamy, about 2 minutes. With the motor running, gradually add the remaining 1 1/2 cups sugar and continue to beat until very thick and creamy white, 3 to 4 minutes longer. Reduce the speed to medium, and with the motor running, drizzle in the olive oil.
- Add the pureed fruit and continue to mix until blended, about 30 seconds. Remove the bowl from the stand and gently fold in about a third of the flour mixture. When incorporated, add the rest of the flour mixture and fold until smooth.
- Pour into the prepared pan and smooth the top. Bake until the cake is dark golden brown and springs back after a light touch, about 1 hour 10 minutes. (Resist the urge to use a toothpick to determine doneness; it will cause the cake to sink in the center.)
- Let cool in the pan for 25 minutes and then run a knife around the perimeter. Turn out onto a rack to cool completely.
- This cake is even better the next day, and keeps for up to 5 days at room temperature.
- TIP
- It's a shame to waste the poaching syrup with its lovely flavor of orange and lemon. It will last nearly indefinitely in the refrigerator. Mix a couple of spoonfuls with seltzer water to make an Italian soda, or use in your favorite cocktail recipe (it goes especially well with bourbon and gin).
- NOTE
- To toast the almonds, spread them on a large rimmed baking sheet and bake in a 350°F oven until light to medium-golden brown, 10 to 15 minutes. You can also use an equal weight of whole or slivered almonds, but they won't grind to as fine a consistency as the sliced.
CITRUS AND GREEN OLIVES WITH GOAT CHEESE
For the appetizer equivalent of a trip to Sicily, drizzle this platter of briny green olives and juicy winter citrus with olive oil, salt, and pepper. Then, simply spread slices of toasted rustic bread with tangy goat cheese, and have guests pile on the bounty.

- Preheat broiler. Remove any white pith remaining from peeled fruit and cut into thin rounds or pull-apart segments (or a combination of the two); arrange on a platter. Season with salt and pepper and drizzle generously with oil; nestle olives in among them.
- In a small bowl, beat together goat cheese and oil; season with salt. Transfer to a serving bowl, drizzle with more oil, and sprinkle with salt and pepper. Place bread on a rimmed baking sheet and drizzle both sides with oil. Broil, flipping once, until charred in spots and crisp, about 1 minute. Serve citrus, olives, and goat-cheese mixture with bread alongside.

- Combine the orange juice, wine, lemon juice, and sugar. Stir well.

I saw this on a holiday episode of 30-Minute Meals with Rachael Ray, and it looked like the most absolutely easiest and elegant nibbles to set out for your holiday guests. Will definitely not ruin their appetites.

- Make a double layer pouch of foil for the olives. Add citrus peel, red pepper flakes and fennel seeds to olives, then top with olive oil. Seal the pouch and shake it to distribute the spices and oil. Place in hot oven at any temperature or on outdoor grill to heat them through.
- Place the almonds in a small decorative serving dish.
- Place chick peas in a medium skillet over medium heat and cook 15 minutes until crisp and dry. In the last 5 minutes, season the chick peas with paprika, salt, and pepper. (If you season them up too soon, the paprika will blacken and become bitter.).
- Place the chick peas in a small serving bowl.
- Place the olives on a platter and cut the pouch open to expose them. Place the small serving dishes for nuts and chick peas on the platter alongside olives. Place a ramekin or other small cup out to collect olive pits.

Steps:
- Drain olives and place them in a glass or other nonreactive container.
- With a wooden mallet or back of a wooden spoon, hit peppercorns just enough to bruise or barely crack them.
- Add to olives.
- Cut lemon into about 12 or 15 pieces and remove seeds. Add lemon to olives.
- Rub thyme sprigs between your hands over olives, dropping some of leaves; add sprigs and olive oil.
- Turn to coat.
- Cover with plastic wrap and refrigerate for 1-3 days before serving.
- Note: The olives will keep, refrigerated, for up to 6 weeks.
