STUFFED BELL PEPPERS WITH BEEF AND CABBAGE



Stuffed Bell Peppers with Beef and Cabbage image

I never liked stuffed bell peppers until I ditched the green ones and bought some red, yellow, and orange 3-packs instead. Replacing traditional rice with cabbage adds another veggie and gives a different texture. They take a bit of time but are well worth the effort.

1 tablespoon salted butter
2 pounds lean ground beef
½ medium head green cabbage, chopped
½ medium head red cabbage, chopped
1 medium onion, chopped
3 stalks celery, chopped
2 large cloves garlic, minced
2 (14.5 ounce) cans fire-roasted diced tomatoes
1 tablespoon Worcestershire sauce
2 teaspoons sea salt
2 teaspoons dried oregano
1 teaspoon dried basil
1 teaspoon ground black pepper
6 large red bell peppers
2 teaspoons olive oil, or as needed
½ cup shredded mozzarella cheese
½ cup shredded provolone cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Oil the bottom and sides of two rectangular glass baking dishes.
  • Melt butter in a 4- to 6-quart stockpot over medium heat. Add ground beef, green and red cabbage, onion, celery, and garlic. Stir in diced tomatoes, Worcestershire sauce, salt, oregano, basil, and pepper. Cook until beef starts to brown and cabbage softens a bit, 8 to 10 minutes. Stir, and continue cooking for 10 to 15 minutes.
  • While the beef cooks, prepare bell peppers: remove stems and cut peppers in half from top to bottom. Remove seeds and white membrane. Rub outsides of the peppers with olive oil and arrange, skin-sides down like edible bowls, in the prepared baking dishes.
  • Strain beef mixture to remove excess liquid; scoop into peppers to fill and mound any extra on top or reserve for another use. Cover with foil.
  • Cook in the preheated oven until peppers have softened, 30 to 40 minutes. Remove foil, top with mozzarella and provolone, and cook for an additional 5 minutes.
  • Remove from the oven and allow to cool for a few minutes before serving.

PICKLED CABBAGE AND PEPPERS



Pickled Cabbage and Peppers image

This relish from "The Joy of Pickling" has replaced sauerkraut in our house. Sour, sweet, and spicy, it's great for topping hot dogs or as a side with sausage. Serve hot or cold. Editted to add: Feel free to substitute other commercial vinegars. I often use white vinegar or apple cider vinegar, as white wine vinegar can be a bit expensive.

2 lbs cabbage, cored and shredded
5 cups bell peppers, cut into thin strips (a mix of red and yellow is pretty)
1/4 cup pickling salt
1 cup sugar
1 1/2 cups white wine vinegar
1/2 teaspoon hot pepper flakes
4 teaspoons mustard seeds
6 garlic cloves, minced

Steps:

  • In a large bowl or cork, toss the cabbage and peppers with the salt. Cover and let stand in a cool place for 8-12 hours.
  • In a non-reactive saucepan, combine the sugar and vinegar. Bring to a boil, then let it cool.
  • Rinse the cabbage, and drain it well. Toss with the pepper flakes, mustard seeds and garlic. Pack the vegetable mixture firmly into pint mason jars. (the recipe as written generally makes about 4 pints. If you find you need more jars, you may not have packed firmly enough - and you'll need more vinegar mixture as a result.) Pour the vinegar mixture over the vegetables. Close the jars with hot two-piece caps.
  • Process the jars for 20 minutes in a boiling water bath. Store the cooled jars in a cool, dry, dark place for at least 3 weeks before eating the cabbage.

1/2 cup white vinegar
1/4 cup vegetable oil
1/4 teaspoon garlic powder (or to taste)
7 cups green cabbage, shredded (use 1 medium cabbage)
1 small green bell pepper, seeded and thinly sliced
1 small red bell pepper, seeded thinly sliced
1 onion, thinly sliced
1 large carrot, peeled and coarsley shredded (squeeze out any excess moisture with hands before adding to the salad)
salt and pepper

Steps:

  • In a large bowl whisk together sugar, vinegar, oil and garlic powder until the sugar has dissolved.
  • In a large bowl combine the cabbage, both bell peppers, onion and carrot; toss well to combine.
  • Pour the oil/sugar dressing over the; toss well to combine, then season with salt and pepper (the cabbage will shrink into the dressing while chilling).
  • Cover and chill for 8 hours or overnight before serving.

Cabbage is a staple in Gullah cooking, and there's so much more you can do with it than just coleslaw. This simple sauteed cabbage dish is one of my favorite ways to prepare the vegetable, and it's great with just about any protein. Better yet, it's a great dish to serve a large crowd.

3 slices bacon, chopped
Cooking oil, as needed
1 medium onion, sliced (1 1/2 cups)
1 large carrot, julienned (1 cup)
1 medium red bell pepper, sliced (1 cup)
1 yellow bell pepper, sliced (1 cup)
1 large head green cabbage (about 3 pounds), roughly chopped (12 cups)
1 clove garlic, minced
1 tablespoon hot sauce
Kosher salt and freshly ground black pepper

Steps:

  • Heat a very large cast-iron skillet over medium-high heat. Add the bacon and cook until browned, 5 to 6 minutes. Remove to paper towels, reserving the drippings in the skillet.
  • Add additional oil to the pan if needed. Add the onion, carrot and peppers and cook until the vegetables begin to soften, about 5 minutes. Stir in the cabbage and garlic and saute until the cabbage begins to brown, about 10 minutes.
  • Stir in the hot sauce and bring to a boil. Cover, then reduce the heat to low and simmer until the cabbage is tender, about 15 minutes. Stir in the reserved bacon, and season with salt and pepper.

My first recipe was a simple cabbage soup made with canned tomato soup. That's right: soup was a main ingredient in my first soup. This one is an attempt to capture the essence of that soup, but with better ingredients.The roasted red pepper adds an element not normally found in cabbage soup. The red cabbage darkens the soup and lends a striking purple color. Warning: the chipotle makes this a spicy soup, so remove the seeds if you want it less spicy. Don't omit the pepper, since the smokiness plays well with the other ingredients.

28 ounces diced tomatoes
1 large bell pepper
1 small onion, cut in thick slices
1 roma tomato
1 teaspoon olive oil
1 chipotle pepper
2 garlic cloves, diced
1/2 head red cabbage, chopped in small uniform pieces
2 teaspoons ground coriander
1 tablespoon dill, diced
1 tablespoon kosher salt
1 teaspoon black pepper, freshly ground

Steps:

  • Heat vegetable stock and diced tomatoes on medium heat.
  • While the stock and tomatoes cook, start your barbecue grill and keep on medium-high heat. Coat bell pepper, roma tomato, and onion slices with olive oil and place on the grill. Turn vegetables over once to get grill marks. Some blackening is expected and even desirable.
  • Chop vegetables from the grill and chipotle pepper in small pieces and add to the pot. Add diced garlic to the pot. Using an immersion blender, puree all the ingredients (or use a food processor in batches and return to the pot).
  • Stir in diced dill, coriander, salt, and pepper. Add chopped cabbage. Cook for 30 minutes, stirring occasionally.
  • Lower heat to a simmer and cover, cooking for another 30 minutes or until the cabbage is soft.

This is another favorite recipe that my sister and I serve to the group of want-a-be race car drivers that meet in the Man Cave every Monday night. The flavors are simple but go so well together. We like all our veggies crisp tender so you may need to increase the cooking time a little to suit your taste.

4 slices bacon
1 medium red onion, sliced
1 red bell pepper, cut into bite size pieces
1 green bell pepper, cut into bite size pieces
6 cups coarsely chopped cabbage or 1/2 head cabbage
salt and pepper

Steps:

  • In a large non-stick skillet fry bacon, remove from skillet and drain on paper towels. When cool enough to handle chop coarsely and set aside.
  • Remove all but 1 TBL of bacon grease.
  • Heat skillet over medium heat (adjust as needed) and add the peppers and cook for about 5 to 6 minutes.
  • Add the onion and cook until just crisp tender.
  • Add the cabbage and wilt until the desired tenderness, about 10 minutes.
  • Add the bacon back to the skillet and mix well.
  • Add salt and lots of pepper to taste.
  • Enjoy!

May also be made in cabbage leaves for a stuffed cabbage recipe; cooking method is the same, but beef is rolled in each cabbage leaf.

1 1/2 lbs raw extra lean ground beef
1 (14 1/2 ounce) can tomato sauce
1 (14 1/2 ounce) can water
1 medium onion, chopped
1 (14 1/2 ounce) can tomato soup
1 teaspoon salt
1/2 cup golden raisin
1/2 cup packed brown sugar
2 teaspoons citric acid or 2 teaspoons lemon juice
1 large peeled apple, sliced
4 ginger snaps (cookies)
4 -5 medium green bell peppers, slice top off and seed and clean, reserving the tops

Steps:

  • In a large saucepan (large enough to accomodate the peppers standing upright) bring tomato sauce, water, onion, and tomato soup to a boil.
  • Add all other ingredients except beef and continue to simmer.
  • Stuff peppers with beef and add to pan.
  • Place tops of peppers slightly askew on each stuffed pepper.
  • Sauce should come about 3/4 of the way up each pepper or you can add a bit more water.
  • Cover pan and simmer for about 1 hour, basting occasionally with sauce, or until meat is cooked through.
  • Seasoning can be corrected by adding more brown sugar or sour salt to taste.
