This easy, classic Chicken Salad recipe with grapes and sliced almonds is the best I've ever had and makes the most amazing sandwich on a croissant ever. Perfect for a graduation parties, a ladies luncheon, brunches, bridal or wedding showers, baptisms, and pretty much any event you can think of!

1 1/2 pounds boneless skinless chicken breasts (or 4 cups cooked, roughly chopped or shredded chicken)
2 Tablespoons olive oil
1 1/2 cups halved red grapes
1 1/2 cups chopped celery (about 2-3 celery ribs)
1 cup thinly sliced almonds
3 thinly sliced green onions (both the white and green part)
2 Tablespoons chopped fresh dill
1 cup mayonnaise
1/4 cup sour cream
Juice of 1 lemon
1 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
8 croissant rolls (optional for sandwiches)
Green leaf lettuce (optional for sandwiches)

Steps:

  • If using uncooked chicken breasts, preheat oven to 400°F. Rub chicken breasts with the olive oil and sprinkle with a little salt and pepper. Place the chicken on a baking sheet and bake for 22-26 minutes until the internal temperature reaches 165°F when tested with an instant read meat thermometer placed in the thickest part of the breast. Roughly chop or shred the cooked chicken.
  • In a large bowl, add the cooked chicken, grapes, celery, green onions, almonds, and dill, then gently toss to combine.
  • In a small bowl, whisk together the mayonnaise, sour cream, lemon juice, salt, and pepper.
  • Add the dressing mixture to the chicken mixture and gently stir until everything is evenly coated. Cover tightly with plastic wrap and refrigerate for 1-2 hours or even overnight.
  • If making chicken salad sandwiches, slice each croissant in half and layer a piece of green leaf lettuce and a scoop of chicken salad on each roll. Or serve the chicken salad over a bed of mixed greens with sliced tomato and avocado.

2 lb boneless skinless chicken breasts
1/2 cup sliced almonds
1 cup mayonnaise
1 tablespoon dijon mustard
1 cup red grapes (quartered)
2 stalk celery (diced)
3 green onions (green and white parts) (sliced)
2 tablespoon chopped parsley
1 tablespoon chopped tarragon
1 lemon (juiced)
salt and pepper (to taste)

Steps:

  • Place the chicken breasts in a wide pot or pan and cover by about an inch with cold water. Season the water with salt. Optionally, you can add aromatics of your choice. Read my poached chicken recipe for more details.
  • Turn the heat to medium until it reaches a gentle simmer. Then reduce the heat back to low and cover the pan. Let the chicken simmer for 8-12 minutes, or until the internal temperature reaches 160-165 degrees Fahrenheit. Remove the chicken and let it rest for a couple of minutes. Then chill in the fridge.
  • Transfer the cooled chicken to a cutting board and dice it into 1/2-inch pieces.
  • Slice and dice the celery, green onion, grapes, parsley and tarragon. Add those ingredients to a mixing bowl along with the mayonnaise, Dijon mustard, and lemon juice. Season with salt and pepper.
  • Mix everything together until it's well combined. Let it chill in the fridge until you're ready to serve.

3 tablespoons white-wine vinegar
1 tablespoon Dijon mustard
Coarse salt and ground pepper
1 pound chicken cutlets
1 teaspoon ground coriander
1 bunch flat leaf spinach
1 cup seedless organic red grapes, halved
1/2 medium shallot, thinly sliced
1/4 cup sliced almonds, toasted
2 ears corn, shucked and removed from cob
1 avocado, halved and thinly sliced

Steps:

  • In a large bowl, whisk together 3 tablespoons oil, vinegar, and Dijon; season with salt and pepper. Set aside.
  • In a large nonstick skillet, heat remaining tablespoon oil over medium. Sprinkle chicken with coriander; season with salt and pepper. Cook (this may need to be done in batches), turning once, until opaque throughout, 4 to 5 minutes. Transfer to a cutting board and let rest for 5 minutes; slice thinly crosswise.
  • Add chicken, spinach, grapes, shallot, almonds, and corn to bowl with dressing; toss to combine. Top with avocado. Serve immediately.

4 boneless chicken breast halves
salt, to taste
pepper, to taste
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/3 cup olive oil
1 garlic clove, pressed
2 tablespoons balsamic vinegar
1 shallot, minced
1/2 cup sun-dried tomato packed in oil, drained and chopped
1/2 cup fresh basil, chopped
12 ounces baby spinach leaves
1 large ripe avocado, thinly sliced

Steps:

  • Heat 1 TBS olive oil in a large skillet over medium-high heat.
  • Season chicken with salt and pepper to taste.
  • Cook in skillet, turning once, until juices run clear (about 12 minutes).
  • Slice into thin strips and place in large bowl.
  • In separate bowl, whisk together salt and pepper, garlic and vinegar.
  • Slowly whisk in 1/3 cup olive oil.
  • Stir in shallots, tomatoes, and basil.
  • Spoon 1/4 cup of the dressing over chicken and toss to coat.
  • Toss spinach with remaining dressing and divide among 4 serving plates; top evenly with chicken and avocado slices.
