Try a new approach to cooking these traditional winter greens. Bake your sprouts with nuts and bacon lardons - great for a roast with all the trimmings.

1 ½kg Brussels sprouts, trimmed
200g vacuum-packed chestnuts, roughly chopped in half
200g smoked bacon lardons
1 tsp vegetable oil

Steps:

  • Heat oven to 220C/200C fan/gas 7. Bring a large pan of water to the boil, add the sprouts and cook for 5 mins. Drain and refresh in cold water.
  • Toss the sprouts with all the other ingredients in a bowl and season with a pinch of salt and a good grinding of black pepper. Tip onto a large baking tray in a single layer. Put in the oven and roast for 30 mins, tossing halfway through, until the bacon is crispy and the sprouts are golden and tender.

¼ cup butter
2 tablespoons olive oil
1 onion, minced
1 tablespoon minced garlic
2 pounds Brussels sprouts, trimmed and halved
½ cup crumbled cooked bacon
2 tablespoons powdered chicken bouillon
½ teaspoon red pepper flakes
½ teaspoon freshly ground black pepper
½ cup Chardonnay wine

Steps:

  • Melt butter with olive oil in a large pot over medium-high heat. Saute onion and garlic in butter mixture until translucent, 5 to 7 minutes; add Brussels sprouts and saute until slightly browned on edges, 5 to 10 minutes. Sprinkle bacon, chicken bouillon, red pepper flakes, and black pepper over the sprouts mixture; stir and cook until fragrant, about 2 minutes.
  • Pour wine over the sprouts mixture, reduce heat to low, place a lid on the pot, and simmer until the sprouts are desired tenderness, 10 to 15 minutes.

Number Of Ingredients 12

1 1/2 pounds Brussels sprouts, washed,and cut in half
4 ounces (about 1/2 cup) bacon, cut into small squares
1 clove garlic, peeled and smashed, plus 2 cloves, roughly chopped
4 sprigs thyme, plus 2 sprigs thyme, leaves only, chopped
2 cups low-sodium chicken stock
Kosher salt
Freshly ground black pepper
3 tablespoons balsamic vinegar
1/2 cup grated Parmigiano-Reggiano
1 cup panko bread crumbs
2 sprigs rosemary, leaves only, chopped
Extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees F.
  • Take a large pan and set over medium-high heat. Add bacon and cook until fat renders 2 to 3 minutes. Add the smashed garlic clove, thyme sprigs and Brussels sprouts and cook gently until slightly caramelized. Add stock and reduce heat to a simmer. Season with salt and a little pepper, cover and simmer for 12 to 15 minutes until tender. Remove lid and add a splash of vinegar and reduce until syrupy, 2 to 3 minutes.
  • After Brussels sprouts are done cooking, put them in oven safe dish. In sheet tray and toss bread crumbs with rosemary, thyme leaves and chopped garlic, then drizzle with a little olive oil and salt and pepper. Sprinkle bread crumb mixture and Parmigiano over Brussels sprouts and bake in a hot oven until golden and crispy.

1 lb Brussels sprout, trimmed and halved
4 slices smoked bacon, chopped
1 shallot, sliced
2 tablespoons white wine
2 tablespoons olive oil
1 tablespoon butter
1 pinch of kosher salt and cracked pepper, to taste

Steps:

  • 1.Preheat oven to 425 degrees.
  • 2.In oven safe skillet or casserole dish crisp bacon over medium high heat. About 8-10 minutes. Remove bacon and set aside on plate lined with paper towels. Dispose of fat in the skillet.
  • 3.Return skillet to stovetop. Deglaze pan with white wine, scraping brown bits from bottom of pan.
  • 4.Add shallots and sauté for about 5 minutes.
  • 5.Add Brussels sprouts and olive oil and mix together to combine and evenly coat.
  • 6.Place skillet in oven and roast for about 15-20 minutes until cooked through and golden brown.
  • 7.Remove from oven and add butter and bacon, toss to combine.
  • 8.Salt and pepper to taste.

I'm shocked at how many people say they hate Brussels Sprouts and then devour these and ask for the recipe. These are simple to make and reheat well by just warming them in a skillet. Perfect for a holiday dinner when you want something new and different!

2 (10 ounce) packages Brussels sprouts
2 ounces thick slab bacon, cut into 3/4 inch cubes
3 -4 shallots, sliced thin lengthwise
1/2 cup walnut pieces
1/2 cup dried cranberries (optional)
1/2 cup gorgonzola, crumbled (optional)
1/2 teaspoon salt
fresh ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Wash and then peel off any loose or damaged leaves from the sprouts. Trim the root end and cut each sprout in half.
  • Cook the bacon, shallots, cranberries and walnuts in a large oven-proof skillet over medium heat until bacon just begins to crisp, shallots are translucent, and walnuts are toasted, about 4 minutes. Transfer the mixture with a slotted spoon to a bowl and set aside.
  • Add the Brussels sprouts to the skillet with the bacon drippings and season with salt and pepper, toss until sprouts are coated. If necessary, add a shot of olive oil to make sure the sprouts are coated.
  • Put the pan in the oven and roast the Brussels sprouts for about 30 minutes, add the bacon mixture and continue to roast until the sprouts are cooked through and golden, about 10 to 15 minutes more. The time may vary based on the size of your sprouts, please watch then carefully. When done, they should be tender and golden brown.
  • Before serving, top with crumbled Gorgonzola cheese (optional).

1 cup chicken broth or 1 cup vegetable broth

Steps:

  • put a large pot of water to boil the chestnuts.
  • cut a x in the shell of the chestnuts(but not the meat of the chestnuts or course).
  • boil the chestnuts for 5 minuites.scoop them out of the water with a strainer or a slotted spoon.
  • whil the chestnuts are still hot carefully pull off the outer shells.peel off as much of the shell as you can.if some of the nuts will not give up on there shells reheat then try again.
  • trim the bottoms of the brussels sprouts.pull away any loose or damaged leaves.
  • put 2 quarts of water and the salt in a large saucepan & bring to a boil.
  • add the brussels sprouts & boil for 4-5 minuites or until they can be peirced with a fork.
  • drain the sprouts & rinse in cold water to halt the cooking proccess.
  • put the peeled chestnuts in a large saute pan with the broth and simmer for 5 minuites.don't let the broth boil too hard,this can cause the chestnuts to fall apart.
  • when the chestnuts are tender,add the brussels sprouts & cook uncovered fore another 5 minuites.
  • serve warm.

1 pound Brussels sprouts, trimmed and halved, or more to taste
1 clove garlic, thinly sliced, or more to taste
½ cup chicken stock, or more as needed
1 tablespoon butter, or to taste
1 tablespoon balsamic vinegar, or more to taste
salt and ground black pepper to taste

Steps:

  • Place bacon in a large skillet over medium-low heat; cook until just crisp, about 10 minutes. Transfer bacon to a paper towel-lined plate, reserving bacon grease in skillet.
  • Increase heat to medium-high under skillet; saute Brussels sprouts in the bacon grease until lightly browned, 2 to 3 minutes. Add garlic to Brussels sprouts; saute until garlic is fragrant, 1 to 2 minutes.

1 lb Brussels sprout, cut in half
extra virgin olive oil
salt
3 garlic cloves, chopped
1 tablespoon pine nuts, roasted
3 slices bacon, cut into lardons- use thick slices

Steps:

  • Preheat oven to 400 degrees.
  • Toss sprouts with olive oil, salt and garlic.
  • Roast in baking pan until tender, about 20 minutes.
  • Meanwhile, toast pine nuts in skillet. Set aside.
  • In same pan, cook bacon until crispy. Remove from pan and set aside.
  • Toss the roasted pine nuts and bacon with sprouts, roast for a few more minutes or until heated through.

1 shallot, minced
1/2 lb chestnuts, peeled and coarse chopped

  • Cut an "X" on the bottom of each stem end of the Brussels sprouts and peel away any leaves that are discolored or loose.
  • Steam the Brussels sprouts in a covered pot, over rapidly boiling water, until tender, about 8 to 10 minutes.
  • Quarter each sprout lengthwise and set aside.
  • In a dry skillet, over medium heat, render the fat from the bacon, about 5 minutes; add the minced shallot and cook 1 minute.
  • Add the chestnuts and chicken broth, cover, and simmer until chestnuts are tender and sweet, about 10 minutes.
  • Add vinegar, Brussels sprouts, and cook about 5 minutes; season to taste with salt and pepper and a little more vinegar, if needed.
