8 ounces uncooked penne pasta
1 pound hot Italian turkey sausage (about 4 links)
1 each: medium green, red and yellow bell pepper, cut into 1/4-inch strips
1/2 cup coarsely chopped onion
2 garlic cloves, pressed
1 can (14 1/2 ounces) diced tomatoes in sauce, undrained
1 can (8 ounces) tomato sauce
2 teaspoons Italian Seasoning Mix
1/4 cup (1 ounce) grated fresh Parmesan cheese

Steps:

  • Cook pasta according to package directions in (4-qt.) Casserole; drain and keep warm.Meanwhile, cook sausage in (12-in.) Skillet over medium-high heat 14-16 minutes or until sausage is lightly browned and no longer pink, turning occasionally. Remove sausages from skillet; cut diagonally into 1-inch pieces and set aside. Cut bell peppers into 1/4-inch strips using Chef's Knife. Coarsely chop onion using Food Chopper.In same skillet, cook bell peppers, onion and garlic pressed with Garlic Press over medium heat 6-8 minutes or until peppers are crisp-tender, stirring occasionally. Add sausage, tomatoes, tomato sauce and Italian Seasoning Mix. Cook and stir 1-2 minutes or until heated through.Place pasta in large bowl; pour sauce mixture over pasta, tossing to coat. Sprinkle with Parmesan cheese. Serve immediately.

2 teaspoons olive oil
1 pound mild Italian sausage
1 cup chopped onion
½ cup white wine
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes with garlic
1 (6 ounce) can tomato paste
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally. Toss with cooked pasta, and place in a 9x13 inch baking dish. Sprinkle top with mozzarella.
  • Bake in preheated oven for 20 minutes, or until cheese is melted.

3 tablespoons extra virgin olive oil
3/4 lb hot Italian sausage, removed from the casing
2 garlic cloves, minced
1 lb swiss chard, ribs discarded, leafy greens cut into 1-inch strips
3/4 lb penne or 3/4 lb fusilli
1/2 lb ricotta salata or 1/2 lb mild feta, crumbled

12 to 16 ounces smoked andouille sausage, thinly sliced
1/2 cup onion, chopped
1/2 cup green bell pepper, or red; chopped
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
2 cups shredded Cheddar cheese
1 teaspoon Creole seasoning
Salt and pepper, to taste
For the Topping:
1/2 to 1 cup soft fine bread crumbs
2 to 3 teaspoons butter, melted

Steps:

  • Gather the ingredients.
  • Cook pasta following package directions. Drain and set aside.
  • In a large saucepan or skillet, cook the andouille sausage with the onion and bell pepper until the onions are translucent. Remove the sausage mixture to a plate and set aside. Preheat the oven to 350 F. Lightly grease a 2-quart casserole or spray with nonstick cooking spray.
  • Over medium heat melt 2 tablespoons of butter in the same skillet you used to cook the vegetables. Stir in the flour until blended.
