Sweet, nutty braised Brussels sprouts with crispy bacon, butter and cheese make the ultimate side dish for any meal and is perfect for the festive season.

250 g bacon (finely chopped)
1 kg brussels sprouts (halved and trimmed)
350 ml stock of your choice
salt & pepper to taste
1 tablespoon butter (cubed)
1/2 cup grated Parmesan cheese

Steps:

  • Fry the bacon in a large, hot frying pan until crisp and golden.
  • Remove from the pan then fry the brussels sprouts until they are golden brown.
  • Pour in the stock and season to taste then cover and allow to simmer gently for 5 minutes.
  • Remove the lid then simmer until the stock has evaporated and the sprouts are tender but not mushy.
  • Add the crispy bacon, butter and cheese and stir well.
  • Serve with roasted/grilled meat of your choice.

¼ cup butter
2 tablespoons olive oil
1 onion, minced
1 tablespoon minced garlic
2 pounds Brussels sprouts, trimmed and halved
½ cup crumbled cooked bacon
2 tablespoons powdered chicken bouillon
½ teaspoon red pepper flakes
½ teaspoon freshly ground black pepper
½ cup Chardonnay wine

Steps:

  • Melt butter with olive oil in a large pot over medium-high heat. Saute onion and garlic in butter mixture until translucent, 5 to 7 minutes; add Brussels sprouts and saute until slightly browned on edges, 5 to 10 minutes. Sprinkle bacon, chicken bouillon, red pepper flakes, and black pepper over the sprouts mixture; stir and cook until fragrant, about 2 minutes.
  • Pour wine over the sprouts mixture, reduce heat to low, place a lid on the pot, and simmer until the sprouts are desired tenderness, 10 to 15 minutes.

10 cups water
Salt
4 pounds Brussels sprouts
5 or 6 pieces bacon, minced
1 red onion, medium dice
4 tablespoons butter, divided
1/4 cup red wine vinegar
2 tablespoons brown sugar
1 cup fresh or dried cranberries
Freshly ground black pepper

Steps:

  • In a large pot, over high heat, bring the water to a boil. Generously salt the water and add the Brussels sprouts. Cook the sprouts until medium tenderness has been reached, about 8 to 10 minutes.
  • In the meantime, in a large saucepan over medium heat fry the bacon until crisp, stirring occasionally. Remove bacon from the pan to a plate lined with a paper towel. Crumble the bacon and set aside.
  • Leave the bacon fat in the pan and add the red onions and 3 tablespoons of the butter. Saute until the onions are translucent, about 2 to 3 minutes. Stir in the red wine vinegar and brown sugar and cook until the liquid is slightly reduced, about 5 minutes.
  • Drain the Brussels sprouts from water and add to pan with the onions. Stir to coat and add the remaining 1 tablespoon of butter. Stir in the reserved bacon and cranberries. Season with salt and freshly cracked black pepper, to taste, and transfer to a serving bowl to serve.

3 pounds medium Brussels sprouts
2 tablespoons vegetable oil
8 thick slices bacon (about 8 ounces), cut crosswise into 1/2-inch strips
2 teaspoons apple cider vinegar
1/2 teaspoon kosher salt, plus more as needed
Freshly ground black pepper

Steps:

  • Bring a large pot of water to a boil and salt it generously. Trim the bottom end of the Brussels sprouts, leaving the core intact, and pull off the outer dark leaves. Halve through the core. Add the Brussels sprouts and cook, uncovered, until tender, about 6 minutes. Drain and rinse under cold running water. (This can be done a day ahead.)
  • Meanwhile, put the oil and bacon in a very large skillet or stewpot, and cook over medium heat, stirring occasionally, until the bacon is crispy. Remove the bacon with a slotted spoon and set aside. Increase the heat to medium-high, add the Brussels sprouts and cook, stirring occasionally, until they brown and the edges get crisp, about 10 minutes. Stir in the vinegar, salt, pepper, and bacon. Serve warm.

2 pounds Brussels sprouts, trimmed
Extra-virgin olive oil
Kosher salt
Pinch of red pepper flakes
1/3 cup pine nuts
6 ounces slab bacon, cut into lardons
Parmigiano-reggiano, for topping

Steps:

  • Preheat the oven to 400 degrees F. Cut the Brussels sprouts in half lengthwise, from top to bottom. Toss the sprouts with olive oil, 1/2 teaspoon salt and the red pepper flakes on a baking sheet. Put in the oven and roast until tender, about 20 minutes. Toast the pine nuts on a separate baking sheet in the oven for the last 5 minutes of roasting the sprouts.
  • While the sprouts are roasting, put the bacon in a small saute pan with a splash of olive oil and bring the pan to medium heat. Cook the bacon until crispy, 7 to 8 minutes. Remove from the pan.
  • Toss the roasted Brussels sprouts with the crispy bacon and toasted pine nuts. Using a peeler, shave a few slices of parmigiano on top.

4 cups Brussels sprouts
6 strips bacon
6 tablespoons butter, cubed
4 tablespoons maple syrup
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Rinse the Brussels sprouts under cold water and reserve on a dry cloth to dry. Once dry, cut each sprout into quarters and place aside.
  • Place the bacon strips on a cutting board and cut into 3/4-inch strips. In a medium saute pan, heat the lardons over medium heat until crisp. Strain the lardons out of the pan and place on paper towels. Keep the bacon fat in the pan, add the butter and heat until melted. Once the butter is melted, add the Brussels sprouts and stir frequently. Saute until the sprouts begin to brown. Add the lardons back to the sprouts and add the maple syrup. Heat until the syrup appears to stick to the Brussels sprouts and a deep caramelization is reached. Season with the salt and pepper.

2 lbs Brussels sprouts
6 slices bacon, chopped
1 shallot, minced
1 1/2 cups roasted chestnuts, coarsely chopped
1 cup chicken broth
1 teaspoon balsamic vinegar
1 teaspoon cooking sherry

Steps:

  • Score each chestnut with a X and roast in a 400 deg. oven for 25-30 minutes. Peel as soon as the chestnuts are cool enough to handle.
  • Trim and discard the loose and discolored leaves from each sprout. Steam covered until just tender. Immediately immerse in ice water bath. Once chilled, halve smaller sprouts - larger ones can be quartered. Sprouts can be prepared up to 8 hours ahead and stored in fridge tightly covered.
  • Render the bacon in a large frying pan over medium heat.
  • Add the minced shallot and cook until fragrant (about 1 minute.).
  • Add the chopped chestnuts and chicken broth, cover and simmer about 10 minutes.
  • Add the Vinegar, Sherry and Brussels Sprouts and cook until the sprouts just start to brown (about 5 minutes.).
