ITALIAN MEATLOAF
An easy recipe for Italian flavored meatloaf. It has all the flavors of your favorite Italian meatballs. Makes a great entree for an Italian dinner!

Steps:
- Preheat the oven to 400°
- In a large bowl, with clean hands, lightly mix together the 2 lbs ground beef, 2 minced garlic cloves, .7 oz packet of Italian Dressing Mix, 1 cup panko bread crumbs, 1/3 cup milk, 2 lightly beaten eggs, 1/2 cup parmesan cheese. Do not overmix the meatloaf mixture or it will have a tough texture.
- In a 9x13 glass casserole pan pour about 1/2 cup marinara sauce onto the bottom of the pan. Dump the Italian meatloaf mixture out into the pan and shape into a meatloaf, about 2 1/2 inch tall, 6 inches wide and about 11 inches long (roughly)
- Pour the rest of the jarred marinara over the meatloaf. Cover the pan with foil and bake for 1 hour 15 minutes.
- Remove the foil and sprinkle with mozzarella cheese, bake uncovered for another 10 minutes. The center of the meatloaf should read 165 degrees with an instant thermometer.
- Let cool for about 5 minutes and then slice and serve!
ITALIAN MEATLOAF
This Italian Meatloaf recipe is rich in cheese, beef and topped up with my homemade Italian marinara sauce. This meatloaf is easy to make and versatile to pair with any side dish. You can even divide it into slices to make a meatloaf sandwich!

- Preheat oven to 350°F (177°C)
- Heat 2 tablespoons of the oil in a heavy skillet over medium heat. Add the onions and pepper and cook until soft, about 5 minutes. Add the garlic, cook another minute or two, stir in the Italian herbs, and remove heat.
- In a small bowl, whisk the eggs well - season with salt and pepper, and whisk to combine.
- Put the beef in a large bowl, add the egg mixture, add the remaining 2 tablespoons olive oil, the Worcestershire, 2 tablespoons of balsamic, and ½ cup of marinara sauce. Add the parmesan, mozzarella and bread crumbs, and onions, then mix it with your hands until just combined - do not over mix.
- Lightly oil a 9 x 5 loaf pan and pack the meat mixture into it. Whisk the remaining tbsp balsamic in the remaining ½ cup of marinara, and spread this evenly over the meatloaf.
- Bake for about an hour or until cooked. Allow resting for about 5 minutes before serving.

LITTLE MOZZARELLA-STUFFED MEATLOAVES

- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper or foil.
- Break the meatloaf mixture into a large bowl and use your hands to lightly work in the onion, bread crumbs, egg, parsley, Worcestershire sauce, mustard, salt, Italian seasoning, garlic powder, and pepper until evenly mixed. Take care not to overwork the mixture.
- Space the pancetta slices, if using, a few inches apart on the prepared pan and put the cutter on top of 1 piece. Divide the meatloaf mixture into 4 equal portions. Press a piece of cheese into the center and then press the meat around it to enclose it completely. Put a portion in the cutter and press gently so that it covers the pancetta evenly, and makes a neat, flat disk. Repeat with the remaining meatloaf mix to make 4 little loaves. Remove the cutter.
- Whisk the glaze ingredients in a small bowl, and then spread about 1 tablespoon of the mixture over the top and sides of each meatloaf. Bake for 10 minutes, then reduce the heat to 325 degrees F. and bake until cooked through, about 15 minutes more. To serve, ladle some hot marinara sauce into the centers of 4 plates, and set the meatloaves on top.
MARINATED MOZZARELLA

- In a shallow dish, fan mozzarella. Scatter sliced garlic around on mozzarella. Do the same with the red pepper flakes and the oregano. Sprinkle salt to taste and ground pepper over and around to taste. Drizzle olive oil over mozzarella. Let dish rest for one hour at room temperature for best flavor.
ITALIAN STYLE MEATLOAF WITH MARINARA

- Preheat oven to 350° and line a baking sheet with parchment paper or foil.
- Place the slice of bread in a small bowl and pour milk over the top of it. Set aside.
- In a large bowl, combine the remaining ingredients. Add in milk soaked bread and mix together with hands until ingredients are incorporated. Do not over mix.
- Turn mixture out onto prepared baking sheet and shape into loaf.
- Bake meatloaf in preheated oven for about 20 minutes. Top with italian gravy and continue to bake for an additional 10-15 minutes, or until the internal temperature reaches 155°.
- Remove meatloaf from the oven and let rest for 5-10 minutes before slicing.

- 1. Preheat oven to 350 degrees and ready a nonstick 9x5 loaf pan for baking. or spray a regular loafpan with nonstick cooking spray. ( I use a nonstick pan because I dont like to use cooking spray).
- 2. In a large bowl, mix the ground beef, 1 cup of marinara sauce, diced red onion, eggs, parmesan cheese, italian seasoning, and salt and pepper.(this is easiest to mix with your hands.)
