Ingredients

1 (12 ounce) package frozen prepared spinach souffle, thawed
2 eggs, slightly beaten
3 tablespoons milk
2 teaspoons chopped onions
1 (4 1/2 ounce) jar sliced mushrooms, drained
3/4 cup cooked sausage, crumbled
3/4 cup cheddar cheese, grated
1 unbaked 9-inch pie crust

Steps:

Preheat the oven to 400 degrees.
In a large mixing bowl, combine spinach souffle, eggs, milk onion, mushrooms, sausage and cheese. Mix thoroughly.
Pour the mixture into the unbaked pie crust.
Put a baking sheet on the bottom oven rack. Place quiche on the middle rack of the oven. Bake 30-35 minutes, or until a knife inserted in center comes out clean.

2 deep dish pre-made pie crust, frozen or refrigerated
1 lb kielbasa, turkey sausage, italian sausage or stick of peperoni
1 c frozen hash browns or other frozen potato
8 eggs, beaten
1/2 c half and half
1 small onion, chopped
1/2 c chopped fresh parsley or cilantro
1 red pepper, seeded and chopped
2 c shredded cheddar cheese or any other variety

Steps:

1. Preheat the oven to 350 degrees.Beat the eggs in a bowl with the half and half. Add the cheese and parsley/cilantro and place in the bottom of each pie plate dividing ingredients evenly. If using refrigerated dough you will have to place the rolled out crust in your own pie plate first.
2. cook the meat in a nonstick pan or spray with Pam, (use a pat of butter if you like!).Add tne frozen hash browns, the peppers and onions but do not brown the onions.
3. Cool the meat and vegatables a bit and add to egg mixture in the pie plates, again dividing evenly and mix slightly to incorporate. Bake at 350 degrees for 35-40 minutes. Check for doneness before removing from the oven by touching the top lightly with you finger which should not be wet or jiggly but somewhat firm.

1/2 cup chilled butter
3 tablespoons vegetable shortening
2 cups all-purpose flour
5 -6 tablespoons cold water
1/2 teaspoon salt
1 lb cleaned jumbo lump crabmeat (fresh, not frozen)
2 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh chervil
1 cup grated monterey jack cheese
1 1/2 cups grated gruyere cheese
1 1/2 cups heavy cream
3 eggs, plus
1 egg yolk
salt and pepper

Steps:

To make the dough, put chilled butter, shortening, flour, and salt in a mixer with a paddle attached.
Mix on medium until blended, about 3-4 minutes.
(It will look like cornmeal.) Then add the water.
As soon as the dough comes together, turn the mixer off.
This should only take about 10 seconds.
(Do not over mix) Take dough out of machine and chill in refrigerator for about 1 hour.
Prepare the custard by mixing all ingredients together.
Roll out dough to about 1/4-inch thick.
Line the bottom of a 9-inch pie dish.
Sprinkle 1/2 of each cheese on the bottom.
Add crab meat.
Sprinkle herbs over crab meat.
Sprinkle on the rest of the cheese.
Pour custard over all the ingredients almost to the top of the pie dish.
Cook for 1 hour and 15 minutes at 325 degrees F.
Let stand 30 minutes before serving.
