2 tablespoons rice bran oil
4 garlic cloves, finely chopped
1 onion, finely chopped
2 tablespoons ginger, peeled and grated
3 tablespoons white miso
1 1/2 cups king brown button mushrooms, sliced in half
3 quarts chicken stock
5 scallions, sliced whites separated from greens
2 teaspoons chili paste
2 teaspoons sesame oil
4 servings of fresh wheat noodles
4 eggs
2 tablespoons soy sauce
2 lbs pork belly
1/3 cup salt
1 tablespoon pepper
2 tablespoons black sesame seeds

Steps:

  • Pour rice brain oil into a stock pot and cook of onions, white part of the scallions, garlic and ginger for 5-7 minutes on medium-heat or until caramelized.
  • Stir in the chili paste and cook until aromatic, before adding the mushrooms and stirring for a further 5 minutes or until mushrooms get a slight brown edge.
  • In a small bowl whisk the miso paste and 1 cup of stock before adding to the pot of mushrooms, then add in the rest of the stock and the soy sauce to the pot.
  • Bring to a boil turn heat to low and cover with a lid, allowing to simmer for 1-3 hours.
  • In the time the broth is simmering cook the pork belly. Preheat oven to 310 degrees F.
  • Rub pork belly all over with salt and pepper then place on a rack above a baking sheet into the oven to cook for 90 minutes to 2 hours or until pork belly is cooked through. Turn oven to hottest temperature and blast belly to get crispy skin for 10-20 minutes. Remove and set aside.
  • Bring a small pot of water to a boil, using a spoon, carefully place the eggs in, set a timer for 5 minutes 45 seconds. Once alarm goes off shock eggs in a bowl of ice water and peel.
  • Using same pot of water, bring it back to a boil and add the noodles for 1-2 minutes or until it reaches desired consistency.
  • To serve add noodles to a bowl, poor over miso broth and top with 3 slices of pork belly. Sprinkle over green scallions and serve with black sesame seeds.

Here's a recipe that's sure to turn into a photo op - no matter how you top it.

6 cups low-sodium chicken broth
6 thick slices fresh ginger, plus 2 teaspoons minced
4 cloves garlic (3 smashed, 1 minced)
2 scallions, cut into thirds, plus sliced scallions for topping
3/4 cup dried shiitake mushrooms
1 tablespoon low-sodium soy sauce
1 tablespoon Shaoxing rice wine or dry sherry
Kosher salt and freshly ground pepper
3 tablespoons hoisin sauce
1 teaspoon toasted sesame oil
4 boneless pork chops (1/2 inch thick; about 4 ounces each)
2 large eggs
1 1/2 pounds fresh ramen noodles
1 5-ounce package baby spinach
Shichimi togarashi (Japanese spice mix), for topping

Steps:

  • Combine the chicken broth, 2 1/2 cups water, the sliced ginger, 3 smashed garlic cloves, 2 cut-up scallions, the shiitake mushrooms, soy sauce and rice wine in a large pot. Cover and bring to a boil. Reduce the heat to low and gently simmer, covered, until the mushrooms are soft and the broth is flavorful, 35 to 40 minutes. Season with salt and pepper.
  • Meanwhile, combine the hoisin sauce, sesame oil, minced ginger, minced garlic, a pinch of salt and a few grinds of pepper in a medium bowl. Prick the pork chops all over with a fork and add to the bowl; turn to coat. Let marinate at room temperature, 15 to 20 minutes.
  • Heat a grill or grill pan to medium high. Grill the pork chops until cooked through, about 2 minutes per side. Remove to a cutting board and let rest 5 minutes. Thinly slice the pork chops.
  • Bring a separate large pot of water to a boil. Gently add the eggs in their shells, return to a simmer and cook 6 1/2 minutes. Drain and run under cold water. Peel the eggs and cut in half.
  • Return the pot of water to a boil. Add the noodles and cook as the label directs, stirring often. Drain and divide among 4 bowls.
  • Strain the broth through a fine-mesh sieve into a separate pot. Add the spinach and stir to wilt slightly. Ladle the broth and spinach over the noodles and top with the pork, sliced scallions and eggs; season with shichimi togarashi.

1 green bell pepper, roasted,peeled and diced (very easy)
1/2 cup onion, diced
1 (3 ounce) package ramen noodles
1 clove garlic, peeled and diced
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon olive oil
1/2 teaspoon butter

Steps:

  • Impale the whole green bell pepper on a long handled fork, making sure that the tangs protrude from the other side.
  • Hold over an open flame until the flesh blisters and starts to turn black.
  • Place the pepper into a paper bag and seal for 15 minutes.
  • Then remove,and rub the skin that has been lossened by the steam until it comes off.
  • Remove the stem and seeds.
  • Cut the peeled bell pepper into small pieces, add the salt and black pepper, and set aside.
  • Bring two cups of water to a boil.
  • Melt the butter in the olive oil in a medium sized frying pan, and the saute the onions.
  • When the onions are nearly transparent, break up the Ramen noodles and add to the boiling water.
  • Do NOT add the contents of the seasoning package.
  • The seasoning can be used later to make Salvage Rice, recipe#15581.
  • Add the Spam, bell pepper, and the garlic to the frying pan and stir for 3 minutes which should give the noodles time to cook.
  • Add 1/2 cup of the water from the cooked noodles to the frying pan, drain the noodles and add to the frying pan.
  • Remove the frying pan from the heat and set aside for another minute while the water is being absorbed.
  • Served with a side salad or fruit, this will feed two people for lunch.

A boneless pork shoulder cooks in a broth enriched with ingredients like cremini mushrooms, green onions, gingerroot and garlic. Serve over ramen noodles with the toppings of your choice to customize your bowl!

2 tablespoons vegetable oil
2 lb boneless pork shoulder, trimmed of excess fat, cut into 6 equal sections
1 package (8 oz) sliced cremini mushrooms
1 large bunch green onions, sliced, white and green parts separated
1/8 teaspoon salt
2 tablespoons finely chopped gingerroot
6 cloves garlic, chopped
2 cartons (32 oz each) Progresso™ reduced sodium chicken broth
3 tablespoons soy sauce
3 packages (3 oz each) instant ramen noodle soup mix (discard seasoning packets or save for another use)
Toppings, such as chopped fresh cilantro, sliced jalapeño chile, if desired

Steps:

  • In 5-quart Dutch oven, heat 1 tablespoon of the oil over medium-high heat until hot. Add half the pork; cook 4 to 5 minutes, without moving, until browned and easily releases from the bottom. Turn and continue cooking 2 to 4 minutes or until browned. Transfer pork to 5- to 6-quart slow cooker; repeat with remaining pork.
  • Reduce heat to medium; add remaining 1 tablespoon oil to Dutch oven. Add mushrooms, green onion whites and salt to Dutch oven. Cook 5 to 7 minutes, stirring frequently, until mushrooms release juices and turn brown. Stir in 1 tablespoon of the gingerroot and the garlic; cook 30 seconds. Cover and refrigerate remaining green onion greens and gingerroot until later.
  • Slowly add broth, stirring and scraping to remove any brown bits from bottom. Transfer broth mixture to slow cooker with pork. Cover; cook on Low heat setting 8 to 10 hours or until pork is tender.
  • Transfer pork to cutting board. With sharp knife, cut pork into bite-size chunks, removing and discarding any remaining fat. Using spoon, skim off and discard any fat from surface of broth. Return pork to slow cooker and stir in soy sauce and remaining 1 tablespoon gingerroot. Cover; cook 15 to 20 minutes or until heated through.
  • Cook ramen noodles as directed on package; drain. To serve, divide noodles evenly among individual bowls. Ladle broth and pork over noodles, dividing evenly. Serve with remaining green onion greens; top each bowl with desired toppings.

2 (1x3-inch) boneless pork chop slices
2 tablespoons olive oil, divided
1 tablespoon black sesame seeds, divided

1 (3 ounce) package instant ramen noodles (such as Shirakiku®), seasoning packet discarded
3 tablespoons shredded dried kombu
1 ¾ tablespoons bonito soup stock (such as Hondashi®)
1 ¾ tablespoons soy sauce (shoyu)
½ teaspoon white miso paste with dashi
4 1/3-inch slices fish paste stick (naruto)
1 tablespoon tonkatsu sauce

Steps:

  • Fill a small pot halfway with water. Bring to a boil; add egg and cook for 15 minutes. Drain. Run cold water over egg and let cool.
  • Pour sesame oil into a large skillet. Add pork slices. Cover pork with half the olive oil, sesame seeds, basil, and sage. Flip and cover pork with remaining olive oil, sesame seeds, basil, and sage.
  • Cook pork, covered, over medium-low heat, until evenly browned on the bottom, about 5 minutes. Flip and continue cooking until second side is browned, about 5 minutes more. Remove from heat.
  • Bring a large pot of water to a boil. Add ramen noodles; cook for 3 minutes. Drain in a colander set in the sink; rinse noodles until water runs clear. Return noodles to the pot.
  • Stir kombu, bonito stock, soy sauce, and miso paste into the noodles. Cook, stirring with chopsticks, over medium heat, until miso paste is dissolved, 3 to 5 minutes. Transfer noodles to a bowl.
  • Peel and cut egg in half lengthwise. Top noodles with egg, pork slices, and fish paste slices. Garnish with tonkatsu sauce, ginger, green onion, and black pepper.
