Here's what you need: olive oil, medium onion, red chili flakes, garlic, crushed tomato, salt, penne pasta

2 tablespoons olive oil
½ medium onion, finely diced
½ teaspoon red chili flakes
1 clove garlic, minced
14 oz crushed tomato, 1 can
salt, to taste
½ lb penne pasta

Steps:

  • Heat a large sauté pan over medium heat. Add the olive oil and onion, and cook until the onion is translucent, 8-10 minutes.
  • Add the chile flakes and garlic, and cook for another 2 minutes, until fragrant. Stir in tomatoes and simmer uncovered for 20 minutes.
  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Save ½ cup (120 ml) of pasta water, then drain.
  • Add the drained pasta to the sauce. Stir well, adding a little pasta water if needed to loosen the sauce. Season with salt to taste.

1/4 cup extra-virgin olive oil plus 2 tablespoons, divided
1 1/2 tablespoons chopped garlic
5 cups chopped fresh tomatoes
1 pound penne pasta
1/2 cup shredded basil
Freshly ground black pepper
3/4 pound fresh salted mozzarella, sliced or cubed
1/2 cup grated Parmigiano-Reggiano

Steps:

  • Put a large pot of salted water on for the pasta. Meanwhile, prepare your sauce. In a large skillet, heat 1/4 cup of the olive oil. Add the garlic and cook until just fragrant, about 1 minute or less. Add the tomatoes and cook them for 3 to 5 minutes, just until they begin to release some of their juice.
  • Cook the pasta in the pot of salted boiling water for 12 to 13 minutes until al dente. Drain the pasta. Add the pasta and basil to the pan with the tomatoes and toss. Season, to taste, with salt and freshly ground black pepper.
  • Serve the pasta in bowls, equally distribute the fresh mozzarella and grated Parmesan between the bowls. Drizzle the remaining olive oil over the bowls of pasta and serve immediately.

1 (6 ounce) jar marinated artichoke hearts
15 sun-dried tomatoes, chopped (not packed in oil)
1 cup fresh basil, chopped
1/2 cup fresh cilantro, chopped

2 tablespoons olive oil
1 (12 ounce) package dry penne pasta
3 tablespoons fresh parmesan cheese, finely grated

Steps:

  • Pulse grape tomatoes in food processor until chopped and transfer to a large serving bowl.
  • Drain artichokes in a fine sieve set over a bowl, reserving marinade, and coarsely chop; add to grape tomatoes with 2 T reserved marinade.

1 medium onion, chopped
4 Italian hot sausages, casings removed
1/4 teaspoon dried red pepper flakes
1/3 cup dry red wine
1 28-ounce can crushed tomatoes with added puree
2 teaspoons dried marjoram, crumbled
8 ounces penne pasta
Salt and freshly ground pepper
Freshly grated Parmesan or Romano cheese

Steps:

  • Heat oil in heavy large saucepan over medium heat. Add onion and cook until tender, about 8 minutes. Add sausage and cook until no longer pink, breaking up with fork, about 6 minutes. Of course you can use your favorite bottled pasta sauce of your choice to make this recipe, but it is really the sauce that makes this (do not omit the green bell pepper, I also add in a jalapeno pepper, seeded and finely chopped but that is optional) To save some time and to allow the flavors to blend I strongly suggest to prepare the sauce 1-2 days in advance and refrigerate, this sauce freezes well for up to 3 months. Do not over cook the pasta as it will cook even more in the oven...you will *LOVE* this!

1 teaspoon dried basil

1 (14 ounce) can tomato sauce

Steps:

  • For the sauce; heat oil in a large pot over medium high heat; add in onion, bell pepper, oregano, basil and chili flakes (if using) sauté for about 5 minutes (adding in the garlic the last 2 minutes of cooking).
  • Add in the tomato paste and stir for about 1 minute.
  • Add in all remaining ingredients; bring to a boil and simmer (UNCOVERED) on low heat for about 1-1/2 hours.
  • Season with salt and pepper then remove the bay leaf.
  • At this point you can cool then refrigerate for up to 2 days.
  • Set oven to 350 degrees.
  • Grease a medium casserole dish (or a 13 x 9-inch baking dish).
  • In a large skillet cook the ground beef until well browned, breaking up with a spoon until crumbled; drain fat.
  • To the skillet add in about 5 cups prepared tomato sauce (more is okay, or just go ahead and use the whole amount of sauce if desired more sauce will never hurt lol!) cook for about 15-20 minutes on medium-low heat.
  • Remove from heat and add in 1-1/2 cups mozzarella cheese; stir with wooden spoon to combine.
  • Add in the cooked penne pasta; toss to combine with sauce and cheese.
  • Transfer to baking dish.
  • Bake for about 20 minutes.
  • Remove from oven and sprinkle with Parmesan cheese then about 1/2 cup (or more) mozzarella cheese, return to oven and cook 5-8 minutes more or until the cheese is melted.
  • Delicious!
