WEIGHT WATCHERS LIGHT & HEALTHY CLASSIC CORNBREAD
Steps:
- Position an oven rack in the center and heat your oven to 400F degrees. Spray an 8-inch square (or 9-inch round) baking pan with nonstick cooking spray.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda and salt.
- In a small bowl, beat together the buttermilk and egg until they're well blended.
- Add the buttermilk mixture to the cornmeal mixture and stir just until everything is moistened. (Don't overmix or your cornbread will be tough.)
- Pour the batter into the prepared pan and spread it out evenly.
- Bake in the center of the oven until your cornbread is golden and a toothpick inserted in the center comes out clean, 20-25 minutes.
- Remove from the oven and let cool in the pan on a wire rack for about 10 minutes.
- Cut into 12 pieces.
- Serve warm.

- Heat the oven to 350 F.
- Grease a 9-by-5-by-3-inch loaf pan with shortening or bacon drippings.
- In a mixing bowl combine the cornmeal, flour, sugar, soda, and salt. Blend well with a whisk or spoon.
- Stir the buttermilk and melted shortening into the dry ingredients. Blend well.
- Spoon the batter into the prepared loaf pan.
- Bake for 40 to 50 minutes, or until lightly browned.
- Cool it in the pan on a rack for 5 minutes before removing the bread from the pan.

- Preheat oven to 300°F; grease a 9x5-inch loaf pan.

FEATHER LIGHT CORN MUFFINS
Steps:
- Preheat the oven to 350 degrees. Butter and flour 8 muffin cups or line them with paper liners.
- In a medium bowl, sift the dry ingredients together. In a large bowl, whisk the eggs and milk together. Add 1/3 of the dry ingredients to the egg mixture, then 1/3 of the melted butter, and stir gently just until incorporated. Repeat with the remaining dry ingredients and melted butter, being careful not to over-mix; there may be a little flour not mixed in at the end. Use an ice-cream scoop or large spoon to fill the muffin cups half full. Bake until risen, light golden brown, and firm to the touch, about 15 minutes. Let cool at least 15 minutes in the pan.
- Molasses Butter: Cream the ingredients in a food processor or an electric mixer until fully combined. Strawberry Butter: Clean and hull the strawberries. Place all of the ingredients in a food processor and cream until fully combined.
- To serve, spoon a dollop of jam, or spread the compound butters onto the top of the muffins.
SWEET CORNBREAD

- Preheat the oven to 350 degrees F. Butter and lightly flour a 9-inch cake pan. Be sure to remove any excess flour from the pan.
- Whisk together the flour, cornmeal, sugar, baking powder, baking soda and salt in a large bowl.
- Whisk together 8 tablespoons of the butter with the buttermilk, eggs and vanilla in a small bowl until smooth.

This is more like a cake it's so moist and light, you may want to add in some green chilies or shredded cheddar cheese --- for a less sweeter taste reduce sugar to 1/2 cup --- this is very good!

- Set oven to 450 degrees F.
- Butter a 9-inch round cake pan.
- Pour 2 tablespoons melted butter into cake pan then bake for 5 minutes or until the cake pan is very hot.
