This delicious pasta dish came off the back of San Giorgio's Penne Rigate pasta box. We love it. Sometimes I add sauteed chicken breast to it for a complete meal.

1 (1 lb) package penne rigate
2 tablespoons butter (I also add 2 tbsp olive oil)
2 large garlic cloves, minced
2 tablespoons flour
3/4 cup chicken or 3/4 cup beef broth
3/4 cup milk or 3/4 cup light cream
2 teaspoons dried parsley flakes
salt and pepper, to taste
1/3 cup parmesan cheese, grated (I use more)

Steps:

  • Cook pasta according to package directions.
  • Meanwhile, in small saucepan, melt butter; add garlic (I add the extra olive oil now).
  • Cook over medium heat 1 minute.
  • Add flour; cook 1 minute, stirring constantly.
  • Stir in broth and milk or cream.
  • Cook, stirring frequently, until sauce boils and thickens.
  • Add parsley, salt, pepper and Parmesan cheese; stir until cheese is melted.
  • Toss hot pasta with sauce; serve immediately.

Steps:

  • Cook pasta as directed on package, omitting salt; drain.
  • Heat oil in Dutch oven or large deep skillet on medium heat. Add garlic; cook and stir 1 min.
  • Reserve 1 Tbsp. parsley for later use. Add remaining parsley to skillet along with all remaining ingredients; cook 3 to 5 min. or until Neufchatel is completely melted and pasta sauce mixture is heated through, stirring frequently.
  • Add pasta; cook and stir 2 to 3 min. or until heated through. Sprinkle with remaining parsley.

  • In a deep skillet, fry the bacon until crispy. Remove to a paper towel to drain, then chop.

Steps:

  • Place the chopped bacon and onion in a skillet over medium heat, and cook and stir until the bacon is crisp and the onion is beginning to brown, about 10 minutes.
  • While the bacon and onion are cooking, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. 1 tbsp olive oil
1 bell pepper (sliced in strips, any color)
1/2 red onion (sliced in strips)

12 oz fully cooked beef smoked sausage (cut into 1/2 inch pieces )
1 tsp (heaping) cajun seasoning (**see note about cajun seasoning)

pinch red pepper flakes (or cayenne pepper for more heat)
1 1/4 cups heavy whipping cream

Steps:

  • Cook pasta. Cook your penne pasta to al dente, per box instructions. Drain and set aside.
  • Saute the peppers & onions in oil. In a large skillet (with high sides), over medium heat, add 1 tbsp olive oil and saute the onions, peppers, and garlic for 4-5 minutes.
  • Add all additional ingredients, except cream. Stir in the 1/2 lb. pasta, 12 oz. smoked beef sausage, 14.5 oz. drained diced tomatoes, 1 heaping tsp cajun seasoning, 1 heaping tsp smoked paprika, 1/2 tsp onion pwd, garlic pwd, dried oregano, pinch of red pepper flakes. Stir for 1 minute to coat the pasta and warm the spices.
  • Stir the the heavy cream and simmer until thickened. Stir in 1 1/4 cups heavy whipping cream and simmer over medium heat until the cream has thickened and coated the pasta, about 5-10 minutes.
  • Taste for seasonings & serve!

0.5 oz Dried Porcini mushrooms (or 70 g (2.5 oz) fresh)
1/2 Red Onion
4.5 oz Wild Mushrooms (mixed)
5 oz Bacon (cubed)
1 tbsp Tomato Paste
1/2 cup Cream
Parsley

Steps:

  • Add the dried Porcini mushrooms in a bowl and cover with boiling water. Let it sit for 10-20 minutes or until the mushrooms are fully rehydrated.
  • Bring a large pot of salted water to boil.
  • Finely chop the onion and add it in a non-stick pan with the cubed bacon. Turn on the heat to medium and fry for 2-3 minutes. The bacon fat should be enough to sauté the onion, but you can add a drizzle of oil if necessary.
  • Meanwhile, chop all the mushrooms and then add them to the pan. Add also the tomato paste to caramelize. Cook for 4-5 minutes. All the ingredients should caramelize together but not burn. Regulate the heat accordingly.
  • Toss the pasta in the boiling water and cook according to the package instructions. Drain it 1-2 minutes before it's ready to finish cooking in the sauce.
  • Add the cream to the sauce and a few tablespoons of the Porcini water (filter it if necessary). Turn down the heat to low and simmer for 5-10 minutes.
  • Drain the cooked pasta and add it to the pan with the sauce to finish cooking and absorb all flavors. Add more Porcini water if necessary.
  • Serve with freshly chopped parsley on top.

2 tablespoons olive oil
1 lb chicken ((skinless, boneless chicken breasts or tenderloins))
1 teaspoon paprika
1 teaspoon Italian seasoning ((thyme, oregano, basil - combined))

1.5 cups heavy cream
1/2 cup Parmesan cheese (shredded)
5 tomatoes ((medium, chopped in large cubes))
3 cups fresh spinach (or 1 cup cooked spinach)
5 garlic cloves (minced)

6 bacon strips (cooked, drained off fat, and chopped)
10 oz penne pasta ((for gluten-free version, use gluten-free brown-rice penne))

Steps:

  • Heat 2 tablespoons of olive oil in a large skillet, on medium-high heat. Add chicken and cook on one side on medium-high heat for 4 minutes. While it cooks, sprinkle the uncooked sides of the chicken with paprika, Italian seasoning, and salt. Flip the chicken over, and cook on the other side for 3 more minutes on medium-high heat. Reduce heat to low-medium, flip chicken over again and cook, covered, for several minutes until no longer pink in the center. Remove chicken from the pan and keep chicken warm.
  • To the same pan (but without chicken), add heavy cream and bring to boil. Only after the heavy cream starts boiling, add shredded Parmesan cheese. Immediately reduce to simmer (low-medium heat) and stir, while simmering, until the cheese melts and the sauce is creamy, for about 1 or 3 minutes.
  • To the same pan with the creamy sauce, add chopped tomatoes, fresh spinach, garlic, crushed red pepper. Stir in the sauce on medium heat just until the spinach starts to wilt and sinks into the sauce. Add 1/3 of the cooked chicken (sliced into small strips) and half the bacon (already cooked and drained of fat). Mix everything. Remove from heat.
  • In the meantime bring a large pot of water to boil, add pasta, and cook according to instructions (usually 10 to 15 minutes). Drain the pasta.
  • Add cooked pasta to the skillet with the sauce and reheat on low heat. When ready to serve, top the pasta with the remaining half of bacon (cooked, drained of fat, chopped, gently reheated) and the remaining 2/3 of the cooked chicken (sliced into small strips, gently reheated). This is done for presentation purposes.
  • When serving, top the pasta with 1/2 cup of shredded Parmesan cheese.

I was craving a good, warm, hearty pasta dish on the first cool day of Autumn. I came up with this by accident, just using what I had on hand. The 8oz. box of penne is a guess...I just know it was a regular size box of Mueller's penne...and I just used 1/2 of it!

3 boneless skinless chicken breasts
0.5 (8 ounce) box penne pasta
7 slices bacon
2 tablespoons chopped garlic
1/2 teaspoon white pepper
salt
onion powder
bay leaf
2 1/2 cups heavy cream
2 tablespoons flour
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Put chicken in pot with water and bay leaves. I used about 1 tablespoon of chopped dried bay leaves. Boil the chicken until done. I boil it low so it doesn't get tough and infuses the flavor of the dried bay leaves.
  • Meanwhile, fried the bacon low. When almost done, put 1 tablespoon of garlic in with it and about 1/2 teaspoon of onion powder. Take bacon and garlic up when the bacon is done - drain on paper towel. You will reserve one tablespoon or so of the grease, but dump the rest out. Add a little margarine to the bacon grease and then two tablespoons of flour (to make a paste). After the paste is made, slowly add cream while you are stirring. If you add it slowly, a little at a time, you can watch the sauce thicken and doesn't take as long over heat to thicken it. After the sauce is thickened, add a tablespoon of garlic, pepper and salt to taste. Reduce to low heat and stir frequently while you cook the 1/2 box of penne pasta (11 minutes till done). Drain pasta, put that in cream sauce. After chicken is done, chop it and mix that into the pasta and cream sauce. Mix together nicely and top with drained (chopped) bacon! Add some parmesan on top if you wish. Delicious! Serve with a salad.

2 tablespoons olive oil
1 pound boneless and skinless chicken ((thick in size, such as chicken breasts))
salt and pepper
1 teaspoon garlic powder
1 tablespoon butter
3 garlic cloves ((minced))
4 small tomatoes ((diced))
2 cups spinach
1 1/2 teaspoon paprika
1 teaspoon Italian seasoning ((more, if desired))
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1.5 cup heavy cream
1 cup Parmesan cheese (shredded (more for garnish))
10 oz. penne pasta
2 tablespoons Parsley ((chopped))

Steps:

  • BACON: Add bacon strips to the skillet and cook until crispy. Transfer cooked bacon to a paper towel-lined platter that will absorb extra grease. Chop into 1 inch pieces
  • CHICKEN: Paper towel dry the chicken and season with salt, pepper and garlic powder. Then set aside.Heat olive oil in a large deep skillet. Add chicken breasts and cook on each side on medium high heat for about 4 minutes per side (for a total of 8 minutes) until nicely browned. If chicken is still pink in the center, reduce heat to medium and cook covered for several minutes until no longer pink in the center. Remove chicken from pan and slice it.
  • Add butter to the hot pan and once it melts, add chopped garlic and cook for 1-2 minutes until fragrant.
  • Add tomatoes and cook for 3 minutes on medium high until tomatoes release their juices. Add fresh spinach and cook until it wilts.
  • Reduce the heat and season with paprika, Italian seasoning, crushed red pepper flakes and salt. Mix.
  • Next add heavy cream - you are still cooking on low heat. Once heavy cream is slightly simmering, slowly add Parmesan cheese. Once you add the cheese, stir on low simmer until smooth.
  • PASTA: In the meantime bring a large pot of water to boil, add pasta and cook it according to instructions. Drain the pasta, but do not rinse.
  • Add sliced chicken, bacon and pasta. Next add chopped parsley. Stir until fully coated in sauce. Season with more salt if necessary.
  • TO SERVE: Serve with additional shredded Parmesan and red pepper flakes, if desired.

1 cup heavy cream
1/2 cup Parmesan, freshly grated
1/2 tsp olive oil
6 large scallops
Salt & pepper
Chopped chives for garnish

Steps:

  • In a medium skillet, cook chopped bacon over medium-high heat until crisp. Remove the bacon with a slotted spoon to a paper towel-lined plate to drain.
  • Add butter, cream, and Parmesan to the skillet with the bacon grease. Reduce the sauce over medium heat by half. Stir in the cooked bacon. Season with salt and pepper to taste. Keep warm over low heat.
  • In a separate skillet, heat 1/2 tsp olive oil over medium-high heat. Season scallops with salt and pepper. Once the pan is hot (make sure it's really hot!), add the scallops to the pan.
