Hot Italian sausage with broccoli rabe sauteed and served over penne. You'll love this dish so much and so will your family. Every time I make it I have to double the recipe.

1 (16 ounce) box penne pasta
1 pound hot Italian sausage links, cut into 1-inch pieces
3 cloves garlic, minced
1 tablespoon crushed red pepper flakes
1 pound broccoli rabe, cut into 1 1/2-inch lengths
2 tablespoons grated Parmesan cheese
½ cup pasta boiling water
¼ cup grated Parmesan cheese
salt and pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink, reserving 1/2 cup of the water.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir the sausage pieces, garlic, and red pepper flakes in the hot pan until the sausage is no longer pink on the outside, about 4 minutes. Stir in the broccoli rabe and 2 tablespoons Parmesan cheese. Pour in the reserved 1/2 cup of pasta boiling water. Cover, and cook until the sausage is no longer pink in the center and the broccoli rabe is tender, 5 to 7 minutes.
  • Stir the cooked pasta, broccoli rabe, and 1/4 cup Parmesan cheese together until evenly mixed. Season to taste with salt and pepper to serve.

Tips: Cook the broccoli rabe the night before and you'll be way ahead. Whatever you do, read the recipe through start to finish before you get started. It's a little out of the ordinary but relatively painless. Cook off the garlic and sausage up to one hour ahead and let it sit in the pan until you're ready to finish the dish.

1 pound broccoli rabe, trimmed of damaged leaves
1 pound orecchiette or other pasta noodle
2 tablespoons water
4 to 5 cloves garlic, thinly sliced
1/2 pound Italian sausage, cut into quarter-inch slices
Salt
1 cup coarse, seasoned bread crumbs, toasted, optional garnish
Pecorino Romano or Parmesan, optional garnish

Steps:

  • Cut the broccoli rabe into 3 to 4 inch pieces, discarding the stems. In a large pot of rapidly boiling water, blanch the broccoli rabe until tender and cooked through, about 5 to 6 minutes. Before you drain broccoli rabe, reserve 1 cup of cooking liquid. Drain and rinse the broccoli rabe with cold water until it has cooled off. Spread it out on a towel to finish draining.
  • Meanwhile, cook the pasta in a large pot of boiling water according to package directions until al dente.
  • While the pasta is cooking, place 2 tablespoons of water into a cold skillet with garlic and sausage and then turn heat to medium-low. Cook, stirring occasionally, until garlic is golden and sausage is cooked through, about 5 to 7 minutes. Pour reserved broccoli water into pan with sausage.
  • When the pasta is cooked, drain it and place back in pot you cooked it in and season with salt. Pour sausage sauce over pasta and stir in cooked broccoli rabe. Taste and adjust seasonings. Serve immediately.
  • If the Queen's coming to dinner: Garnish with fresh bread crumbs and/or freshly grated pecorino Romano or parmesan cheese.

2 bunches broccoli rabe
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons capers, drained
Coarse salt and freshly ground pepper to taste
1 tablespoon extra-virgin olive oil
Freshly grated Parmesan cheese

Steps:

  • Cook penne in abundant boiling, salted water. While it is cooking, prepare broccoli rape.
  • Cut off thick stems from the broccoli rape and discard them. Cut remaining stalks and leaves into one-inch pieces.
  • Heat oil in large skillet and saute the garlic until golden. Add broccoli rape with capers and saute until leaves are wilted and stalks are tender (about five minutes). Season to taste with salt and pepper.
  • When the penne is al dente, drain and place in a heated serving bowl. Add broccoli rape and extra-virgin olive oil. Toss and serve, passing the Parmesan cheese separately.

It's the combination of bitter broccoli rabe and hot sausage that makes this one of the greatest Italian-American dishes. My mother began making this when my Uncle Joe became a butcher and could provide an unlimited supply of his own handmade pork-and-fennel sausages. It's still one of my favorites of Mama's dishes. Here I use whole-wheat penne and low-fat turkey sausage-but the rest I left just like Mama's.

Number Of Ingredients 8

6 ounces whole-wheat orecchiette or penne
9 cups loosely packed broccoli rabe, trimmed and cut into bite-size chunks
1 1/2 links hot Italian turkey sausage, casings removed
8 garlic cloves, sliced very thin
1/2 teaspoon crushed red pepper
2/3 cup low-fat, low-sodium chicken broth
1/2 cup grated Parmigiano-Reggiano cheese
Salt and freshly ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta and cook according to the package directions, about 9 minutes. During the last 2 minutes of cooking, add the broccoli rabe. Stir, and continue to cook until both pasta and broccoli rabe are tender. Drain.
  • While the pasta is cooking, heat a very large nonstick pan over medium-high heat. Add the sausage and break it up with a wooden spoon. Cook until it is golden brown and just cooked through, about 5 minutes. Transfer the sausage to a colander and set it aside to drain.
  • Wipe the pan out lightly and return it to medium-low heat. Add the sliced garlic and cook until it is fragrant and just beginning to turn golden, about 1 minute. Add the crushed red pepper and the chicken broth, and bring to a simmer. Add the cooked pasta and broccoli rabe, and allow the mixture to simmer for about 1 minute to release some of the starch from the pasta and thicken the sauce. Pour the pasta mixture into a large bowl, and toss it with the cooked sausage and the cheese. Season the pasta with salt and pepper to taste, and serve.

1/3 cup extra-virgin olive oil
4 garlic cloves, chopped
2 bunches broccoli rabe, chopped
8 anchovies, chopped
3/4 teaspoon dried crushed red pepper
1 pound tomatoes, diced
1 cup chopped fresh basil, divided
2 tablespoons fresh lemon juice

Steps:

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain; return to same pot.
  • Meanwhile, heat oil in large skillet over medium-high heat. Add garlic; sauté 30 seconds. Add broccoli rabe, anchovies, and crushed pepper; sauté until broccoli rabe is crisp-tender, about 5 minutes. Add tomatoes and 1/4 cup basil.

1 lb short-cut pasta, such as penne (I used Dreamfields)
1 cup low-fat ricotta cheese
1 lemon, juice and zest of
fresh ground black pepper
1 tablespoon extra virgin olive oil, once around the pan
1 lb bulk sweet Italian sausage
1 large head broccoli
1 medium onion, chopped
4 large garlic cloves, chopped
1/4 teaspoon red pepper flakes (I use more)
1 1/2 cups chicken stock
1/2 cup fresh flat-leaf parsley
1/2 cup grated parmigiano-reggiano cheese or 1/2 cup pecorino romano cheese, plus some to pass at the table

Steps:

  • Cook pasta according to package directions until al dente.
  • Heads up, you will need to use about 1/2 cup of the starchy cooking liquid for the sauce before you drain the pasta.
  • In a small mixing bowl, combine the ricotta cheese, lemon zest, salt, and a lot of freshly ground black pepper.
  • Reserve the ricotta mixture on the countertop and let it come up to room temperature The flavors of the cheese and lemon will develop as the cheese warms up.
  • Preheat a large skillet over medium-high heat with the EVOO.
  • Add the sausage and break it up with the back of a wooden spoon into a small bite-size pieces.
  • Really go at breaking the meat up; it will make a difference in the end.
  • Cook the meat until brown, about 4 to 5 minutes.
  • While the sausage is browning, prepare the broccoli.
  • Cut the broccoli tops into small florets. Remove the fibrous outer layer of the stem (just square it off using your knife), then thinly slice the tender center portion of the stem.
  • Once the sausage is brown, remove it to a paper-towel-lined plate.
  • Return the skillet to the heat and add all of the broccoli and the chopped onion. Spread the veggies out in an even layer in the pan, season with some salt and pepper, and let the broccoli brown up a bit before stirring, about 2 minutes.
  • Add the garlic and red pepper flakes and continue to cook 2 minutes more.
  • Add the sausage back to the skillet along with the chicken stock.
  • Ladle in some cooking water from the pasta and bring up to a simmer.
  • Cook until the broccoli is tender and the liquids have reduced slightly, about 2 minutes.
  • Add the lemon juice, parsley, and cooked, well-drained pasta.
  • Toss to combine and simmer 1 last minute to allow the pasta to soak in the sauce and flavors.
  • Turn the heat off, add the grated cheese, and toss to combine.
  • To serve, place a large dollop of the pepper-lemon-ricotta mixture into each of 4 shallow bowls and bury it with the hot pasta.
  • Once you are at the table, mix it up with a fork to distribute the ricotta cheese. Serve with extra grated cheese.
