SPICY PRAWN CURRY WITH QUICK PILAU RICE

Spicy prawn curry with quick pilau rice image

There's enough for two meals here, and any leftover rice can be used for a lamb or chicken biryani, or as a base for stuffed squash.

Provided by Phillippa Spence

Categories     Mains     Jamie Magazine     Seafood     Indian     Curry     Prawns

Time 45m

Yield 2

Number Of Ingredients 22

1 small red onion
½ a bunch of fresh coriander
5cm piece of ginger
½-1 fresh green chilli
olive oil
1 teaspoon mustard seeds
½ teaspoon turmeric
4 dried curry leaves, optional
2 ripe tomatoes, on the vine
200 g raw king prawns, shells on, from sustainable sources
100 ml light coconut milk
PILAU RICE
1 onion
vegetable oil
1 teaspoon unsalted butter
1 teaspoon cumin seeds
1 dried red chilli, optional
3 cardamom pods
4 cloves
1 teaspoon turmeric
1 fresh bay leaf
½ mug of basmati rice (about 150g)

Steps:

  • Peel and finely slice the red onion, pick the coriander leaves and set aside, then finely slice the stalks. Peel and finely chop the ginger, then finely chop the chilli.
  • Heat 1 tablespoon of olive oil in a large saucepan over a medium heat. Add the red onion, coriander stalks (not leaves) and dried spices, then fry for about 1 minute, until the mustard seeds start to pop.
  • Add the chopped ginger and green chilli, then cook for a further 5 minutes, or until the onions have softened, stirring occasionally.
  • To prepare the rice, peel and finely chop the onion, then add to a pan over a medium heat with 1 teaspoon of vegetable oil and the butter. Cook for 5 minutes, or until just colouring. Put a kettle of water on to boil.
  • Sprinkle in the spices, keeping the dried chilli whole (if using), and cook for 1 minute. Turn up the heat, add the rice and stir well.
  • Fill the mug you used for the rice with boiling water (about 350ml, or twice the volume of the rice) and add to the pan, with a good pinch of sea salt. Bring to the boil, cover and reduce the heat.
  • Simmer for 12 to 15 minutes over a low heat, or until the water has been absorbed and the rice is cooked.
  • Roughly chop the fresh tomatoes and add to the spiced onions with a splash of boiling water. Bring to the boil, season, then simmer for 5 minutes, or until thickened and darkened slightly.
  • Stir in the prawns and coconut milk and cook for 3 to 5 minutes, or until the prawns are pink and cooked through.
  • Fluff up the rice with a fork, then serve with the curry, removing the chilli (if using), and a scattering of the coriander leaves on top.

SPICY SHRIMP FRIED RICE WITH BROCCOLI

Spicy Shrimp Fried Rice with Broccoli image

Spice up this fried rice with shrimp and broccoli by adding ginger, jalapeno and chili oil.

Provided by Food Network Kitchen

Time 20m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons vegetable oil
1 large egg, beaten
1/2 pound peeled, deveined medium shrimp
Kosher salt
1 cup chopped broccoli florets
1 teaspoon minced garlic
1 teaspoon finely grated fresh ginger
1 teaspoon finely chopped jalapeno
1 teaspoon Shaoxing wine or dry sherry
3 cups cold cooked long-grain white rice
1 1/2 teaspoons Asian chili oil, or to taste

Steps:

  • Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop onto a plate.
  • Add the shrimp to the skillet, season with 1/4 teaspoon salt and stir-fry until just cooked through, about 3 minutes. Transfer to a bowl. Add the remaining 1 tablespoon oil to the skillet, then add the broccoli, garlic, ginger, jalapeno, Shaoxing and 1/4 teaspoon salt and stir-fry until crisp-tender, 2 to 3 minutes.
  • Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg, shrimp and any juices to the skillet and cook, stirring to break up the egg and mix it in thoroughly, about 1 minute. Season with additional salt if needed. Stir in the chili oil and serve.

SPICY PRAWN FRIED RICE FROM NEW ZEALAND

Spicy Prawn Fried Rice from New Zealand image

This recipe has been submitted for play in ZWT8 - Australia/New Zealand. The recipe was found at Wattie's - Food in a Minute website. Love Asian food but haven't tried making it yourself? This tasty fried rice dish with succulent prawns, Asian sauces and a chilli kick is a great place to start. Reheating cooked rice requires caution due to a bacterium that can cause food borne illness. When dealing with cooked rice you should refrigerate as soon as cooled and do not reheat more than once. Because this recipe uses cooked rice it should not be reheated again. Discard any leftovers.

SPICED PRAWNS

Spiced Prawns image

Friendly on the waistline! Finger food or a main dish served with noodles/rice and vegetables, a simple but very tasty dish. If you can't get lemon grass or lime leaves, the best substitute I can think of is to use grated lime zest. Marinating time not included.
