MAPLE CURRY PENNE
This is a wonderful gluten-free pasta sauce that we enjoy. It is full of flavor!

Steps:
- Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Heat oil and butter together in a deep skillet over medium-high heat. Saute onion, mushrooms, and bell pepper in the hot oil-butter mixture until softened, 5 to 10 minutes.
- Mix maple syrup, garlic, and sugar into onion mixture, reduce heat to medium-low, and simmer until mixture is reduced and almost caramelized, about 5 minutes. Add chicken, cream, and curry powder to maple syrup mixture and cook until heated through and thickened, 7 to 10 minutes. Serve sauce over penne pasta.

Steps:
- Bring a large pot of water to a boil and cook pasta according to package directions. Drain.
- While pasta is cooking, heat olive oil in a pan over medium heat. Cook onion just until softened, about 3 minutes. Stir in the curry powder and garam masala. Stir in the pumpkin. Slowly pour in the chicken broth and heavy cream. Reduce heat to a simmer and cook until thickened slightly, 3 - 5 minutes.
- Add pasta to the sauce and toss to coat. Stir in salt. Add more if desired.
- Transfer pasta to a serving dish, sprinkle with green onions and serve.

BANANAS BOMBAY
a slight twist on bananas flambe. The name comes from a friend of mine who couldnt seem to remember 'flambe'. Perfect when served with a scoop of vanilla ice cream

Steps:
- in a sauce pan(slightly greased with butter) on medium heat- add in orange juice and brown sugar. Amounts in the recipe are not exact, use to taste. Stir the mixture into a sauce (shouldnt be very thick but not runny).
- cut bananas into bite size pieces and add to sauce mixture. Coat well.
- squeeze the juice of the lemon (and orange) into the pan, mix well. Add more sugar if the mixture becomes too runny.
- add in vanilla, cinnamon and any other spice you would like to add in (I've used nutmeg with peaches before)stir well.
- add in rum, turn off the kitchen lights and light the bananas (when in doubt, use less rum than needed and repeat process until the desired flavor is obtained).
- let it burn out (use a metal spoon to slightly stir) and take off heat.
- serve over vanilla ice cream.

PENNE BOMBAY
This is out of the 2004 edition of KCTS Chef's cookbook. It was sent in by Antonio Mauro the executive chef from Anton's Pasta Bar in Burnaby BC. The original recipe called for 20 oz of pasta for 2 servings. No wonder the portions are so big at restaurants. I changed it to 8 oz and decreased the half-half also to 8 oz. it was 18 oz. Hope this works. 10/12/13...I finally made this...it sure is restaurant quality...but it still made a lot...I even cut the recipe in half and got at least enough for 2 helpings...just something to keep in mind when making...you can taste just a slight hint of the curry...it's not overpowering...it's really quite easy to prepare...just have all your ingredients ready...

Steps:
- Saute' prawns, green onions, cilantro, garlic, curry paste and curry powder in margarine.
- When prawns are half cooked, add wine and sour cream and reduce; add half-and-half.
- Season with salt and pepper.
- Bring to a simmer and blend in cheese. Add penne and garnish with parsley.
