I made this one night when I ran out of ketchup and was making a meatloaf. I kept adding and writing it down, and Voila! I had a homemade ketchup with simple ingredients and went well with just about anything.

1 (6 ounce) can tomato paste
2 tablespoons white vinegar
5 tablespoons brown sugar
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon allspice
1 teaspoon salt
1 teaspoon molasses
1 tablespoon corn syrup
1 ¼ cups water

Steps:

  • Mix together the tomato paste, white vinegar, brown sugar, garlic powder, onion powder, allspice, salt, molasses, corn syrup, and water in a saucepan over low heat; simmer gently until you get the consistency of ketchup, 45 minutes to 1 hour. Taste and adjust salt if necessary before serving.

  • Cook 1/4 cup minced onion in a saucepan with 1 tablespoon butter until soft, 3 minutes. Add 1 teaspoon each curry powder and paprika and a pinch of cayenne; cook until toasted, 1 minute. Add 1 cup ketchup and 1/2 cup water; simmer until thick, about 25 minutes.

2 cups ketchup
1/2 cup honey
2 tablespoons mild yellow curry powder
Kosher salt and freshly ground black pepper
8 links knackwurst (white pork bratwurst) or weisswurst (white pork and veal sausage)
2 cups chicken stock
Olive oil, for grilling
2 large sweet onions, sliced 1/2 inch thick
8 German-style brotchen rolls or hard-shell rolls (ciabatta is a great substitute!)
Mild yellow curry powder, for sprinkling

Steps:

  • For the curry ketchup sauce: In a medium pot on medium heat, add the ketchup, honey, curry powder, a pinch of salt and a few grinds of black pepper. Cook while stirring until the curry powder melts into the ketchup and the red color deepens, about 5 minutes.
  • For the wurst and onions. In a large pot on medium-low heat, add the wurst in 1 layer, then pour the stock over the top. Cover, bring just to a simmer and gently simmer until the wurst is cooked through, 15 to 20 minutes.
  • Preheat a grill to high heat. Remove the wurst from the pot, place on the grill, drizzle with a little olive oil and cook until charred on both sides and slightly bursting, 8 to 12 minutes total. Remove to a cutting board and cover with aluminum foil. Toss the onion slices with olive oil, add to the grill and cook until charred on only one side, about 5 minutes. Remove the onions to a cutting board and cover with aluminum foil for 10 minutes. Cut each wurst link into 1/2-inch discs and chop the onion slices.
  • Open the rolls by splitting them across the top, then scoop the wurst and onions into the rolls. Sprinkle with curry powder and drizzle with the curry ketchup sauce.

By making your own KETCHUP, you can reduce the amount of salt, as well as eliminating additives. Stored tightly covered in the refrigerator, the ketchup will keep well for about two weeks. If you want add 1/2 teaspoon red pepper flakes and 1 tablespoon cocoa powder. this gives it a different taste.

12 large ripe tomatoes peeled, coared, seeded and chopped
2 medium yellow onions chopped fine
4 Tbsp dark brown sugar
3 cloves garlic minced
1 large or two medium bay leaves
1/4 tsp celery seed
1/4 tsp ground allspice
1/4 tsp cinnamon
1/8 tsp ground cloves
1/3 c cider vinegar

Steps:

  • 1. Place tomatoes and onion in a large heavy saucepan. Set over moderate heat and cook, covered stirring often soft about 20 to 25 minutes.
  • 2. Remove the vegetables, then put them through a food mill back into the saucepan, Discarding any solids left in food mill.
  • 3. Stir in the brown sugar, garlic, bay leaf, celery seeds, allspice, cinnamon, cloves, and vinegar, and bring to a boil over moderate heat, adjust the heat so that the mixture bubbles gently, then simmer, uncovered stirring often, until it has the consistency of ketchup 35 to 40 minutes. AT THIS POINT REMOVE THE BAY LEAF
  • 4. Store tightly covered in the refrigerator. Makes about 2 cups.

1 tablespoon(s) worcestershire sauce
2 cup(s) shredded cheddar cheese
2 cup(s) bisquick
2 large eggs
1 1/2 cup(s) milk
salt and pepper

Steps:

  • In a skillet add the ground beef and shallot and season with salt and pepper. Cook until no longer pink. Drain any grease. Add the ketchup, mustard, brown sugar, and Worcestershire sauce. Mix well.
  • Preheat oven 400 degrease. Spray a 13x9 pan and add the beef to the bottom. Top with the cheese.
  • Mix the bisquick, eggs and milk together. Spread over the cheese. Bake for about 25 minutes until golden. Cut into squares and serve.
