- Cook fettuccine according to package directions. , Meanwhile, in a large kettle, combine the soup, cream cheese, mushrooms, cream, butter and garlic powder. Stir in cheeses; cook and stir until melted. Add chicken; heat through. Drain fettuccine; add to the sauce. , Transfer to a shallow greased 2-1/2-qt. baking dish. Combine topping ingredients; sprinkle over chicken mixture. Cover and bake at 350° for 25 minutes. Uncover; bake 5-10 minutes longer or until golden brown.

BAKED FOUR-CHEESE SPAGHETTI
Steps:
- Preheat the oven to 350 degrees F. Lightly butter a 9-by-13-inch baking dish.
- Cook the spaghetti in a large pot of boiling salted water until al dente. Drain well and spread the spaghetti on a baking sheet; let cool.
- In a large bowl, toss the fontina with the Gruyere and mozzarella. Spread half of the spaghetti in the prepared baking dish in an even layer. Sprinkle half of the mixed cheeses and half of the Gorgonzola over the spaghetti and season with salt and pepper. Repeat with another layer of spaghetti, mixed cheeses, Gorgonzola and salt and pepper.
- Bake the spaghetti in the center of the oven until the top is golden brown, about 40 minutes. Let cool slightly before cutting into squares and serving.
CREAMY FOUR CHEESE PASTA WITH GARLIC
Steps:
- Gather the ingredients.
- Bring water to a boil in a tall pasta pot, add salt generously, and cook spaghetti according to package directions for al dente. Reserve 1/4 cup of pasta water after spaghetti has finished cooking. Strain spaghetti and rinse with warm water to prevent it from sticking together while you prepare sauce.
- In a large skillet over high, heat butter and olive oil. Reduce heat to low, add minced garlic , and cook until fragrant (be careful not to brown garlic).
- Using a whisk, stir in heavy cream and gradually add cream cheese and Pecorino Romano, 1/2 cup of the Parmesan, and Asiago cheeses until you achieve a thick sauce consistency.
- Add cooked spaghetti and reserved pasta water to sauce.
- Season with salt and pepper and cook for another 2 minutes, stirring and tossing pasta until it is completely coated with sauce. Leave in skillet or transfer to a serving dish. Top with chopped parsley and remaining 1/4 cup of Parmesan cheese.

- In a 3-quart saucepan, saucier, or other medium pot, combine cream with thyme, garlic, and black pepper. Bring to a simmer over medium heat, stirring and scraping the bottom of the pan with a flexible spatula to prevent scorching, then remove from heat and let steep 5 minutes. Remove and discard garlic and thyme.
- Return infused cream to low heat and add Taleggio, whisking constantly until Taleggio is fully melted.
- Add grated Gruyère (or Fontina) and continue to whisk until fully melted and a smooth sauce forms. Whisk in Parmigiano-Reggiano cheese. Keep warm.
- Meanwhile, in a pot of salted boiling water, cook pasta until al dente. Using a spider skimmer, transfer pasta to cheese sauce; alternatively, strain pasta in a colander, making sure to first reserve 1 cup (240ml) pasta-cooking water. Add 1/4 cup (60ml) pasta-cooking water to pasta and sauce and, working over medium-low heat, stir gently until pasta is coated in a creamy glaze. If sauce becomes too thick, add more pasta water, 1 tablespoon (15ml) at a time, to loosen to proper glazing consistency. Season with salt to taste.
- Remove from heat and stir in gorgonzola; it may completely melt into the sauce, but it's fine (arguably even desirable) if some pieces remain mostly intact.
- Serve right away, passing more grated Parmigiano-Reggiano at the table.

- Cook and drain fettuccine as directed on package.
- Meanwhile, in 12-inch skillet, heat oil and butter over medium heat. Cook onions and 1 tablespoon parsley in oil mixture about 4 minutes, stirring occasionally, until onions are tender.
- Stir in ricotta and feta cheeses; reduce heat to low. Cook about 2 minutes, stirring frequently, until cheeses are melted.

FOUR CHEESE FETTUCCINE ALFREDO WITH PANCETTA, & PROSCIUTTO
I won first place in two different Iron-Chef competitions with this savory and delicious take on classic fettuccine alfredo. This is my original recipe. I also made a complimentary perlini pasta with pesto and suggest a side vegetable of garlic Asparagus. You can see my recipes for both of these items.

- Bring a large pot of water to boil. Meanwhile in a large saucepan over high heat, bring the cream and butter to a boil. Reduce the heat to low and simmer for about 1 minute. Add 6 tablespoons each of the 4 cheeses and whisk over low heat and season with salt and pepper to taste and a generous pinch of nutmeg. Set aside. Saute the pancetta and lightly sauté the procciutto in a skillet.
- Generously salt the boiling water, add the fresh pasta and cook until al dente, 1-3 minutes. Drain.
- Put the fettuccine pasta in a warmed large shallow dish. Pour on the sauce and sprinkle with 6 more tablespoons of the cheese. Serve all immediately on two sides of a dinner plate with the asparagus.
- Garnish and add sides to your liking. Enjoy!

PASTA WITH FOUR CHEESES
Steps:
- Bring a large pot of salted water to boil, add noodles and cook until done about 6 to 7 minutes or according to package directions. Meanwhile, finely dice your cheddar and brie into 1/4-inch cubes. Combine the cheeses with the white wine and ricotta in the top of a double boiler or in a microwave proof container that is large enough to accommodate the cooked pasta. If you are using a double boiler, melt the cheese while the pasta is cooking, if you are using a microwave you can wait until the pasta is done. When the pasta is done, drain, pat dry, and toss it with the melted cheese. Or is you are using a microwave oven, heat the cheese for 1 minute. Whisk it vigorously and return it to the microwave for 20 seconds. Add the drained pasta to the melted cheese, right in the microwave dish, and toss. Season with lots of freshly ground pepper and scallion.

- 1. Heat butter and half-and-half in 2 quart saucepan over low heat until butter is melted. 2. Stir in gruyere, parmesan, salt, pepper, and garlic. Cook stirring occasionally for about 5 minutes. 3. Cook fettuccine as directed on package except add a little oil to boiling water. Drain. Place in serving bowl. 4. Pour sauce over hot fettuccine. Add gorgonzola and mozzarella. Toss using two forks. 5. Garnish with chopped parsley. Notes: Can substitute evaporated milk for 1/2 & 1/2. Or use heavy cream for a real artery blocker.
