Steps:
- Heat oven to 375°F. Combine topping ingredients and set aside.
- Cook pasta al dente according to package directions.
- Cook onion, mushrooms, and garlic in butter until tender, about 5 minutes.
- In a large bowl combine soup, mushroom mixture, milk, seasonings, and ½ of the cheese. Fold in turkey and pasta.
- Spread into a 9x13 casserole dish, top with remaining cheese, and sprinkle with topping.
- Bake 30-35 minutes or until hot and bubbly.

Steps:
- Cook the pasta in boiling salted water according to your preferences or the packet instructions.
- Meanwhile, put the olive oil and onions in a pan and cover with a lid. Cook over a low heat, stirring occasionally, for about 3 minutes, or until the onions have softened but not coloured.
- Turn the heat up and add the mushrooms, fry for 3 minutes, stirring frequently, until the mushrooms and onions have browned nicely.
- Lower the heat again and add the garlic and the turkey and cook for a further 2 minutes. Add the cream, salt and pepper, and cook for a further 5 minutes until the turkey is piping hot all the way through and the sauce has reduced slightly.
- Meanwhile drain the pasta, reserving a couple of tablespoons of the cooking water.
- Tip the pasta and cooking water into the sauce and stir to combine. Sprinkle over half the parsley and stir again.
- Serve garnished with extra parsley and lots of parmesan cheese!

CREAMY GROUND TURKEY, SPINACH AND PEA PASTA
This dish is a great way to feed a group of people and make a pound of meat stretch. I also sneak in veggies like spinach and peas for picky eaters. Rich, creamy and filling, this pasta is perfect for busy weeknights or special enough for entertaining.

- Bring a large stock pot of salted water to a boil.
- Meanwhile, heat a large nonstick skillet over medium heat. Add 1 to 2 tablespoons olive oil along with the ground turkey and cook, breaking up the turkey with a wooden spoon, until browned, about 8 minutes. Season with salt and pepper. Turn the heat to medium low and add the garlic and thyme; cook, stirring, until fragrant, about 2 minutes. Next, add the flour and stir to coat. If the skillet looks too dry, add 1 to 2 more tablespoons olive oil. Cook, stirring, until it smells nutty, about 2 minutes. Deglaze the skillet with the vermouth or white wine and cook, scraping up the browned bits with the wooden spoon, until the liquid evaporates. Next, add the milk and 1 cup Parmesan, liberally season with salt and pepper then simmer on low heat until the sauce thickens, 8 to 10 minutes.
- At this point drop the pasta into the boiling water and cook per the package directions until al dente.
- Five minutes before the pasta is ready, add the spinach and peas to the sauce and cook over low heat, stirring occasionally, for 5 minutes. Taste for seasoning; add more salt and pepper, if necessary. Add the pasta, along with 3/4 to 1 cup of the pasta cooking water, directly to the skillet and stir until the sauce is thick and creamy, 1 to 2 minutes.
- Serve the pasta in shallow bowls, then sprinkle with pepper and extra Parmesan.

- In a large frying pan, sauté bacon until no longer pink but not crisp. Leave 2 tablespoons bacon fat in pan, removeing excess. Add shallots, and sauté until translucent. Add mushroooms an green onions; sauté for two minutes.
- Add white wine and bring to a boil; reduce and simmer until liquid is reduced by half. Add cooked turkey half-way through the second reduction process.
- When sauce is reduced, add 3/4 cup Parmesan, reserving the remaining 1/4 cup. Serve sauce over pasta.
- Garnish with fresh parsley and remaining Parmesan. Serve with bread, grilled or toasted wih garlic butter.

- Cook penne according to package directions.
- Heat butter in large nonstick skillet; add onions, garlic and mushrooms, cook until softened- approximately 3 minutes.
- Add spinach, cook until just wilted- approximately 1 minute.
- Add turkey, pimentos, broth, soup and sour cream, heat through- without boiling.
- Drain pasta.

- In a large saute pan or skillet, over medium heat, add the olive oil. Then add the salt, 1 teaspoon of dried sage, and cayenne pepper to the oil and swirl to combine. Add the ground turkey to the pan and break up with a spoon or spatula while you are browning it. After the turkey has been cooking for about 5 - 6 minutes, or when the turkey is no longer pink, add the frozen peas and chicken broth to the pan and continue to cook for 3 - 5 minutes, stirring to mix the peas with the turkey. Once finished, transfer to a bowl, cover and set aside.
- While you are making the cream sauce, boil your pasta according to the package instructions and drain when finished. Make sure that you add plenty of salt to your pasta water.
