MICROWAVE RICE PUDDING

Microwave Rice Pudding image

I LOVE rice pudding and this is one of my favorite! This is super easy and creamy. Guaranteed not to scorch or curdle! I always add some cinnamon and/or nutmeg or it's great without! Yummy warm or cold. I use leftover rice. This is one of my kids favorite desserts, will not disappoint

Provided by Chef Bonham

Categories     Dessert

Time 15m

Yield 6-8 serving(s)

Number Of Ingredients 8

1/2-3/4 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
3 cups milk
1 egg
2 -3 cups rice (I use Jasmine!)
2 tablespoons butter
1 teaspoon vanilla

Steps:

  • Make sure the rice is cooked ahead of time.
  • Whisk first 6 ingredients. And raisins if you want, we prefer without ;).
  • Put in microwave and cook 1 - 1 1/2 minutes.
  • Remove and whisk.
  • Put back in microwave for another 1 - 1 1/2 minutes.
  • Remove and whisk.
  • Continue above steps until desired thickness (don't get too thick, you want it a little less thick than desired since it will continue to thicken as it sits).
  • Add butter and vanilla once it's at desired thickness. You can omit butter to save on calories!
  • Add anything else you want (cinnamon, nutmeg, fresh berries if it's cold, etc).
  • Enjoy!

INSTANT POT CORN PUDDING

Instant Pot Corn Pudding image

This recipe is a nod to a well-loved American dish that's usually based off a box of corn muffin mix. In this version, the mix was replaced by cornmeal, 3 different cheeses and a blend of spices. The result is a custardy hybrid of savory pudding and cornbread.

Provided by Food Network Kitchen

Categories     side-dish

Time 2h

Yield 6 to 8 servings

Number Of Ingredients 12

4 tablespoons unsalted butter, well softened, plus more for the pan
4 ounces cream cheese, well softened
1 14.75-ounce can cream-style corn
2/3 cup yellow cornmeal
1/4 cup grated Parmesan cheese
1 large egg, lightly beaten
2 teaspoons sugar
1/2 teaspoon paprika
Kosher salt and freshly ground pepper
1/3 cup milk
1/3 cup grated pepper Jack cheese
1/3 cup grated sharp cheddar cheese

Steps:

  • Fold a long piece of foil in half lengthwise; continue to fold in half lengthwise until you end up with a long skinny strip of foil. (This will help lower the pan into the Instant Pot and then lift it out after cooking.) Butter the bottom and sides of a metal or silicone round pan that fits inside a 6- or 8-quart Instant Pot.
  • Combine the butter and cream cheese in a large bowl and whisk together until very smooth and creamy. (If lumpy, microwave in 10-second intervals, stirring until smooth.) Add the creamed corn and whisk again until thick. Add the cornmeal, parmesan, egg, sugar, paprika, 1/2 teaspoon salt and a few grinds of pepper and whisk to combine, switching to a rubber spatula when the mixture becomes too thick to whisk. Stir in the milk, pepper Jack and cheddar until combined.
  • Pour the batter into the pan and cover with foil; tightly crimp the edges. Pour 2 cups water into the Instant Pot and fit with a rack or trivet. Lay the foil strip under the pudding pan and use the ends to lower the pan into the pot (leave the foil strip in place). Put on the lid, making sure the steam valve is in the sealing position. Set to pressure-cook on high for 50 minutes. When the time is up, let the pressure release naturally, about 20 minutes.
  • Carefully remove the lid and blot any excess water from the top of the foil. Using the foil strip, carefully remove the pan from the Instant Pot and transfer to a rack. Uncover the pan and let the corn pudding cool slightly; serve warm.

MICROWAVE CREAMED CORN

MICROWAVE CREAMED CORN image

This microwave recipe was created due to my bad memory. Hubby requested creamed corn for supper for the next night, but (Oops!) I forgot to take it out of the freezer, so I improvised. It has all the same ingredients as my usual creamed corn, only it's cooked in the microwave. And I must say, it turned out great, and I didn't...

Provided by Tere Gill

Categories     Vegetables

Time 40m

Number Of Ingredients 7

6 or 7 large ears very fresh corn (3 cups kernels & corn "milk")
3 Tbsp water
4 Tbsp butter, divided 3 tbsp. & 1 tbsp.
2 to 2 1/2 Tbsp granulated sugar (depends on desired sweetness)
1/2 tsp salt
ground black pepper to taste (optional)
1 pinch smoked paprika for garnish (optional)

Steps:

  • 1. **NOTE: We grow our own corn, and every year, we cut the corn off the cobs, then measure 3 cups into a freezer bag, and freeze for later. If you do the same, you may either allow the corn to thaw in a bowl in the refrigerator for a day or two (bowl is recommended in case of leaks) or you may remove freezer bag, put corn in a microwave safe bowl, add the 3 tablespoons water, cover and nuke on 50% power until thawed, then continue with recipe.
  • 2. Remove husks and silk from corn; wash cobs.
  • 3. In large bowl, cut kernels from cob; use blunt edge of knife blade (or tool of your choice) to scrape milk from the cobs.
  • 4. Add 3 cups of corn and it's milk to a 2 qt. microwave-safe bowl/dish with lid.
  • 5. Stir into the corn, 3 tablespoons water, 3 tablespoons butter, sugar, salt and pepper (pepper optional.) Place lid on dish or cover with wax paper.
  • 6. Place covered dish in microwave, nuke at full power for 3 minutes; stir corn, replace lid/cover and rotate dish if microwave does not have a turntable. Nuke for additional 3 minutes.
  • 7. Stir corn, replace lid and continue cooking and stirring, at 1 to 2 minute intervals, until mixture thickens and resembles a pudding or very thick gravy.
  • 8. When desired consistency is achieved, remove from microwave; serve immediately, topped with a pat of butter and a sprinkle of paprika, if desired.
  • 9. Cover and refrigerate leftovers. Reheat in microwave with a little water added.
