Number Of Ingredients 9

1 pkg (10 oz.) frozen italian green beans
1 can(s) (6 1/2 or 7 oz.) tuna, drained
1 c celery, thinly sliced
1/2 c mayonnaise or salad dressing
1 Tbsp lemon juice
1 1/2 tsp soy sauce
dash(es) garlic powder
1 c chow mein noodles
lettuce cups

Steps:

  • 1. Cook Italian green beans according to package directions; drain and cool.
  • 2. Mix green beans, tuna, sliced celery, mayonnaise, lemon juice, soy sauce and garlic powder; chill.
  • 3. Before serving add chow mein noodles.
  • 4. Toss together slightly.
  • 5. Serve in lettuce cups.

The Best Tuna Salad image

While we love many kinds of tuna salad, this classic version tops them all. The crispy celery and red onion give add zest and crunch, while mayonnaise and touch of mustard marry it all together. The lemon juice is optional as it's not traditional, but we strongly recommend it to brighten up the flavors of the final dish.

Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole-grain mustard
Freshly ground black pepper
Freshly squeezed lemon juice (optional)

Steps:

  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion and parsley. Add the mayonnaise, mustard and season with pepper, to taste. Stir to combine. Add lemon juice, to taste, if using.

This recipe is tweaked from one I found. It is so good, my husband, who is a very picky eater, often requests this! Enjoy and pat yourself on the back for eating a healthy meal.

1 (5 ounce) can tuna in water, drained
⅓ cup dried cranberries
½ sweet apple, cut into 1/4-inch pieces
2 tablespoons light mayonnaise
1 green onion, chopped
sea salt to taste
ground black pepper to taste
4 cups chopped fresh spinach

Steps:

  • Mix tuna, cranberries, apple, mayonnaise, green onion, sea salt, and black pepper together in a bowl; refrigerate 1 hour.
  • Put 2 cups spinach on each of 2 plates. Top spinach with about half the tuna salad.

half of a 1 lb. box barilla piccolini pasta, mini wheels
extra virgin olive oil (EVOO)
1 (5 ounce) can bumble bee prime filet solid albacore tuna
1 1/2 teaspoons parsley flakes
dried onion flakes, to taste
sea salt, to taste
pepper, to taste
1 finely grated carrot
1/2 of a small tomatoes, finely chopped

Steps:

  • Add pasta, 1 tspn. parsley flakes, dried onion (vary amount depending on how much you like onions), sea salt and pepper to a pot of water large enough to cook and stir all ingredients. Bring to a boil and then cook 8 minutes (al dente') or 10 minutes (soft). Drain in colander and rinse with cold water to chill down the pasta. It is not necessary to remove onion/parsley bits. Return to pot after thoroughly drained. Drizzle with EVOO and stir to coat all pasta, then place pot in refrigerator until completely cooled. To quicken the process place in freezer but keep an eye on it to make sure it's not freezing.
  • Drain tuna, place in a small bowl and mash with a fork until it's of uniform consistency. Add a small amount of EVOO, remaining parsley flakes, minced onion to taste, salt & pepper to taste. Blend well. When pasta has completely cooled, add tuna mixture, carrot and tomato to pot and blend well. Taste and add EVOO/seasonings as desired.

This is an easy and tasty twist on tuna salad, using a vinaigrette (no mayo) and adding beets and chickpeas for a more substantial supper.

1/3 cup balsamic vinegar
1 tablespoon Dijon mustard
1/3 cup extra-virgin olive oil
2 cans (5 ounces each) light tuna packed in water, drained and flaked
Coarse salt and freshly ground black pepper
1 head romaine lettuce, trimmed and cut into 1-inch wedges
3 ounces baby spinach (3 cups)
1 package (about 8 ounces) cooked beets, quartered
1 can (15.5 ounces) chickpeas, drained and rinsed
Crusty bread, toasted (optional)

Steps:

  • In a medium bowl, whisk together vinegar, mustard, and oil. Reserve 1/4 cup dressing and stir remaining into tuna; season with salt and pepper.
  • Toss together romaine, spinach, beets, and chickpeas. Top with tuna and 1/4 cup dressing and serve with bread, if desired.
