NO PAN PEAR PIE

Categories     dessert

Time 1h55m

Yield 1 tart

Number Of Ingredients 18

2 1/2 cups flour
1/2 cup stone ground cornmeal
3 tablespoons sugar
1 teaspoon kosher salt
8 ounces (2 sticks) unsalted butter, divided, diced
3 tablespoons apple juice concentrate
2 tablespoons cold water
2 Anjou pears, peeled, cored, and thinly sliced
3 tablespoons balsamic vinegar
4 tablespoons sugar
1 pinch grated nutmeg
1/4 teaspoon ground cinnamon
2 tablespoons butter
1 cup blueberries
1 teaspoon flour
1 1/2 cups pound cake, cubed
1 egg beaten with 1 tablespoon water
1/2 teaspoon sugar

Steps:

  • Heat oven to 400 degrees F. In a food processor, combine flour, cornmeal, sugar, and salt. Pulse to combine. Place dry ingredients in a mixing bowl and put the bowl into the refrigerator. Remove 1/2 stick of butter from the refrigerator and allow it to come to room temperature. In a food processor, add the 1/2 stick of butter to the flour mixture. Pulse until the fat completely disappears. Add the remaining 1 1/2 sticks butter in separate batches. Pulse until flour mixture resembles the size of a pea.
  • Combine the apple juice concentrate and the cold water. Using a spray bottle, spritz the dough with the apple juice mixture while folding the mixture with a spatula. After about three tablespoons of the liquid, check the dough for consistency. It should hold together when compressed but remain relatively dry to the touch. If it does not bind, add a little more water. Remove from the processor and form the dough into a ball. Wrap the dough in wax paper or parchment paper and rest in refrigerator for 20 minutes.
  • Heat a cast iron skillet over medium heat. Add pears to the pan and toss for 2 minutes. Add the balsamic vinegar and continue to toss for 30 seconds. Add sugar and cook until the pears have softened. Add the nutmeg, cinnamon, and the butter and melt slowly. Fold in the blueberries. Remove from heat. Sprinkle on the flour and combine well. Allow to cool to room temperature.
  • Place dough on a floured piece of parchment and roll out to a 1/4-inch thick disk. Transfer to a baking sheet. Place cubed pound cake in the middle of the dough, leaving a 3-inch margin of crust on all sides. Spoon filling over the cake cubes and top the pears with 1 ounce of cubed butter. Lift excess crust onto filling and repeat in a clockwise fashion until a top lip has formed around the edge of the whole tart. Brush the tart with the egg wash and sprinkle the crust with the sugar.
  • Bake for 30-35 minutes, or until the filling begins to bubble and the crust is golden brown.
  • Remove from the sheet pan immediately and cool on pie rack.

CARAMELIZED PEAR TART WITH CORNMEAL CRUST

Caramelized Pear Tart with Cornmeal Crust image

Categories     Fruit     Dessert     Bake     Pear     Cornmeal     Fall     Gourmet     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Serves 6

Number Of Ingredients 11

For cornmeal dough
1 1/2 cups all-purpose flour
1/2 cup yellow cornmeal
1 tablespoon sugar
1/2 teaspoon salt
1 stick (1/2 cup) cold unsalted butter
4 to 5 tablespoons ice water
For caramelized pears
5 firm-ripe Anjou pears (about 2 1/2 pounds)
1/2 stick (1/4 cup) unsalted butter
1 cup sugar

Steps:

  • Make dough:
  • In a bowl whisk together flour, cornmeal, sugar, and salt. Cut butter into 1/2-inch cubes and add to flour mixture. With your fingertips or a pastry blender blend in butter until most of mixture resembles coarse meal with remainder in small (roughly pea-size) lumps. Drizzle 4 tablespoons ice water evenly over mixture and gently stir with a fork until incorporated. Test mixture by gently squeezing a small handful: When it has proper texture it should hold together without crumbling apart. If necessary, add enough remaining water, 1 teaspoon at a time, stirring until incorporated and testing, to give mixture proper texture. (If you overwork mixture or add too much water, pastry will be tough.)
  • Turn mixture out onto a work surface and divide into 4 portions. With heel of hand smear each portion once in a forward motion to help distribute fat. Gather dough together and form it, rotating it on work surface, into a disk. Chill dough, wrapped in plastic wrap, until firm, at least 1 hour, and up to 1 day.
  • Preheat oven to 400°F.
  • Make caramelized pears:
  • Peel pears and halve lengthwise. Cut each half into 3 wedges and core. In a 10-inch cast-iron skillet melt butter over moderate heat and stir in sugar. Cook mixture, stirring frequently, until sugar is dissolved and mixture is golden, about 6 minutes. Remove skillet from heat and let mixture stand until it begins to firm up, about 3 minutes. Arrange pears, rounded sides down, as close together as possible in 2 concentric circles in skillet.
  • On a lightly floured surface roll out dough into a 15-inch round (about 1/8 inch thick) and cut out an 11-inch round. Drape round over pears, tucking edge around pears, and with a fork prick dough in several places. Bake tart in middle of oven until pastry is golden and cooked through, 40 to 45 minutes. Cool tart in skillet on a rack 15 minutes.
  • Invert a rimmed serving plate slightly larger than skillet over skillet and, wearing oven mitts and keeping plate firmly pressed against skillet, invert tart onto plate. Arrange any loose pears on tart and spoon sauce from plate onto tart. Serve tart warm or at room temperature.

Cranberry Pear Tart With Gingerbread Crust image

This tart is work. But sometimes you need to work a little harder to reap in the benefits - and you'll love this recipe. Fortunately, most of the work can be done way ahead of time. Drop-dead-gorgeous. Drop-dead-delicious. Also, that 'something special' you're looking for for your next Thanksgiving/Holiday meal.

Number Of Ingredients 22

4 cups cranberry juice cocktail
1/2 cup sugar

  • Remove foil and pie weights and bake crust a further 10 minutes.
  • Let cool.
  • Transfer poached pears and half the cranberries with a slotted spoon to paper towels to drain, discard cinnamon, and reserve syrup with remaining cranberries.
  • In a small bowl, whisk together eggs, sugar, sour cream, milk, vanilla, zest and a pinch of salt.
  • Stir in the drained cranberries.
  • Preheat oven to 325°F.
  • Spoon half of custard into the crust.
  • Slice 4 of the pear halves crosswise on the diagonal, arrange decoratively over the custard alternately with the unsliced pear halves, and spoon remaining custard around pears.
  • Bake tart in middle of oven for 50-55 minutes or until custard is just set.
  • Remove rim of pan and let cool.
  • (may be made up to 8 hours in advance, cooled completely and chilled) Boil reserved syrup until reduced to 1 cup and is jelly-like in consistency and transfer cranberries with slotted spoon to a plate to cool.
  • Brush pears with some of cranberry glaze and arrange cranberries around edge of tart.
  • Serve warm or chilled.

PEAR TART WITH CORNMEAL CRUST

Pear Tart with Cornmeal Crust image

Make sure your pears are ripe when you make this. The flavor was really nice and the cornmeal crust different. An unusual dessert.

Provided by Jo Zimny

Categories     Fruit Desserts

Time 1h10m

Number Of Ingredients 18

CRUST:
1/2 c fine cornmeal
1/2 c whole wheat pastry flour
1/4 c slivered almonds
2 Tbsp date sugar
1/4 tsp sea salt
4 Tbsp cold butter, unsalted
1/4 c cold non fat milk
FILLING:
4 ripe organic pears
2 eggs
1/2 c honey
2 Tbsp low fat milk
1 Tbsp unsalted butter, melted
1 tsp vanilla extract
1/4 tsp ground nutmeg
3 Tbsp all purpose flour
1/4 c apricot jam, heated

Steps:

  • 1. FOR THE CRUST:
  • 2. In a food processor, combine the cornmeal, flour, date sugar and salt and process until fine crumbs form.
  • 3. Add butter and pulse until mixture resembles small peas. Add milk and process just until a dough ball forms.
  • 4. Press into a 9 inch tart pan with a removable bottom. Refrigerate until set.
  • 5. FOR THE FILLING:
  • 6. Preheat oven to 425'F
  • 7. Peel, halve and core the pears. Place pears cut side down on a cutting board. Using a sharp knife score the pears horizontally across each pear 1/8 inch deep and 1/4 inch apart. Do not cut right through the pear. Arrange 7 pear halves on the prepared crust with the narrow end pointing toward the center.
  • 8. Cut a circle from the remaining pear half and place in the pie's center (eat any left over pear)
  • 9. In a medium bowl, beat eggs until pale and thickened, about 6-8 minutes. Add the honey, milk, melted butter, vanilla, nutmeg and flour. Blend well.
  • 10. Pour the mixture over the pears. Bake 10-15 minutes, then reduce heat to 400'F and bake for another 20-25 minutes or until set and golden brown. Remove to a cooling rack.
  • 11. Heat the apricot jam up and melt, brush over the tart. Cool completely before removing and slicing.
  • 12. Enjoy!

Yield Makes 8 servings

Number Of Ingredients 5

4 large firm-ripe Bosc pears (2 pounds total)
1/2 stick (1/4 cup) unsalted butter
1/2 cup sugar
1/2 teaspoon cinnamon
Pastry dough

Steps:

  • Peel and halve pears, the core (preferably with a melon-ball cutter). Heat butter in a 9- to 10-inch well-seasoned cast-iron skillet over moderate heat until foam subsides, then stir in sugar (sugar will not be dissolved). Arrange pears, cut sides up, in skillet with wide parts at rim of skillet. Sprinkle pears with cinnamon and cook, undisturbed, until sugar turns a deep golden caramel. (This can take as little as 10 minutes or as much as 25, depending on pears, skillets, and stove.) Cool pears completely in skillet.
  • Put oven rack in middle position and preheat oven to 425°F.
  • Roll out dough on a lightly floured surface with a floured rolling pin into a 12-inch round and trim to a 9 1/2- to 10 1/2-inch round. Arrange pastry over caramelized pears, tucking edge around pears inside rim of skillet. Bake tart until pastry is golden brown, 30 to 35 minutes. Cook on rack 5 minutes.
  • Invert a rimmed serving plate (slightly larger than skillet) over skillet and, using pot holders to hold skillet and plate tightly together, invert tart onto plate. Serve tart warm or at room temperature.
