Steps:
- Heat 1 tablespoon butter in a large skillet over medium-high heat. Cook the sausage until golden, about 2 minutes. Season the chicken with salt and pepper, then toss with the flour in a bowl; add to the skillet and cook until browned but not cooked through, about 3 minutes.
- Add the onion, peppers, garlic, 1/2 teaspoon salt, and pepper to taste and cook 3 minutes. Add the wine, scraping up any browned bits; bring to a boil and cook until slightly reduced, about 1 minute. Add the broth and bring to a gentle simmer. Cover and cook until the sausage and chicken are cooked through, about 5 minutes.
- Transfer the chicken, sausage and vegetables to a platter with a slotted spoon. Increase the heat to high and stir the parsley and cherry peppers and their liquid into the skillet; boil until reduced by one-third, 2 to 3 minutes. Remove from the heat and stir in the remaining 1 tablespoon butter. Pour the sauce over the chicken mixture.

- Heat 1 tablespoon of peanut oil in a large heavy Dutch oven over medium heat. Season the sausage and chicken pieces with Cajun seasoning. Saute sausage until browned. Remove with slotted spoon, and set aside. Add 1 tablespoon peanut oil, and saute chicken pieces until lightly browned on all sides. Remove with a slotted spoon, and set aside.
- In the same pot, saute onion, bell pepper, celery and garlic until tender. Stir in crushed tomatoes, and season with red pepper, black pepper, salt, hot pepper sauce, Worcestershire sauce and file powder. Stir in chicken and sausage. Cook for 10 minutes, stirring occasionally.
- Stir in the rice and chicken broth. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes, or until liquid is absorbed.

ONE GREAT GUMBO WITH CHICKEN AND ANDOUILLE SAUSAGE

- Preheat a large heavy bottomed pot over medium high heat. Add 1 tablespoon oil, 1 turn of the pan, and 1 pound of the diced chicken. Season with salt and pepper and a sprinkle of poultry seasoning. Brown on all sides, about 2 or 3 minutes. Chop your veggies while it's working. Add half the andouille to the pan and cook another 1 to 2 minutes. Transfer chicken and sausage to a dish and repeat with remaining chicken and sausage, remembering to season the diced chicken as you go. Return pan to heat and add butter. When the butter melts, add chopped celery, peppers, onion and bay. Season with salt, pepper and hot sauce. Cook 3 to 5 minutes to begin to soften veggies. Add flour and cook for 2 minutes. Slowly stir in the broth and bring liquid up to a boil. Add okra, chicken and sausage to the boiling broth, then stir in your tomatoes and half of your fresh thyme. Bring back up to a bubble, reduce to simmer. Simmer for 5 minutes to combine flavors and adjust your seasonings. Serve gumbo with chopped thyme and scallions to garnish. Scoop cooked white rice into the center of bowlfuls of gumbo using an ice cream scoop. Enjoy!
ONE-PAN SAGE-AND-ONION CHICKEN AND SAUSAGE

- Peel and cut the onion into eighths, and put into a freezer bag with the oil, mustard, dried sage, a good grinding of pepper, and Worcestershire sauce. Cut lemon in half, squeeze juice into bag, and then cut the halves into eighths and add them. Squidge everything around to mix (the mustard needs help to combine) and then add the chicken pieces. Leave to marinade in the refrigerator overnight, or for up to 2 days.
- Preheat the oven to 425 degrees F. Allow the chicken to come to room temperature in its marinade.
- Arrange the chicken pieces in a roasting tin skin side up with the marinade, including all the bits and pieces, and tuck the sausages around them. Sprinkle the fresh sage leaves over the chicken and sausages and then put the tin into the oven to cook for 1 hour and 15 minutes. Turn the sausages over half way through to color them evenly.
- Arrange the chicken and sausages on a large platter.

We needed a recipe that fed a LOT of people, so we tried this one. We show up with it in hand, and our friend says, "Oh, this stuff! We loved it the last time you made it." I replied that it was a NEW recipe -- she proved me wrong by pulling out her personal cookbook and it was in there. Listed as coming from me, lol!

- 1. Cook rice according to package directions and set aside.
- 2. In skillet, brown sausage and remove with a slotted spoon. Saute celery and onions in sausage fat until onion is transparent, not brown. Drain.
- 3. Stir in mushrooms and chicken and set aside.
- 4. Melt butter in large saucepan, add flour and mix well.
- 5. Over medium heat, slowly add cream, broth and poultry seasoning. Cook, stirring constantly, until mixture is fairly thick. Pour into large bowl.
- 6. Add salt, white pepper, rice, sausage-onion mixture and chicken-mushroom mixture.
- 7. Spoon into 10" x 14" buttered casserole dish.
- 8. Mix together melted butter and crushed crackers and sprinkle over casserole.
- 9. Bake uncovered at 350* for 40 minutes or until bubbly around edges.
- 10. This dish makes enough for 12 - 14 people so it could easily be placed into 2 smaller baking dishes and one may be frozen. If frozen, thaw in refrigerator and make sure it is thawed in the middle before cooking. Add 5 minutes to cooking time because casserole will be cold.

- In a nonstick skillet brown the sausage (apprx 8 minutes).
- Then remove onto a plate.
- Then put in chicken and cook for 5 minutes, turning once.
- Put on plate with sausage.
- Heat oil in the skillet and add the garlic and rosemary and saute for 1 minute.
- Then add potatoes and water and cover and cook for 15 minutes.
- Then push potatoes over to the side of skillet and add back in the chicken and sausage.
- Add in the salt, pepper, wine, vinegar, and red peppers.
- Cover and cook an additional 35 minutes, when chicken registers 170*.
- Take chicken and sausage back out onto plate, and cover.
- Cover skillet back up and cook potatoes, until they are tender (apprx 8 minutes).
- Pour over chicken.

- Preheat oven to 200F (for bread slices).
- Mix flour and garlic powder in shallow dish. Add chicken one piece at a time, dredging to coat.
- Place oil in skillet and heat to medium temperature. Add chicken and cook about 10 minutes, turning once, or until brown on all sides.
- Reduce heat, cover and simmer about 10 minutes or until juices from chicken run clear. Remove chicken from skillet.
- Add butter to skillet; add mushrooms and saute over low heat about 3 minutes. Push mushrooms to side; add wine and stir to loosen brown bits. Add pepper.
- Return chicken to fry pan and simmer, uncovered, about 10 minutes or until sauce is slightly thickened.
- Place slices of bread on baking sheet in single layer. Place slice of cheese on each slice of bread. Place in 200F oven until cheese is melted.
- Place chicken and mushroom mixture on top of bread slices and serve.
