2 (14 oz. each) cans low-sodium black beans, (drained & rinsed)
3/4 cup salsa
4 garlic cloves (minced)
2 teaspoons fresh lime juice
1 teaspoon ground cumin
1 teaspoon water
1/8 teaspoon salt
1/4 cup minced cilantro

Steps:

  • In the bowl of a food processor, puree the black beans, salsa, garlic, lime juice, cumin, water and salt until smooth.
  • Add the cilantro and pulse until just combined.
  • Serve with tortilla chips or raw vegetables.

1 1/2 cups cooked cannellini beans (or about 1 can, rinsed)
1/4 cup packed fresh basil leaves
1 clove garlic
2 tablespoons olive oil
1 tablespoon fresh lemon juice
Salt and pepper to taste

Steps:

  • Combine the beans, basil, garlic, olive oil, and lemon juice in a food processor. Process until basil is finely chopped and the dip is almost smooth. Season with salt and pepper to taste. If you're using this as a dip, you can top it with toasted pine nuts or fresh basil leaves before serving.

400g can cannellini beans , rinsed and drained
400g can chickpeas , rinsed and drained
juice 2 lemons , zest 1
2 garlic cloves , crushed
2 tsp ground cumin
100ml Greek yogurt

Steps:

  • Put half the beans and chickpeas into a food processor with the lemon juice, garlic, cumin and yogurt, then whizz until smooth. Tip in the rest of the beans and pulse once to get a very chunky dip. Stir in the lemon zest and plenty of seasoning, then divide between 4 containers and store in the fridge.

0.5 (14 1/2 ounce) can tomatoes, petite diced, drained
1 lime, juice of, whole
fresh cilantro, handful

Steps:

  • Puree all of the ingredients in a food processor.
  • As a sandwich filler, serve on whole-wheat bread with fresh spinach and sliced tomato.
  • As a dip, serve with fresh veggies such as baby carrots, cukes and red bell pepper slices.

I haven't had this since I was a kid, but after reading so many other weird sandwich recipes, I figured there had to be someone out there who would enjoy this concotion. My mother used to make these sandwiches for us when we went to the State Fair, to Six Flags, or on a picnic.

2 slices bread (whatever floats your boat)
1 -2 tablespoon bean dip
1 slice bologna
2 -3 slices tomatoes
1 tablespoon yellow mustard

Steps:

  • Spread bean dip on one slice of bread.
  • Spread mustard on second slice of bread.
  • Place slice of bologna on top of mustard.
  • Place slices of tomato on bean dip.
  • Slap the two slices of bread together.
