One of the best recipes for peanut sauce I have tried! This goes great with grilled meats, especially on grilled chicken skewers, on noodles, even used as a salad dressing for spinach salad!. You won't be able to keep your spoon out of the jar, it is that good LOL! This peanut sauce is of a thinner consistency, if you want a thicker sauce, then add in more peanut butter and reduce the water just slightly. This can be made up to 3 days in advance. Kikkoman Thai-Style chili sauce can be found in any Asian section of major grocery stores, I purchase mine at Safeway stores in the Asian section, but you can use any brand of Thai chili sauce for this. You can use about 1/2 - 1 teaspoon (or to taste) red pepper flakes in place of the chili sauce. This recipe may be cut in half to make 2 cups.

3 -5 tablespoons vegetable oil (do not use olive oil for this)
5 scallions, chopped very fine
2 garlic cloves, finely minced
2 tablespoons fresh ginger, finely grated
2 cups water
1 cup peanut butter (can add in more to make a thicker sauce)
1/2 cup soy sauce
1/3 cup white vinegar
6 tablespoons packed brown sugar (1/4 cup plus 2 tablespoons)
1 -2 tablespoon thai-style chili sauce (I use Kikkoman chili sauce for this)

Steps:

  • In a saucepan heat oil over medium heat and sauté the scallions, garlic and ginger (about 1 minute).
  • Add/stir in the remaining ingredients and bring to a simmer, stirring.
  • Simmer the sauce until smooth, then cool to room temperature.
  • *NOTE* If you are refrigerating the sauce, and you find that the sauce is too thick after chilling, stir in a couple of tablespoons of hot water and stir until combined, adding more hot water until the sauce is of the right consistency.
  • This sauce is best served at room temperature.

Peanut Sauce:
1/2 cup peanut butter
1/2 cup water
2 tablespoons soy sauce
2 tablespoons sugar
Chinese Peanut Sauce Stir Fry
2 large chicken breasts, diced into cubes
2 tsp of olive oil
2 cloves garlic, minced
1/4 cup onion, diced
pinch of red pepper flakes
Cooked Spaghetti Noodles for serving
2 scallions, diced (0ptional)

Steps:

  • Peanut Sauce: Whisk the peanut butter, water, soy sauce, and sugar, in a small bowl until well combined. Set aside.
  • Peanut Sauce Stir Fry: In a nonstick skillet over medium heat add the olive oil. Add the onions and garlic to the pan and cook until heated through or soft; 2 to 3 minutes. Season with crushed red pepper flakes.
  • Add diced chicken to the pan and cook until the chicken is heated through. 4 to 6 minutes. The chicken is done when it is no longer pink in the middle. I usually take one chicken piece out and cut it to see if it is cooked.
  • Add the peanut sauce to the pan and continue cooking for another 2 to 3 minutes until everything is heated through.
  • If the sauce is too thick add small amounts of water until you like the consistency.
  • Serve with cooked noodles.
  • Serving Size: 3/4 cup of chicken with sauce

4 tablespoons sesame oil
1/2 cup green onion, chopped
1 cup finely shredded carrot
2 cups frozen stir fry vegetables
3 tablespoons minced fresh garlic
1/2 tablespoon ground ginger or 1 tablespoon fresh ginger, minced
1/4 cup honey
1/4 cup creamy peanut butter
1/4 cup soy sauce
3 tablespoons rice vinegar
1/2 tablespoon chili-garlic sauce

Steps:

  • Cook pasta in a large pot of salted water according to package directions.
  • Drain and return to pot.
  • Add 2 TBSP sesame oil and toss to coat.
  • Set aside.
  • Heat remaining 2 TBSP sesame oil in heavy pot over medium-high heat.
  • Add green onions, carrots, stir-fry veggies, garlic and ginger.
  • Saute until vegetables soften, about 4 minutes.

1 teaspoon minced garlic
1 tablespoon curry powder
1 1/2 pounds skinless, boneless chicken breasts, cut into strips
Vegetable oil, for grilling
Butter lettuce leaves
Fresh cilantro leaves
Peanut sauce, recipe follows
1 cup smooth peanut butter
1/4 cup low-sodium soy sauce
2 teaspoons red chili paste, such as sambal
2 tablespoons dark brown sugar
2 limes, juiced
1/2 cup hot water
1/4 cup chopped peanuts, for garnish

Steps:

  • Combine the yogurt, ginger, garlic, and curry powder in a shallow mixing bowl, stir to combine. Place the chicken strips in the yogurt marinade and gently toss until well coated. Cover and let the chicken marinate in the refrigerator for at up to 2 hours.
  • Thread the chicken pieces onto the soaked skewers working the skewer in and out of the meat, down the middle of the piece, so that it stays in place during grilling. Place a grill pan over medium heat and brush it with oil to prevent the meat from sticking. Grill the chicken satays for 3 to 5 minutes on each side, until nicely seared and cooked through. 1 clove garlic ((peeled and diced))
1 piece ginger, fresh ((thumb sized, peeled and grated))
1 onion ((peeled and diced))
2-3 cups vegetables, fresh or frozen ((choose your favourite: broccoli, carrots, cauliflower, etc.))
1 big handful snow peas ((or sugar snap peas))
6-8 baby corns
3.5 oz noodles ((I love glass noodles as they're really quick to cook and taste great!))
1 handful peanuts
2 tbsp peanut butter ((crunchy would be nice))
2 tbsp soy sauce ((light or dark are both great))
2 tbsp sweet chili sauce
¼ cup water
1 tbsp maple syrup
1 stick lemongrass

Steps:

  • Get all ingredients ready and in one place. Thaw the frozen veggies (with a microwave or by taking them out of the freezer early enough).
  • Chop the snow peas, baby corn and onion. Dice the garlic and ginger.
  • Cook the noodles so you have them at hand when the stir-fry comes together. When ready, drain and rinse under cold water (they'll stick together less).
  • Grab a large bowl and chuck in the peanut butter, soy sauce, sweet chilli sauce, water, syrup. Mix well with a spoon 'til it's a nice and creamy sauce. Optionally, throw in the lemon grass.
  • In a wok or large pan heat the oil until it starts smoking.
  • Add the garlic, ginger, onion, sugar snaps and baby corn.
  • Around 40 seconds later add the thawed veggies. (If you just use fresh veg, throw in everything at once).
  • Stir it well for about 4-5 minutes.
  • Reduce the heat a little and add the sauce and noodles. It'll quickly begin to boil.
  • Make sure it's all nice and creamy. Add a little more water, if not!
  • Add some peanuts.

1 small onion, finely chopped

1/2 teaspoon curry powder

2 teaspoons white wine vinegar
2 tablespoons dark brown sugar, packed
1/4 cup coarsely chopped roasted unsalted peanuts
1/4 cup boiling water

Steps:

  • Heat oil over medium heat in a medium skillet. Add onions and garlic. Cook until translucent, add chili paste, curry powder and salt. Stir to combine. Stir in peanut butter, coconut milk, vinegar, brown sugar and 2 tablespoons of warm water. Stir well and bring to a simmer. Let simmer for 1 to 2 minutes, stirring until the sauce thickens and the peanut butter dissolves.
  • Add 2 tablespoons of peanuts to the sauce and then transfer it to a blender. Blend until smooth, adding 2 to 4 tablespoons of boiling water to help sauce emulsify. Transfer it to a bowl. Let sauce cool to room temperature. Before serving, garnish with the remaining peanuts. The sauce may be made a day ahead and refrigerated in an airtight container. Bring back to room temperature for 1 hour before serving.

1 package brown rice noodles (pre-cooked)
1/2 onion (thinly sliced)
desired vegetables (broccoli - cut into small florets, sliced mushrooms, sliced bell pepper, etc.)
sesame oil (or canola oil)
peanuts (optional)
3 tablespoons peanut butter
3 tablespoons soy sauce
3 tablespoons rice vinegar
1 tablespoon honey
2 teaspoons minced/grated ginger

Steps:

  • Combine peanut butter, soy sauce, rice vinegar, honey, and ginger in a small bowl or jar. (If the peanut butter is thick, microwave for 30 or more seconds until drizzly). Whisk until smooth.
  • In a large skillet or wok, drizzle sesame (or canola) oil and cook shrimp over medium-high heat for 3-4 minutes, until no longer translucent. Remove and set aside.
  • Add more oil to the pan and add chopped vegetables. Cook, stirring occasionally, about 5-7 minutes until just tender.
  • Turn the heat down to medium. Add shrimp and pre-cooked brown rice noodles to the pan, along with the sauce. Stir well for 1-2 minutes, until sauce is evenly incorporated. Add peanuts if desired and serve.

This is a quick and delicious thai peanut sauce that can be used for dipping satay, fresh spring rolls, deep fried tofu, or really anything. I originally found it on the website SheSimmers.com and then adapted it to my own taste and the ingredients I had on hand. You can make it creamy or chunky depending on your preference, I like to add some chopped up peanuts to mine for that extra crunch. Either way, the flavor is perfect and to me it tastes just like the peanut sauce you would get at a thai restaurant. You could also use it on rice or noodles or as a salad dressing. Yum!

1 (14 ounce) can light coconut milk (you can also use regular coconut milk to make it even more decadent)
1/4 cup Thai red curry paste

2 tablespoons white vinegar (cider or rice vinegar work well)
