Categories     Salad     100+ Pasta Salad Recipes     Macaroni Salad Recipes

Time 4h33m

Yield 12

Number Of Ingredients 16

1 cup mayonnaise
¼ cup white vinegar
2 tablespoons Dijon mustard
2 teaspoons kosher salt, or more to taste
½ teaspoon ground black pepper
⅛ teaspoon cayenne pepper
1 tablespoon white sugar, or more to taste
1 cup finely diced celery
¾ cup diced red bell pepper
½ cup grated carrot
½ cup chopped green onions, white and light parts
¼ cup diced jalapeno pepper
¼ cup diced poblano pepper
1 (16 ounce) package uncooked elbow macaroni
1 tablespoon mayonnaise
1 tablespoon water

Steps:

  • Whisk 1 cup mayonnaise, vinegar, Dijon mustard, salt, black pepper, and cayenne pepper together in a bowl until well blended; whisk in sugar. Stir in celery, red bell pepper, carrot, onions, and jalapeno and poblano peppers. Refrigerate until macaroni is ready to dress.
  • Bring a large pot of well salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through, 8 to 10 minutes. Drain but do not rinse. Allow macaroni to drain in a colander about 5 minutes, shaking out moisture from time to time. Pour macaroni into large bowl; toss to separate and cool to room temperature. Macaroni should be sticky.
  • Pour dressing over macaroni and stir until dressing is evenly distributed. Cover with plastic wrap. Refrigerate at least 4 hours or, ideally, overnight to allow dressing to absorb into the macaroni.
  • Stir salad before serving. Mix 1 tablespoon mayonnaise and 1 tablespoon water into salad for fresher look.

CREOLE SHRIMP AND SWEET PEA PASTA SALAD

Creole Shrimp and Sweet Pea Pasta Salad image

This salad is for the adventurous only! It is mindboggling good and spicy with a flare that will tantalize your taste buds! This is the best pasta salad I have ever eaten! The others got so humdrum and boring. :) Not so... this one!!! Enjoy! :)

Provided by HotPepperRosemaryJe

Categories     Creole

Time 32m

Yield 6-8 serving(s)

Number Of Ingredients 18

12 ounces bow tie pasta
12 ounces cooked shrimp
1 small cucumber, chopped
1 medium tomatoes, chopped
2 cups fresh peas, steamed
2 cups mayonnaise
2 tablespoons catsup
2 tablespoons Dijon mustard
1 tablespoon fresh parsley, chopped
1 tablespoon cayenne pepper
1 tablespoon lemon juice, freshly squeezed
2 teaspoons horseradish cream
2 garlic cloves, crushed
1 teaspoon Worcestershire sauce
1 teaspoon celery leaves, chopped
1 teaspoon paprika
1 teaspoon sea salt
1 teaspoon white pepper

Steps:

  • Cook pasta according to instrucions on box, rinse well and cool.
  • Combine cooled pasta, shrimp ( I suggest medium-sized chilled shrimp), cucumber, tomato, and fresh (not canned) or frozen peas.
  • Combine all ingredients following the 2 cups fresh peas and mix well.
  • Toss this mixture thoroughly with the pasta, shrimp, cukes, tomatoes, and peas.
  • If you're worried about the intensity of the cayenne pepper, add it last and add a little at a time. It tends to be hot! But oh so good!
  • Chill well for at least 5 hours so that the spices can mingle .
  • Then serve on a bed of Romaine.
