SLOW-COOKER TEXAS CHILI

2 1/2 pounds beef chuck, cut into 2-inch cubes
2 tablespoons packed light brown sugar
Kosher salt
2 tablespoons vegetable oil
1 small onion, finely chopped
5 cloves garlic, smashed
2 4.5-ounce cans chopped green chiles, drained
1 tablespoon ground cumin
3/4 cup chili powder
1 14-ounce can diced tomatoes with chiles
1 to 2 tablespoons green hot sauce
Sliced scallions, fresh cilantro and/or sour cream, for topping
Tortilla chips, for serving (optional)

Steps:

  • Toss the beef with 1 tablespoon each brown sugar and salt in a large bowl. Heat the vegetable oil in a large skillet over medium-high heat. Cook the beef in batches until browned on all sides, 4 to 5 minutes (do not crowd the pan). Transfer to a 5-to-6-quart slow cooker.
  • Reduce the heat to medium, add the onion to the skillet and cook until soft, about 5 minutes. Stir in the garlic, chiles, cumin and chili powder and cook 3 minutes. Add 1 1/2 cups water and the tomatoes and simmer, scraping up the browned bits from the bottom, about 3 minutes. Transfer to the slow cooker, cover and cook on low, 7 hours.
  • Add the remaining 1 tablespoon brown sugar and the hot sauce to the chili. Serve with scallions, cilantro and/or sour cream for topping, and chips, if desired. (Reserve 3 to 4 cups for Chili-Corn Casserole.).
  • Use the leftover chili to make Chili-Corn Casserole.

1 tbsp rapeseed oil
1 large onion, finely chopped
2 garlic cloves, crushed
2 tsp ground cumin
1 ½ tsp sweet smoked paprika
1 tsp mild chilli powder (optional)
2 carrots , diced
2 sticks celery, diced
1 courgette, diced
1 red pepper, diced
400g lean beef mince
3 x 400g cans chopped tomatoes
1 beef stock cube
1 tbsp tomato purée
1 x 400g can green lentils, drained and rinsed
1 x 400g can flageolet beans, drained and rinsed
a selection of the following to serve: rice or tacos, soured cream, grated cheese and sliced avocado

Steps:

  • Heat the oil in a heavy-based pan. Cook the onion for 10 mins until softened and starting to caramelise. Add the garlic and spices and cook for a further 1-2 mins.
  • Transfer to a slow cooker, along with the diced vegetables, mince, chopped tomatoes, stock cube and tomato purée. Stir well. Cook on low for 6-7 hours. About half an hour before serving, take off the lid and use a stick blender to blend in the vegetables (if your children aren't keen to eat veg) or leave chunky. Stir through the lentils and flageolet beans. Replace the lid and heat through for a further half hour. Stir and serve with rice or tacos, soured cream, grated cheese and sliced avocado.

1 green bell pepper, chopped
1 clove garlic, minced
2 tablespoons olive oil
2 pounds ground beef
4 (11.5 ounce) cans tomato-vegetable juice cocktail
1 (10.75 ounce) can condensed tomato soup
1 (16 ounce) can chili beans, drained
⅛ teaspoon cayenne pepper
3 tablespoons chili powder
1 tablespoon soy sauce
1 cup water

Steps:

  • In a large skillet over medium heat, saute the onion, green bell pepper and garlic in the oil for 5 minutes, or until tender. Stir in the beef and cook until brown. Transfer these ingredients to a slow cooker.
  • Then, to the slow cooker, add tomato-vegetable juice, soup, chili beans, cayenne pepper, chili powder, soy sauce and water.
