BAKED GNOCCHI WITH SAGE AND CHEESE
Soft pillowy nuggets of baked gnocchi are the ultimate comfort food.

- Preheat the oven to 350 degrees F (175 degrees C).
- Fill a large saucepan with water. Add potatoes and 1 teaspoon salt; bring to a boil. Continue to boil until potatoes are very soft, about 15 minutes. Drain and run through a food mill or a ricer for a nice, smooth consistency. Place potatoes in a bowl and refrigerate until they are cool, 15 to 20 minutes; this will help keep them fluffy.
- Dust 2 sheet pans with flour and set aside.
- Mix cooled potatoes and 1 1/2 cups flour together on a clean work surface. Knead until dough is soft and smooth, 4 to 5 minutes, adding only enough flour so dough comes together and is not tacky.
- Cut dough into 4 equal parts. Roll 1/4 of the dough into a 3/4-inch log. Cut the log into 3/4-inch pieces. Roll the pieces over a gnocchi board or the back of a fork to create ridges and place onto a floured sheet pan in a single layer. Repeat with the rest of the dough. Let rolled gnocchi dry for 1 hour before cooking.
- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes. Drain and set aside.
- Melt butter for cheese sauce in a medium saucepan over medium heat. Whisk in flour until golden brown, about 3 minutes. Add chicken stock and continue to whisk until it thickens, about 3 minutes. Add Fontina cheese and Parmesan cheese; stir using a spoon until melted. Stir in sage and nutmeg. Stir in cooked gnocchi and transfer to a casserole or baking dish.
- Bake in the preheated oven until top is golden brown and bubbly, 15 to 20 minutes.

BAKED SEMOLINA GNOCCHI WITH SAGE

- 1. In a small skillet, melt the stick of butter over moderate heat. Add the chopped sage and cook just until fragrant, about 30 seconds; let cool. In a large saucepan, bring the milk to a simmer. Slowly add the semolina flour in a thin stream, whisking constantly. Cook over moderate heat, stirring with a wooden spoon, until very thick, about 3 minutes. Beat in the eggs and cook over low heat for 2 minutes longer, stirring constantly. Remove from the heat and stir in the salt, sage butter and 1 cup of the Parmesan cheese. Continue stirring until the dough is smooth and glossy. Pour the dough into a 9-by-13-inch baking dish and refrigerate until cool and firm to the touch. Preheat the oven to 400°. Cut the gnocchi dough into 12 squares, then cut the squares in half on the diagonal to form 24 triangles. Using a spatula, transfer the triangles to a large buttered baking dish. Sprinkle with the remaining 3 tablespoons of cheese and dot with the remaining 1 tablespoon of butter. Bake for about 25 minutes, or until the gnocchi are golden. Preheat the broiler and broil 8 inches from the heat for 2 minutes, or until golden brown. Let the gnocchi stand for 10 minutes. Sprinkle with pepper and serve. Make Ahead The recipe can be prepared through Step 3 and refrigerated for up to 1 day.
PAN-SEARED GNOCCHI WITH BROWNED BUTTER AND SAGE

- Cook the Gnocchi:.
- Bring a large pot of well-salted water to a boil over high heat. Add about one-third of the gnocchi. To get the gnocchi into the boiling water, fold the parchment ends to form a chute and gently shake the gnocchi out, taking care not to clump them together as you drop them inches Give one gentle stir, wait until the gnocchi all float to the surface of the water, and then cook them for 1 minute.
- Meanwhile, heat 1 Tbs. of the butter in a 12-inch nonstick skillet over medium-high heat. When the butter is completely melted, use a large slotted spoon or a strainer to transfer the cooked gnocchi from the boiling water to the skillet, shaking off as much water as possible first. The gnocchi should form a single layer in the skillet. (If the butter is melted before the gnocchi cook, take it off the heat; if the gnocchi cook before the butter is fully melted, it's fine to add the gnocchi.) Sprinkle with 1/4 teaspoons salt and cook, shaking the pan occasionally to turn the gnocchi, until they're lightly browned, about 2 minutes. Transfer to a large plate. Repeat with the remaining gnocchi.
- Make the Sauce:.
- Wipe the skillet clean if necessary. Put it over medium-high heat and add the butter. When the butter has almost completely melted, stir in the sage leaves. Cook, stirring occasionally, until the butter turns a light brown color (be careful not to let it burn) and the sage leaves darken and crisp up slightly, 2 to 3 minutes. Remove from the heat.
- Add the reserved gnocchi and the lemon zest to the pan and toss to coat well. Season to taste with salt and pepper. Serve immediately.

- Combine the milk and bay leaf in a large, heavy-based saucepan. Bring to the boil then, stirring constantly with a wooden spoon to prevent lumps from forming, add the semolina in a slow, steady stream. Stirring vigorously, cook over medium-low heat for 6-7 minutes, or until the mixture is very thick. Remove from the heat and cool slightly, remove the bay leaf then stir in the nutmeg, egg yolks, 25 g (1 oz) of the butter and half the parmesan cheese. Season to taste with sea salt and freshly ground black pepper. Line a baking tray with baking paper.
- While still hot, pour the mixture out onto the prepared tray and spread to a thickness of about 1 cm (1/2 inch) then stand until cooled to room temperature. Preheat the oven to 180°C (350°F/Gas 4) .
- Using a 4 cm (1 1/2 inch) cutter, cut rounds out of the firm semolina. Brush the base and sides of an ovenproof baking dish (measuring about 17 x 27 cm/6 1/2 x 11 inches) with the extra butter. Scatter the semolina off-cuts evenly over the base of the dish then scatter over half the remaining parmesan cheese. Lay the semolina rounds on top, overlapping them neatly to cover the surface of the dish. Dot the remaining butter on top and sprinkle over the remaining parmesan cheese. Bake for 30 minutes, or until golden. Serve with the rocket salad.
