2 veal cutlets
1 garlic clove, diced
4 slices aged swiss cheese
1/4 lb prosciutto
1/2 cup red wine
1 -2 lemon, juice of
1 teaspoon olive oil
1 tablespoon butter

Steps:

  • Tenderize Veal.
  • Lay 1 cutlet down place 2 pieces of cheese next to each other on cutlet.
  • Top with prosciutto.
  • Place other 2 pieces of cheese.
  • Place other cutlet on top.
  • Cut in half between cheese slices.
  • Put toothpicks through the ends to hold it together.
  • Heat oil in a skillet over medium high heat.
  • When hot place garlic in pan and sauté.
  • Then add the wine and lemon juice.
  • Bring the heat back up till wine is boiling.
  • Cook veal on each side for about 2 minutes.
  • When veal is done put butter in sauce and let sauce thicken a little.
  • Spoon sauce over cutlets on plate.

This is so good! I love ordering veal dishes at French restaraunts and decided to try making this myself. I was surprised that it isn't that hard. I found this recipe in a 1973 Betty Crocker cookbook. Prep and cook times approximate. Note: If you don't have a wooden mallet, the edge of a plate can be used to pound meat.

4 boneless veal cutlets (about 4 ounces each) or 1 lb veal round steak, 1/2 inch thick
4 slices ham, thin,boiled or cooked
4 slices swiss cheese, thin
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon allspice
1 egg, slightly beaten
1/2 cup dry breadcrumbs
3 tablespoons shortening
2 tablespoons water

Steps:

  • If using veal round steak, cut into 4 serving pieces.
  • Pound meat until 1/4 inch thick.
  • Place a slice of ham and cheese on each piece of meat.
  • Roll up carefully, beginning at narrow end; secure rolls with wooden picks.
  • Mix flour, salt, pepper and allspice; coat rolls with flour mixture.
  • Dip rolls into egg, then roll in bread crumbs.
  • Melt shortening in large skillet; brown rolls, about 5 minutes.
  • Reduce heat and add water.
  • Cover; simmer 45 minutes or until tender.
  • Remove cover last 2 or 3 minutes to crisp rolls slightly.

2 pieces Veal Scallopini
pinch Black Pepper
pinch Salt
2 Cheese slices (cheddar or gruyere preferably)
2 Ham slices (or prosciutto slice)
1.5 ounces All-purpose Flour
1 small Egg
2 ounces Bread Crumbs
2 Tablespoons Oil
2 Toothpicks

Steps:

  • Flatten your veal filet to stretch out. Take care not to create holes into the meat. Season with salt and pepper on both sides.
  • Take a slice of ham and a slice of cheese, place the cheese on the ham and close the ham in such a way so that the cheese is inside and doesn't cross the ham border.
  • Then take the wrapped ham/cheese slices and place on a veal filet. Fold meat over ham and cheese to create a pocket, seal with a toothpick on one side.
  • Prepare 3 plates, one with all purpose flour, another with the egg and the last one with the breadcrumbs.
  • Drag the veal cordon bleu pocket first through the flour, then through the egg and coat at last with the bread crumbs.
  • Heat up a pan with the cooking oil. Shallow fry the cordon bleu golden on both sides over high to medium heat.
  • Remove and discard toothpick before serving. Serve hot with a side.

This classic French chicken dish, adapted from Jane and Michael Stern's book "American Gourmet," more than lives up to its name ("cordon bleu" means "blue ribbon"). It's also far easier to make than you may think. A chicken breast is pounded thin (we've been known to cheat by using pretrimmed cutlets), then wrapped around a slice of smoked ham and a bit of Swiss cheese, and secured with toothpicks. The roulade is coated in egg and bread crumbs, then pan-fried until golden brown, and a simple white wine cream sauce finishes it off.

4 large boneless and skinless chicken breast halves (about 1 1/2 pounds)
4 thin slices smoked ham
2 ounces Swiss cheese, cut into 4 equal "fingers"
1/4 cup flour

3/4 cup fresh bread crumbs
1/4 cup unsalted butter
3/4 cup plus 2 tablespoons chicken stock

  • Lay the chicken breasts between pieces of wax paper and use a mallet to pound them to 1/4 inch to 1/8 inch thick. Take care not to pound holes in the chicken. Layer each breast with the ham, then place a finger of cheese in the center. Roll up to completely enclose the ham and cheese and secure with toothpicks.

Add the wine (or heavy cream or additional stock), lower the heat and simmer, uncovered, until the consistency of gravy, about 45 seconds. Pour over the chicken breasts and serve.

1 (1/2-lb) piece Gruyère
4 (1/8-inch-thick) slices baked ham such as Virginia
1 cup plain dry bread crumbs
2 teaspoons salt
3/4 teaspoon black pepper
3/4 cup all-purpose flour
2 large eggs
2 tablespoons unsalted butter
2 tablespoons olive oil
Garnish: lemon wedges; fresh parsley sprigs

a meat pounder; a cheese plane

Steps:

  • If cutlets are thicker than 1/8 inch, pound them between sheets of plastic wrap with flat side of meat pounder. Using cheese plane, shave enough cheese to make a double layer for each of 4 cutlets.
  • Pat dry 2 cutlets of the same shape and arrange 1 cutlet on a work surface. Put 1 slice of ham on cutlet, trimming ham to leave a 1/4-inch border of veal around the ham, then arrange a double layer of cheese on ham and top with second cutlet. Lightly pound 1/4-inch border around cutlets' outer edges to seal veal sandwich. Make 3 more sandwiches in same manner.
  • Line a baking sheet with wax paper. Stir together bread crumbs, 1 teaspoon salt, and 1/4 teaspoon pepper in a large shallow baking dish. Stir together flour, 3/4 teaspoon salt, and 1/4 teaspoon pepper in another large baking dish. Whisk together eggs, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper in a third large baking dish.
  • Dredge 1 veal sandwich in flour, knocking off excess, then dip in egg to coat, letting excess drip off, and dredge in bread crumbs, patting to help them adhere. Transfer coated sandwich to a rack set on a baking sheet. Dredge and coat remaining sandwiches in same manner. Chill, uncovered, 1 hour, and let stand at room temperature 30 minutes before cooking.
  • Heat 1 tablespoon butter and 1 tablespoon oil in a 12-inch heavy skillet over moderately high heat until foam subsides. Add 2 veal sandwiches, then reduce heat to moderate and cook, turning over once, until golden, about 4 minutes total. Transfer to plates and wipe out skillet with paper towels. Cook remaining sandwiches in remaining butter and oil in same manner.

8 thin slices Black Forest ham (approximately 4 ounces)

Steps:

  • In a small bowl, mix together the mustard and mascarpone. Set aside.
  • Preheat the broiler to high.
  • Heat a large ovenproof skillet over medium-high heat. Add the oil and continue to heat for an additional 1 minute. Sprinkle the chicken breasts evenly with 1 teaspoon salt. Place the chicken in the skillet and cook on the first side until golden brown, about 4 minutes. Flip the chicken and continue to cook until just cooked through, about 2 minutes more. Remove from the heat.

2 cups small-cubed ham
1 1/4 cups grated Swiss cheese
1 1/4 cups grated Monterey Jack cheese
4 cooked boneless, skinless chicken breasts, cut into cubes
1/2 cup panko breadcrumbs
1/4 cup all-purpose flour
2 cups milk
1 cup chicken broth
2 tablespoons Dijon mustard
1/2 teaspoon cayenne
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon butter.
  • Put the ham on a paper towel-lined plate and microwave for about 3 minutes to reduce the moisture content. Mix together the Swiss and Monterey Jack cheese in a bowl.
  • Put about a third of chicken in a layer in the bottom of the prepared baking dish. Top with half the ham. Sprinkle over 1/4 cup of the mixed cheese. Repeat 1 more time, then finish with a layer of chicken.
  • Melt the remaining 5 tablespoons butter in a skillet over medium heat. Put the panko in a bowl, pour in half of the melted butter, mix well and set aside.
  • Add the flour to the remaining butter in the skillet and cook for 2 to 3 minutes, whisking out any lumps. Whisk in the milk, broth, Dijon and cayenne and let it cook until it begins to thicken. Remove from the heat and stir in 1 cup of the cheese until melted. Season with salt and pepper.
  • Pour the sauce over the casserole. Sprinkle over the remaining 1 cup cheese, then the panko mix. Bake until the top is browned and the casserole is bubbling, 25 to 30 minutes.

4 thin slices prosciutto di Parma
1/2 pound Gruyere, grated
1/4 cup all-purpose flour

4 sprigs fresh thyme, leaves only
1 clove garlic, peeled and finely minced
2 tablespoons unsalted butter, melted
2 eggs
Extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees F.
  • Lay the chicken breast between 2 pieces of plastic wrap. Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness. Remove the top sheet of plastic and lay 2 slices of prosciutto neatly over the top to cover the breast and sprinkle a quarter of the cheese over the prosciutto. Tuck in the sides of the breast and roll up tight like a jellyroll inside the plastic wrap. Squeeze the log gently to seal and twist both ends tight to form a nice log. Repeat with remaining chicken.
  • Season the flour with salt and pepper. Mix the bread crumbs with thyme, garlic and kosher salt, pepper, and melted butter. The butter will help the crust brown. Beat together the eggs and season so the flour, the eggs and the crumbs are all seasoned.
  • Remove the plastic wrap. Lightly dust the chicken with flour, dip in the egg mixture and gently coat in the bread crumbs. Lightly coat a baking pan with olive oil and carefully transfer the roulades onto it. Bake for 20 to 25 minutes until browned and cooked through.
  • Cut into pinwheels and serve on top of Brussels Sprout Hash with Chicken Jus and Cranberry Chutney, if desired.

1/4 cup flour, in bowl

  • Take chicken and place on a large cutting board. Put a piece of wax paper (or even saran wrap) over the chicken breast.
  • Use a heavy pan, or mallet, and smash the chicken breast till it spreads out to about the size of 2 chicken breasts.
  • Then place 2 pieces of ham on the chicken breast and then 2 pieces of cheese.
  • Take chicken and roll up into a log. If it isn't holding together, place a couple toothpicks into the chicken to hold in place.

Easy recipe that tastes like you cooked all day. Chicken breasts are wrapped around ham and mozzarella cheese for a change in this version of the classic baked dish.

6 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
6 string cheese sticks
6 slices ham
½ cup butter, melted
1 cup seasoned dry bread crumbs
toothpicks

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Lay out the pounded chicken breasts on a clean surface. Place a slice of ham on each piece, then one stick of cheese. Roll the chicken up around the cheese and ham, and secure with toothpicks. Dip each roll in melted butter, then roll in bread crumbs. Place in a shallow baking dish.
  • Bake for 40 minutes in the preheated oven, or until chicken is browned and juices run clear.

This entree is easy and delicious! It's one of my husband's favorites! Try to use the largest chicken breasts you can find so you'll be able to roll them easier.

4 skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
½ cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
  • Pound chicken breasts to 1/4 inch thickness.
  • Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
  • Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.
