3 teaspoons corn starch
1 teaspoon salt
1 tablespoon rice wine
½ teaspoon white pepper
1 tablespoon soy sauce
1 stalk scallion, shredded
2 slices ginger
4 chicken thighs, chopped into bite-sized pieces
vegetable oil, as needed for frying
2 tablespoons szechuan peppercorn
5 red chilis, chopped
50 dried red chilis, whole
4 slices ginger
1 stalk scallion, chopped
⅓ cup peanuts
½ teaspoon sugar
½ tablespoon rice wine
1 tablespoon sesame oil
scallion, chopped for garnish

Steps:

  • Combine marinade ingredients in a bowl, add the chopped chicken. Marinate for 10 minutes.
  • In about 1 ½ inch (4 cm) of oil, fry the chicken until browned and crispy. Remove and set aside.
  • Heat oil in a wok or a large pan. Add the Szechuan peppercorn and dried red chilies. Fry until fragrant.
  • Add the rest of the dried red chilies, ginger, scallion, and peanuts. Fry for a minute.
  • Add the fried chicken pieces, sugar, rice wine and sesame oil. Toss to coat.
  • Garnish with chopped scallions.

200 g chicken breast (, small chicken chest )
1 tbsp. oyster sauce
1 tbsp. light soy sauce
1/8 tsp. salt
2 tsp. cornstarch
1/8 tsp. baking soda
1 thumb ginger (, shredded )
1 tbsp. freshly ground black pepper (, divided half in marinating half for garnishing.)
lettuce leaves
1/2 cup shredded cucumber
1/2 cup shredded carrot

Steps:

  • Cut the chicken into large pieces with 0.3cm thickness. Add all the marinating ingredients and mix well.Set aside for 20 minutes.
  • Heat some oil in a pan and heat the pan. Place the chicken meat one by one. Let them stay for a while until one side is browned(takes 2 mins), turn over and fry the other side (1 mins). Spread more extra ground black pepper. If you want other flavors, add cumin or chili flakes.
  • Serve with vegetable and lettuce.

It isn't as hot as you would expect from "Szechuan"--if you want it spicy hot--add more crushed red chilies.

1 lb skinless chicken breast half
2 tablespoons soy sauce
2 tablespoons dry sherry
2 teaspoons cornstarch
2 teaspoons grated peeled fresh ginger
1/4 teaspoon sugar

2 tablespoons vegetable oil
6 green onions, cut into 2-inch pieces
1 green pepper, cut into 1/2-inch pieces
1 red pepper, cut into 1/2-inch pieces
1/4 cup dry-roasted unsalted peanuts

Steps:

  • With knife held in slanting position, almost parallel to cutting surface, cut each chicken breast half crosswise into 1/2-inch thick slices.
  • In medium bowl, combine soy sauce, sherry, cornstarch, ginger, sugar, and crushed red pepper; add chicken, tossing to coat.
  • In wok or large non-stick skillet, heat 1 tablespoon oil over medium-high heat until very hot.
  • Add green onions and red and green peppers and cook, stirring frequently, until vegetables are tender-crisp, 2 to 3 minutes.
  • With slotted spoon transfer vegetables to bowl.
  • Increase heat to high and add remaining 1 tablespoon oil to skillet; heat until very hot.
  • Add chicken mixture and stir-fry until chicken looses its pink color throughout, 2 to 3 minutes. (I suggest cutting one of the larger pieces to make sure it is cooked through.).
  • Return vegetables to pan; heat through.
  • To serve, transfer chicken and vegetables to warm platter and sprinkle with peanuts.

500g skinless, boneless chicken thighs
1 tsp flaky sea salt
1 tsp Sichuan peppercorns (use normal peppercorns if you can't find these)
1 tbsp cornflour
1 tsp Chinese five-spice powder
1 tsp sesame seeds
1 tbsp olive oil
1 tbsp soy sauce
1 tbsp honey
250g Asian greens such as pak choi
handful chopped coriander , sliced spring onions and cooked rice (to serve)

Steps:

  • Cut the chicken thighs into strips. Crush the salt with the peppercorns in a pestle and mortar, then mix with the cornflour and five-spice and tip into a sandwich bag. Tip the chicken into the bag and shake well to coat in the flour mixture.
  • Toss the sesame seeds in a pan over a medium heat and lightly toast, for around a minute, then add the olive oil. Add the chicken and cook for 7-8 mins until golden brown.
  • Mix the soy and honey and tip into the pan along with the Asian greens, cook for 2-3 mins further until everything is well coated and the greens are cooked through. Serve topped with coriander and sliced spring onions alongside some cooked rice.

1/4 cup soy sauce
Salt and pepper to taste
1/2 cup corn starch
1 tablespoon sesame oil (or use olive oil)
1 large bell pepper (chopped)
2 serrano pepper (chopped (optional for extra spicy!))
10 dried chile de arbol peppers (optional for extra spicy, or use other dried peppers you love)
1 tablespoon Szechuan peppercorns (or use black peppercorns)

1/4 soy sauce
2 tablespoons rice vinegar

1 tablespoon soy sauce
1 1/2 teaspoons dark soy sauce
1 1/2 teaspoons cornstarch
1 1/2 lbs boneless chicken breasts, diced into 1-inch cubes
1/2 cup ketchup
1/4 cup chicken broth
1 tablespoon chili-garlic sauce
2 teaspoons sugar
4 teaspoons vegetable oil
2 teaspoons ginger, minced
2 teaspoons garlic, minced
2 teaspoons green onions, minced
10 dried red chilies
1 jalapeno, stemmed, seeded and thinly sliced
1 red bell pepper, stemmed, seeded and thinly sliced
1 cup yellow onion, sliced
2 teaspoons toasted sesame seeds
1 teaspoon sesame oil
1 tablespoon fresh cilantro, chopped

Steps:

  • In a medium bowl, combine the soy sauce, dark soy and cornstarch. Whisk to blend well, and add the chicken to the sauce. Toss to evenly coat the chicken and set aside for 15 to 20 minutes.
  • In a medium bowl, combine the ketchup, stock, chili garlic sauce and sugar. Stir to combine and set aside until ready to use. Place a wok over high heat and add the vegetable oil to the pan. Swirl the wok to be sure to coat well with the oil. Add the ginger, garlic, green onions, dried chilies and jalapenos to the wok.
  • Cook, stirring often until the garlic is fragrant and the chilies begin to brown, about 20 to 30 seconds. Add the chicken, bell peppers and onions to the pan and stir-fry until the chicken is no longer pink, about 4 to 5 minutes.
  • Add the sauce to the pan and bring to a boil, being sure to toss well in order to coat all the chicken and vegetables evenly, about 1 to 2 minutes. Sprinkle the sesame seeds, sesame oil and cilantro into the pan and toss to combine. Remove from the heat and serve on a platter with steamed white rice.

  • Cut the dried chili peppers, discard the seeds and then soak the peppers in water for 15 minutes. We are doing this so we can fry the peppers later and prevent burn the peppers.
