ROCKET PEAR SALAD
Pear, arugula, candied walnuts and a balsamic vinaigrette make for an irresistable side salad or main entree. So good our family can eat this for several nights in a row.

Steps:
- In a large mixing bowl whisk together olive oil and balsamic and then remaining vinaigrette ingredients.

- What a pukka combination, simple and classy. Don't try to make this when you feel like it, make it when you can buy perfect pears, otherwise it will taste naff. For 1 person I normally use around 1/2 a pear, 2 big handfuls of watercress and 2 big handfuls of rocket. If the pear skins are nice I just give them a wash, if not I remove them with a peeler. Then cut them in 1/2 and deseed. It doesn't really matter how you cut them up. Sometimes in big rough chunks, maybe sliced up or even grated. Then place into a bowl with the watercress and rocket. The pepperiness of the leaves works so well with the sweetness of the pear. Drizzle with good extra-virgin olive oil just to coat, a small squeeze of lemon juice (because the pear juice is slightly acidic but very tasty), and season well with salt and freshly ground black pepper. Toss all this together and serve. Shave over Parmesan or pecornio, crumble your nuts over and tuck in. I love this salad with roasted meat or as a starter on its own.

- Place the bread onto a lined baking tray and brush with half the combined oil and garlic. Cook under a grill for 2-3 minutes until golden. Turn and brush with remaining oil mixture and grill until golden.
- Heat butter and sugar in a small non-stick frying pan over medium heat. Add pears and sauté for 2-3 minutes until light golden.
- Arrange rocket, camembert, toasts and pears onto a serving platter. Drizzle with dressing and serve immediately.

Found this online a long time ago but have changed the recipe to add the caramelized balsamic vinegar. The balsamic will thicken on reducing.

Steps:
- Sprinkle pear slices with a little lemon juice and arrange over rocket on a medium sized platter.
- Sprinkle with cheese and drizzle with the caramelized balsamic vinegar.
- Serve immediately with ground black pepper.
- To caramelize balsamic vinegar, simply reduce a 500 ml bottle of Balsamic Vinegar down to about 150 ml (2/3 cup) over high heat for approx 15 minutes - it will keep for several weeks in the pantry or you can caramelize less to use for this salad only.

- In a small fry pan, toast the pine nuts (2 tbsp) over medium heat until lightly browned and set aside.
- To make the dressing, combine wholegrain mustard (1 tbsp), lemon juice (1 tbsp), olive oil (2 tbsp) and salt to taste in a medium bowl and mix together then set aside.
- Core and thinly slice the pears (2 medium pears), then immediately add pear slices to the bowl with the dressing and mix to coat to avoid browning.
- Add rocket to a large bowl, then add parmesan (30g or ⅓ cup), reserved pine nuts and pear slices (with remaining dressing from the bottom of the bowl) and toss lightly to combine. Serve immediately.
