Steps:
- First, clarify the butter so that you can fry the onions at high heat and put a very dark, almost burnt crust on them. Heat the butter in a small skillet over medium-high heat until it foams and browns. Remove from the heat. Tilt the skillet and carefully spoon off the foam, saving it in a small bowl. Pour the clear butter into another bowl, and pour the dark dregs at the bottom of the skillet into the bowl with the foam. Add the clear butter to a larger heavy skillet. (Discard the butter foam and dregs.)
- Heat the skillet over medium-high heat. Add the onions, 3/4 teaspoon salt and 1/4 teaspoon pepper. Fry the onions, flipping them now and then, until they're dark on the edges, even black and crispy in spots, about 10 minutes. Add the honey and garlic and cook for 1 more minute. Add the vermouth, bring to a simmer and cook until the liquid thickens, about 3 minutes. Remove from the heat and let cool.
- Put the sour cream and cream cheese in a mixing bowl and mix with a rubber spatula until smooth. Finely chop the fried onions on a cutting board and add them, along with their pan juices, to the cream cheese mixture. Stir in the chives. Add the cayenne and season with salt.
- Transfer to a small bowl and garnish with more chives. (This can be made ahead of time and refrigerated.)

- Continue stirring the onions every 2-3 minutes, allowing them to caramelize on the bottom before stirring again. If they start to stick or brown, add a few tablespoons of water to rehydrate them and deglaze the pan.
- Continue cooking the onions for approximately 45 minutes or until they're cooked to your liking. When there's one minute left on the onions, add the minced garlic and sauté for one minute. - First you want to preheat your oven to 350 degrees. Then get out a skillet and heat it on the stove over medium-low (or medium heat depending on your stove).
- Slice up your onions. Slice the onion in half first and then remove the top and bottom and skin. Slice the onion in 1/4 inch slices. If your onions are really big, also slice the half in half again so the slices are shorter.
- Add the olive oil to your skillet and add the onions. Peel and mince your garlic and add that as well. Cook the onions till they are translucent, but you don't want them to caramelize. We find that this dip is too sweet tasting with caramelized onions. If you want though, go ahead and try it caramelized. Its your dip! Slide them into a bowl and let them cool slightly.
- In the same pan, cook your prosciutto slices. They only need 30 seconds or so on each side. Take them out, let them cool slightly, then crumble them into the onions.

- Heat a tablespoon of olive oil in a large, heavy-bottomed skillet over medium heat. When the oil is hot, add the diced yellow onion and a big pinch of salt. Cook, stirring infrequently, until the onion is soft and slightly caramelized, about 20-25 minutes. If the onion seems to be browning too quickly, reduce the heat.
- When the yellow onion is caramelized, add the shallot and the white bottoms of the scallion to the pan. Cook, stirring occasionally, for an additional 3-4 minutes, until the shallots and scallions have softened. Stir in the soy sauce and rice vinegar.
- In a large mixing bowl, combine the yogurt and the onion mixture. Stir in the green parts of the scallions, reserving a few for garnish if you like. Season with salt, pepper, and additional olive oil to taste.
- Spoon the mixture into a serving bowl or storage container, and allow to chill in the refrigerator, covered, for at least an hour. Serve with your favorite chips or vegetables.
