This has been my favorite jam since I was a little girl. We moved around a lot when I was young; my Grandmother would send this jam to us so that we still felt we were close to 'Grandma's house.' I love it on warm homemade bread or peanut butter and jam sandwiches. Enjoy!

4 ½ cups mashed ripe pears
3 tablespoons powdered fruit pectin
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground allspice
½ teaspoon ground nutmeg
¼ cup lemon juice
7 ½ cups white sugar
1 teaspoon butter
8 half-pint canning jars with lids and rings, or as needed

Steps:

  • Mix pears, fruit pectin, cinnamon, cloves, allspice, nutmeg, and lemon juice in a large heavy pot; bring to a boil, stirring constantly. Add sugar all at once, stirring, and bring back to a full rolling boil. Boil for 1 minute. Mix in butter to settle foam.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the pear jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Pear Jelly is a versatile pantry item, and it's easy to make from scratch.

8 lbs ripe pears
7 1/2 cups granulated sugar
1 pouch (85 ml liquid pectin)

Steps:

  • Wash pears and remove the blossom and stem ends, but do not core or peel them
  • Cut pears into quarters and place in a large, deep stainless steel pot.
  • Add enough cold water to cover the fruit
  • Bring to a boil over high heat, stirring occasionally, then reduce heat, cover and boil gently just until pears are softened, about 30 minutes, occasionally mashing with a potato masher
  • Transfer to a dampened jelly bag set over a deep bowl, or into a sieve lined with several layers of dampened cheesecloth.
  • Allow to drip at least 2 hours.
  • Don't press or squeeze the fruit, as this will cloud the jelly.
  • You should end up with 5 cups of pear juice.
  • Combine the collected pear juice and sugar into a large, deep, stainless steel pot.
  • Bring to a full rolling boil over high heat
  • Stir in liquid pectin and continue to boil hard, stirring constantly, for one minute
  • Skim off foam and transfer to hot sterilized jars
  • Wipe jar rims and apply lids and screw bands
  • Process in a boiling water canner for 10 minutes
  • Remove from canner and allow to cool before ensuring jars are sealed and storing.

Pear jelly is easy to make at home, starting with either pear juice or whole pears.

4 cups Pear Juice (see note)
2 Tbsp. Lemon Juice (optional, but delicious)
2 cups Sugar
3 tsp Pomona's pectin
3 tsp calcium water (comes with pectin)
(If Using Sure Jell instead, see recipe notes)

Steps:

  • Bring pear juice, lemon juice and calcium water to a boil in a jam pot.
  • Mix dry pomonas pectin into the sugar and evenly distribute to prevent clumping.
  • Pour the sugar/pectin mixture into the boiling juice.
  • Boil hard for 2-3 minutes, stirring constantly, then remove from heat.
  • Pour into prepared jars, leaving 1/4 inch headspace.
  • Store in the refrigerator for immediate use, or process in a water bath canner for 5 minutes.
  • Remove from the canner and allow the jars to cool on the counter before checking seals and storing.

6 cups peeled, cored, and sliced pears
1 cup water
1 tablespoon lemon juice
1 (2 ounce) package powdered fruit pectin
8 cups white sugar
2 teaspoons ground allspice
2 teaspoons ground nutmeg
½ cup brown sugar

Steps:

  • Sterilize jars and lids in boiling water for at least 10 minutes. Let simmer while making jam.
  • In a large saucepan, combine pears, water, and lemon juice. Cover, and simmer for 10 minutes. Stir in pectin, and bring to a full boil. Stir in the white sugar, and continue boiling and stirring uncovered for 1 minute, until sugar is dissolved. Remove from heat, and stir in brown sugar, allspice, and nutmeg.
  • Quickly fill jars to within 1/2 inch of the top. Wipe rims clean, and top with lids. Process jars in boiling water for 10 minutes to seal.

1 cup peeled, cored and quartered apples ((any variety will work))
2 tablespoons lemon juice
¼ teaspoon cinnamon
⅛ teaspoon allspice
⅛ teaspoon ginger
⅛ teaspoon cloves
Pinch of nutmeg
1.75 ounce package dry fruit pectin or ½ cup Dutch jel pectin
1 tablespoon butter
5 ½ cups sugar
6-7 half-pint canning jars and lids, sterilized

Steps:

  • In a food processor, pulse pears and apples until fruit is chopped into very small pieces. Transfer the fruit to a large Dutch oven or other heavy-bottomed pot. Stir in lemon juice, cinnamon, allspice, ginger, cloves, nutmeg, pectin and butter.
  • Bring to a rolling boil over medium-high heat. Add sugar and stir to mix well. Return to a rolling boil, then boil for exactly 1 minute. Remove from heat; skim off foam with a metal spoon.
  • Ladle jam into hot sterilized jars, leaving ¼-inch headspace. Wipe rims clean with a damp cloth; add lids.
  • Process in a boiling-water bath for 10 minutes. Transfer jars to a towel and cool completely. Check for seals and refrigerate any jam that did not seal properly.

1 fresh lemon, juice of (juice)
7 cups sugar, measured into separate bowl
1/8 teaspoon cinnamon
2 teaspoons pure vanilla bourbon extract
1/2 teaspoon butter (optional) or 1/2 teaspoon margarine (optional)
2 boxes surejell fruit pectin

Steps:

  • BRING boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • PEEL and core pears. Finely chop or grind fruit. Measure exactly 8 cups prepared fruit into 6- or 8-quart saucepot. Stir in lemon juice and add butter to reduce foaming.
  • Bring to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly until pears are tender. Break up tender pears with a masher.
  • Stir in pectin. Return to full rolling boil and boil exactly 1 minute, stirring constantly. ADD sugar, cinnamon and vanilla bourbon; stir. Bring to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
  • Remove from heat. Skim off any foam with metal spoon.
  • LADLE immediately into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches.
  • Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 minutes. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.).

1 1/2 lbs apples, peeled and chopped
1 1/2 lbs pears, peeled and chopped
2 1/4 cups organic cane sugar
1 lemon, juiced
1/2 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves
pinch of sea salt

Steps:

  • Heat large saucepan over medium-low heat and add apples, pears, sugar, lemon juice, vanilla extract and spices. Stir until sugar is dissolved.
  • Increase saucepan to medium-high to bring mixture to a boil. Continue to boil for 30 minutes or until thickened. If you have a candy thermometer, just boil until the temperature reaches 220°F. Use a potato masher to mash some of the fruit. Remove from heat and add pinch of salt.
  • Transfer the apple and pear jam to a jar and let cool at room temperature. Store in fridge and use within 1 month.
  • If you want to keep for longer remove from the stove and immediately ladle into sterilized jars. Place lids on jars and screw on. Place in boiling water with at least 1 inch covering the jars for 10 minutes to seal the jars. Remove and let sit at room temperature for 1 day. Store in cool dark place. Once opened, you need to store in fridge and use within 1 month.

4 to 5 pears, peeled, cored and cut into small cubes
1 Tablespoon peeled and finely grated fresh ginger
1/2 cup light brown sugar
1 lemon

Steps:

  • In a large pot, combine the pears, fresh ginger, sugar and juice from one lemon.
  • Bring to a boil over medium-high heat them reduce the heat to medium. As you cook the jam for 10-15 minutes, it will thicken.
  • Use a potato masher to help break down the fruit if necessary. If you want to make more of a sauce similar to an applesauce, you could puree the jam before canning it.
  • When the jam is the consistency you prefer, ladle it into jars leaving 1/4 inch headspace.
  • Process the jars for 10 minutes in a water bath canner (adjust for your altitude as needed). Or you could store the jam in the refrigerator for about a month.

  • Place the chopped pears, cinnamon stick, ginger, and vanilla bean into a large, wide-mouthed, heavy-bottomed pot. My creuset is perfect for this! Add the water and lemon juice, and bring to a boil.
  • Lower the heat to a simmer and cook until the pears are completely soft. The time for this will vary according to the hardness of the pears, but it took me about 30 minutes. Remove from heat.
  • Remove the cinnamon stick and vanilla bean, and set aside. Strain the solids out of the pear mixture into a large bowl using a food mill, chinoise, or other finely meshed strainer. Use a wooden spoon to push all of the pulp through the mesh if using a chinoise or other mesh strainer. Discard the solids (but not the cinnamon stick or vanilla bean).
  • Pour the pear purée into a large measuring cup designed for liquids - I recommend a 4-cup measuring cup - to determine how many cups of purée you have. This is very important in order to determine how much sugar to add.
