BAILEY'S IRISH CREAM FUDGE

A simple baileys fudge made with everyone's favorite liqueur. All you need are four ingredients to make a smooth chocolate fudge with hints of Irish Cream.

24 Ounces Semi-Sweet Chocolate Chips, (four ((4)) cups by volume)
14 Ounces Sweetened Condensed Milk, (one ((1)) can)
2/3 Cup Irish Cream Liqueur
1 Teaspoon Vanilla Extract

Steps:

  • Line an 8 x 8 - inch or 9 x 9 - inch baking dish with parchment paper. Set aside.
  • Combine all the ingredients in a large saucepan, and heat over low heat. Stir constantly making sure to reach the bottom of the pan to ensure no chocolate chips stick and burn.
  • Continue stirring for approximately 5 to 6 minutes or until the chocolate chips melt completely and all the ingredients are well mixed.
  • Pour the mixture into the prepared baking dish, and use a silicone spatula to smooth into an even layer. Transfer to the refrigerator to cool for at least 3 to 4 hours.
  • Cut into squares, and serve. Store any leftovers in the refrigerator for up to 5 days.

8 tablespoons irish cream
2 ⅔ cups all-purpose flour
½ cup cocoa powder
1 teaspoon instant coffee powder
1 ¼ teaspoons baking soda
¼ teaspoon salt
1 cup white chocolate chip
½ cup milk chocolate chips

Steps:

  • Cream butter, sugar, eggs and vanilla until fluffy.
  • Add in Irish Cream and mix.
  • Add flour, cocoa powder, instant coffee, baking soda and salt and mix until combined.
  • Fold in chocolate chips. Refrigerate dough for 4-6 hours.
  • Roll into balls.
  • Set on a baking sheet. Bake at 350˚F (175˚C) for 10 minutes

2 ¼ cups brown sugar
½ cup golden syrup
1 ¼ cups double cream
1 cup dark chocolate
½ cup irish cream
⅓ cup white chocolate, melted

Steps:

  • In a saucepan, melt the butter, brown sugar, golden syrup, and double cream over a low-medium heat and mix gently until combined.
  • Once combined, place a sugar thermometer into the saucepan and heat the mixture until it reaches 116˚C (240˚F), stirring every now and then.
  • Take off the heat and mix in the dark chocolate and Irish cream.
  • Pour into a baking tin and then pour the white chocolate in the middle.
  • Using a cocktail stick or the handle of a spoon, swirl the white chocolate into the dark chocolate mixture.
  • Chill in the fridge until solid. Cut into squares.
  • Enjoy!

I have requests for it alot but is rather expensive to make and makes alot but is so easy to make. You can use any kind of Irish Cream you choose. Also nuts are optional and if you choose to add them, any type your like will work well with this recipe.

2 (12 ounce) packages milk chocolate chips
1 (12 ounce) package semi-sweet chocolate chips
2 (7 ounce) jars marshmallow cream
2 teaspoons vanilla extract
2/3 cup irish cream (alcoholic beverage such as Baily's Irish Cream)
2 cups of chopped nuts (optional)
4 1/2 cups granulated sugar
1 (12 ounce) can evaporated milk
1/2 lb butter (1 cup)

Steps:

  • In a very large bowl, combine the 2 packages of milk chocolate chips, the one package of semisweet chocolate chips, both jars of marshmallow cream, 2 teaspoons of vanilla extract, the Irish Cream, and nuts if you are adding them.
  • Set this mixture aside.
  • Line a 10-x-15-inch pan with foil and spread lightly with butter or margarine.
  • In a medium sized saucepan, combine 4 1/2 cups of granulated sugar, 1 can of evaporated milk, and 1/2 pound of butter.
  • Bring to a gentle boil over medium heat first and then cook slowly, stirring constantly for about 10 minutes.
  • Pour the milk mixture into the very large bowl holding the chocolate chip mixture.
  • Stir slowly by hand to combine.
  • It is very important to do this by hand and NOT use any kind of mixer.
  • Pour the fudge into the prepared pan and chill until set.

Steps:

  • Melt chips in a glass mixer bowl in the microwave.
  • Add remaining ingredients(except the nuts) and blend.

1 cup light brown sugar, packed
1 cup white sugar
3/4 cup unsalted butter
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup irish cream
2 1/4 cups icing sugar, sifted

Steps:

  • Grease an 8-inch square pan and line with parchment paper so that it hangs over the sides.
  • Stir evaporated milk, brown sugar, white sugar, butter and salt in a heavy-bottomed saucepot.
  • Bring to a boil over medium heat, stirring often, and cook until 238°F (use a candy thermometer to gauge)(about 7-8 minutes).
  • Remove from heat, stir in vanilla and Irish Cream and scrape into a bowl or mixer fitted with the paddle attachment.
  • With the mixer on low speed or electric beaters, add in the icing sugar in three additions, mixing well after each addition.
  • Scrape fudge into prepared pan and let cool completely before slicing.

¼ cup butter
3 cups confectioners' sugar
1 cup Irish cream liqueur

4 tablespoons Irish cream liqueur
2 tablespoons butter

Steps:

  • Butter a 8x8 inch pan.
  • In the top half of a double boiler melt the 3 cups semisweet chocolate chips, 1 cup white chocolate chips and 1/4 cup butter until soft enough to stir.
  • Stir in the confectioner's sugar and Irish cream until mixture is smooth. Stir in nuts. Place mixture in the prepared pan and lay a sheet of plastic wrap over top; press and smooth top down.
  • In the top half of a double boiler melt remaining chocolates until soft. Remove from heat and with a fork beat in the butter and Irish cream until smooth. Spread topping over cooled fudge with a knife. If a smooth top is important place plastic wrap over the top. Refrigerate until firm, 1 to 2 hours at least. This fudge can be easily frozen.

Steps:

  • In a microwave safe cup, cook Irish Cream on HIGH 30 to 45 seconds until hot enough to dissolve the instant coffee.
  • In a large pan or Dutch oven, on medium heat, melt the butter, add sugar, evaporated milk, Irish Cream and coffee mixture, marshmallow creme, then mix well.
  • Bring to a full boil, stirring constantly, for 5 minutes.
  • Remove from heat and stir in vanilla chips until completely melted and mixed thoroughly.
  • Stir in the vanilla, then the hazelnuts until mixed well.
  • Pour into a greased 8-inch square pan and spread evenly.
  • Chill until just set but still easy to cut, cut into 1-inch squares.

ELEGANT ITALIAN CREAM FUDGE

When the children were small I always tried two or three different recipes around the holidays and the real good ones would be added to the family traditions. This was one of the best candy recipes I found. My grown children still want me to make 2 batches so they can have some to take home at Christmas. I usually make this right before or right after Thanksgiving because if you can let it set for about a month it is creamier. Be prepared to stand over it while cooking. The mixture is thick and it sticks to the pan unless your spoon keeps it moving. And when you beat the lukewarm candy, let your electric mixer do the work. (note from Lynn: you can also leave out all nuts and it is still a very very good rich candy) A MORE DELICIOUS CANDY WE'VE NEVER ENCOUNTERED ALSO NOTE THAT THOUGH THIS IS CALLED FUDGE IT IS NOT CHOCOLATE

½ cup evaporated milk
1 cup light brown sugar, packed
1 cup white sugar
¾ cup unsalted butter, room temperature
¼ teaspoon salt
¼ cup Irish cream liqueur
1 teaspoon vanilla extract
2 ¼ cups confectioners' sugar, sifted

Steps:

  • Grease an 8-inch square baking pan and line with 2 pieces of parchment paper about 14 inches long; allow the ends of the paper to hang over the sides of the pan by several inches.
  • Stir evaporated milk, light brown sugar, white sugar, unsalted butter, and salt in a heavy saucepan over medium heat until the mixture forms a thick, smooth syrup.
  • Bring to a boil, reduce heat to medium-low, and cook until a candy thermometer inserted into the center of the boiling syrup without touching the bottom of the pan reads 238 degrees F (112 degrees C), 20 to 30 minutes. Stir often. Candy temperature will rise slowly at first, then more quickly as temperature increases; watch carefully.
  • Remove saucepan from heat and stir in the Irish cream liqueur and vanilla extract until thoroughly combined.
  • Scrape the mixture into the work bowl of a large stand mixer fitted with beaters; set the machine on low speed and mix in confectioners' sugar in 3 additions, allowing the sugar to blend in completely before adding the next addition. Scrape down the bowl frequently and mix fudge until completely smooth, about 2 minutes.
  • Scrape fudge into the prepared baking pan and place on a level surface to cool and set up, 3 to 5 hours.
  • Use the parchment paper ends as handles to lift the fudge out of the baking pan before slicing into cubes for serving.
