1/2 lb chorizo sausage, in bulk "or' casings removed
3 cups flour
1 cup shredded sharp cheddar cheese
3 green onions, sliced thin
3 tablespoons brown sugar
1 1/2 tablespoons baking powder
1/2 teaspoon cumin
1/4 teaspoon baking soda
1 (8 ounce) package cream cheese, at room temp
1 cup milk
2 eggs
1/3 cup melted butter
3/4 cup shredded sharp cheddar cheese

Steps:

  • Pre heat oven to 375 degrees.
  • In a medium heavy skillet cook chorizo until done and slightly crisp.
  • Drain thoroughly.
  • In a large bowl stir together flour, cheese, onion, sugar, baking powder, cumin and baking soda.
  • In another large bowl beat cream cheese until smooth.
  • Stin in milk.
  • Add eggs one at a time beating well after each addition.
  • Stir in melted butter and chorizo.
  • Slowly add the flour mixture until just moist.
  • Spoon into a greased cast iron skillet.
  • Bake for about 50 minutes.
  • Tap the top of bread, and if it sounds hollow it's done.
  • Top with cheese and bake for another 5-7 minutes.
  • Remove and cool for 10 minutes.
  • Turn out onto a rack and cool at least another 15 minutes before slicing.

1/2 pound homemade chorizo
46 green onions, chopped
1 tablespoon tomato paste
1 tomato, seeded and diced
1 teaspoon dried Mexican oregano
2 Chipotle chiles pickled, chopped
Coarse salt and freshly ground pepper
1 small loaf of French bread
Grated Cotija and Manchego cheese, about 1/2 pound

Steps:

  • In a dry heavy skillet, fry the chorizo until browned. Drain off any fat and add the tomato paste and fry with chorizo briefly. Add the green onions, oregano, tomato, chile, and salt and pepper. Cook 2 to 3 minutes longer.
  • Spread the chorizo mixture on a split loaf of French bread. Sprinkle generously with Cotija and Manchego cheeses.
  • Place under a broiler and broil until the cheese is melted and bubbly and serve with tomatillo salsa.

3 tablespoons olive oil
1 lb chorizo sausage, no casing
1 1/2 cups finely chopped onions
1/2 cup finely chopped bell pepper, any color
1 cup thinly sliced leek
12 hamburger buns, cut in 1-inch cubes
1 lb medium cheddar, grated
1 lb monterey jack cheese, grated
4 ounces chopped green chilies
16 large eggs, beaten well
2 cups half-and-half
4 dashes tapatio salsa picante hot sauce
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
3/4 cup sour cream

Steps:

  • Pre-heat oven to 350°F.
  • Grease 2 9x13 pans.
  • In a medium bowl, toss together 1 1/2 cups cheddar and 1 1/2 cups monterey jack cheese. Set aside.
  • In a large skillet, cook chorizo, stirring occasionally.
  • Add all vegetables and saute until tender.
  • Place bread cubes in very large bowl. Add chorizo mixture and green chilis, toss until coated.
  • Add unmixed cheeses in two additions, tossing well each time. Set aside.
  • In a large bowl (kitchen aid bowl), beat eggs, half-and-half, Tapatio, salt and pepper until well mixed and frothy.
  • Poor over bread/chorizo mix and fold until bread is mostly saturated. Turn into prepared pan. Level surface but do not 'smooth'.
  • Bake at 350F for 50 minutes or until evenly puffed.
  • Spread top with sour cream and sprinkle with mixed cheeses.
  • Return to oven and bake 5 -10 minutes or until cheese is melted. Serve.

1 1/2 cups yellow cornmeal
1 cup all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
1 large egg
3/4 stick (6 tablespoons) unsalted butter, melted and cooled
Stuffing:
1/2 stick (1/4 cup) unsalted butter
2 cups chopped onions
8 ounces Spanish chorizo (dry-cured spiced sausage), casing removed and sausage coarsely chopped (about 1 1/2 cups packed; see Cooks' Notes)
2 cups fresh, or thawed frozen, corn kernels (one 10-ounce package)
1 teaspoon dried sage
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup coarsely chopped flat-leaf parsley
2 cups turkey stock or reduced-sodium chicken broth

8-inch square baking pan

Steps:

  • For corn bread:
  • Heat oven to 400°F with rack in middle and butter an 8-inch square baking pan.
  • Whisk together cornmeal, flour, sugar, baking powder, and salt in a large bowl.
  • Whisk together milk, egg, and butter in a small bowl and stir into dry ingredients. Pour batter into buttered baking pan.
  • Bake until golden and a tester comes out clean, 25 to 30 minutes.
  • Cool corn bread in pan on a rack 10 minutes, then turn out onto rack to cool completely.
  • Cut corn bread into 3/4-inch cubes and put in a large bowl.
  • For stuffing:
  • Melt butter in a 12-inch heavy skillet over medium heat, then add onions and cook, stirring occasionally, until softened, about 8 minutes.
  • Add chorizo, corn, sage, salt, and pepper and cook, stirring occasionally, 10 minutes. Remove from heat and add parsley.
  • Toss chorizo mixture with corn bread and transfer to a 13- by 9-inch baking pan. Drizzle with chicken broth.
  • Bake at 400°F uncovered, until golden brown, about 30 minutes.

3 cups coarsely grated Petit Basque cheese or Gruyère cheese

Ingredient info: Spanish chorizo is a pork-link sausage flavored with garlic and spices but milder than mexican chorizo; it's available at specialty foods stores and Spanish markets and from latienda.Com. Petit basque cheese is available at some supermarkets and at cheese stores.

Steps:

  • Heat 1 1/2 tablespoons oil in large skillet over medium heat. Add onions; sauté until deep golden brown, stirring often and adjusting heat as needed to prevent burning, 25 to 30 minutes. Sprinkle with salt and pepper.
  • Meanwhile, heat remaining 1 tablespoon oil in medium skillet over medium heat. Add leeks; sauté 3 to 4 minutes. Add 3/4 cup water; cover and cook until leeks are tender, stirring often and adding more water by tablespoonfuls to moisten as needed, 10 to 15 minutes. Add wine; cook uncovered until leeks are very soft, about 5 minutes longer. Sprinkle with salt and pepper. Combine onions and leeks in small bowl.
  • Preheat oven to 450°F. Divide onion-leek mixture among 4 small gratin dishes. Top mixture in each dish with chorizo slices, then cheese.
  • Bake until cheese melts and bubbles, about 15 minutes. Serve hot with grilled bread.

1/2 pound bread dough (any kind, pizza dough works particularly well)
1/4 pound chorizo sausage, cut in 8 pieces
8 fairly flat large green leaves, such as Swiss chard, collard greens, large spinach leaves or even lettuce leaves washed and dried

Steps:

  • Divide the bread dough into eight balls and roll each into a circle large enough to enclose the chorizo.
  • Place the chorizo in the center and close the dough around it, pinching well to seal. Wrap in the leaf, covering the dough completely, and tie lengthwise and crosswise with string, like a package (this may be prepared ahead and refrigerated).
  • Bake at 400 degrees for 20 minutes. To serve, remove the string.

I love the flavor of chorizo but cannot stomach the thought of the variety meats traditionally used to make it. This is an authentic chorizo from the Mexican state of Sonora. I obtained the recipe from a gentleman named Bruce Moffitt and have since modified it slightly.

3 tablespoons ground New Mexico chile
2 tablespoons red wine vinegar
1 tablespoon dried Mexican oregano
1 tablespoon water
3 cloves garlic, minced
1 ¾ teaspoons salt
1 ½ teaspoons red pepper flakes
1 teaspoon cumin seeds, crushed
¾ teaspoon white sugar
½ teaspoon ground black pepper
1 pound ground pork, well chilled

Steps:

  • Combine chile powder, vinegar, oregano, water, garlic, salt, red pepper flakes, cumin seeds, sugar, and pepper in a small bowl. Mix until the salt and sugar are dissolved in the liquids.
  • Break up pork in a bowl. Pour in spice mixture and knead thoroughly. Use immediately or refrigerate to let flavors meld, 8 hours to overnight.
  • Cook and stir in a nonstick skillet over medium heat until browned and crumbly, about 10 minutes.
