Green velvet cake is a fun and festive dessert perfect for Christmas, St. Patrick's Day, or any day!

Number Of Ingredients 19

2 1/2 cups all-purpose flour
2 1/2 teaspoons cocoa powder*
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups granulated sugar
1 1/2 cups vegetable oil
3 eggs
1 tablespoon + 1 teaspoon vanilla extract
1 teaspoon white vinegar
1 cup buttermilk**
1 tablespoon green food coloring
Cream cheese frosting
3/4 cup unsalted butter (at room temperature)
8 ounces cream cheese (at room temperature)
2 teaspoons vanilla extract
1/4 teaspoon salt
4 to 4 1/2 cups powdered sugar
1 to 2 tablespoons milk or heavy cream (if necessary)
green sprinkles for decorating (if desired)

Steps:

  • Preheat the oven to 350 degrees. Spray 3 (8-inch) round cake pans with cooking spray. Line the bottom of the pans with parchment, spray the parchment, and set pans aside.
  • Stir together the flour, cocoa powder, baking soda, and salt in a small bowl. Set aside.
  • Combine the sugar, oil, eggs, vanilla, and vinegar in a large bowl. Beat with an electric mixer set to medium until very smooth, about 2 minutes. Stop to scrape down the sides and bottom of the bowl as necessary.
  • With mixer on low, gradually add the dry ingredients and beat until just incorporated. Scrape down the sides and bottom of the bowl.
  • Again with mixer on low, beat in the buttermilk, then the food coloring. Use a rubber spatula to mix the batter a few times, taking care to scrape up from the bottom and ensure the flour is totally mixed in.
  • Divide the batter evenly between the prepared cake pans and bake 30 to 40 minutes, until a cake tester inserted into the center of the cake comes out clean.
  • Set the pans on a wire rack to cool for 20 minutes, then run a knife around the edge of each cake layer. Gently invert each cake layer onto wire racks to cool completely before frosting.
  • (Once the cake layers are cool you can wrap them tightly with plastic wrap and store at room temperature for up to a day before frosting.)
  • Beat the butter and cream cheese in a medium mixing bowl until smooth.
  • Beat in the vanilla and salt. With mixer on low, gradually beat in 4 cups of powdered sugar.
  • Once all the sugar is incorporated, turn mixer to medium and beat until the frosting is smooth. If frosting is too thick, beat in a little milk. If it's too thin, beat in more powdered sugar.
  • Use a long serrated knife to trim the cake layers if they've domed. Place one cake layer on a cake stand or cardboard cake circle and spread a layer of frosting on top.
  • Top with a second cake layer, more frosting, and then the third layer.
  • Frost cake with the remaining frosting and decorate as desired. Serve.
  • Uneaten cake can be stored, covered, in the fridge for up to 3 days or in the freezer, tightly wrapped, for up to 2 months.

1 cup cake flour (not self-rising)
2 tablespoons unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup sugar
1/2 cup milk
1/2 cup vegetable oil
1 large egg
1 tablespoon distilled white vinegar
1 teaspoon pure vanilla extract
1/2 teaspoon green gel food coloring
2 ounces white chocolate, chopped
3 large egg whites, at room temperature
3/4 cup sugar
1/4 teaspoon salt
Pinch of cream of tartar
2 sticks unsalted butter, cut into pieces, at room temperature
1 teaspoon pure vanilla extract
Assorted green sprinkles, for decorating

Steps:

  • Make the cupcakes: Preheat the oven to 350˚. Line a 12-cup muffin pan with paper liners. Sift the cake flour, cocoa powder, baking soda and salt into a large bowl. Whisk the sugar, milk, vegetable oil, egg, vinegar and vanilla in a separate large bowl. Whisk in the flour mixture until smooth. Add the green food coloring and stir until combined.
  • Divide the batter among the prepared muffin cups, filling them three-quarters of the way. Bake until a toothpick inserted into the centers comes out clean, about 15 minutes. Let cool slightly in the pan, then remove to a rack to cool completely.
  • Meanwhile, make the frosting: Put the white chocolate in a small heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water). Cook, stirring, until melted; remove the bowl from the pan and let cool slightly. Reserve the pan of simmering water.
  • Whisk the egg whites, sugar, salt and cream of tartar in a large heatproof bowl set over the pan of simmering water (do not let the bowl touch the water). Cook, whisking, until the sugar dissolves and the mixture registers 130˚ on a candy thermometer, 3 to 5 minutes. Remove the bowl from the pan; beat with a mixer on high speed until stiff peaks form, 1 to 2 minutes. Reduce the mixer speed to medium and beat until the bowl is no longer warm, 1 to 2 more minutes.
  • Increase the mixer speed to medium high and continue beating, adding the butter one piece at a time, until thick and combined. (The mixture might separate, but keep beating and it will smooth out.) Add the melted white chocolate and vanilla and continue beating until just combined.
  • Transfer the frosting to a resealable plastic bag and snip a corner. Pipe onto the cupcakes and decorate with green sprinkles.

1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 1/4 cups buttermilk, well shaken
1 tablespoon green liquid food coloring
2 teaspoons pure vanilla extract
2 cups granulated sugar
1 cup (2 sticks) unsalted butter, at room temperature
3 large eggs, lightly beaten
1/2 cup all-purpose flour
1 1/2 cups milk
1 1/2 cups (3 sticks) unsalted butter, at room temperature
1 1/2 cups granulated sugar
4 teaspoons pure vanilla extract
Pinch fine salt
Green liquid or gel food coloring, optional
Green candies and sanding sugar for decorating, optional

Steps:

  • For the cake: Preheat the oven to 375 degrees F. Butter three 8-inch round cake pans, line with parchment and butter the parchment; set aside. Whisk the flour, cocoa powder, baking powder, baking soda and salt in a medium bowl; set aside. Whisk the buttermilk, food coloring and vanilla in a spouted measuring cup; set aside.
  • Beat the granulated sugar and butter in a stand mixer (or a large bowl if using a hand mixer) on medium speed until very light in color and fluffy, about 5 minutes, scraping down the sides of the bowl as needed. With the mixer still running, slowly add the eggs and beat until fully incorporated. Reduce the mixer speed to the lowest speed; with it running, add 1/3 of the flour mixture, then 1/2 of the buttermilk mixture, then 1/2 of the remaining flour mixture, then the remaining buttermilk mixture, then the remaining flour mixture. Scrape down the sides and beat until well mixed. Divide the batter evenly among the three prepared pans. Bake until slightly puffed and a toothpick comes out clean when inserted in the center, 20 to 25 minutes. Let cool 15 minutes in the pan, then turn out to cool completely.
  • For the frosting: Put the flour in a small saucepan. Vigorously whisk in about 1/2 cup of the milk, making sure to get the whisk into the edges of the pan, until you have a smooth, thick paste. (This step keeps the flour from clumping.) Slowly whisk in the remaining milk until fully incorporated and the mixture is smooth. Cook over medium heat, whisking continuously, until the mixture is very thick, about 5 minutes. (Toward the end of the process, the mixture will become a thick paste; it may seem to be forming lumps, but whisk vigorously and the lumps will disappear.) Scrape the frosting into a bowl, press plastic wrap onto the surface and refrigerate until cool, about 45 minutes.
  • Using a stand mixer fitted with the paddle attachment (or a hand mixer), beat the butter and granulated sugar on medium speed until very light and fluffy, about 5 minutes. Add the cooled flour mixture a tablespoon at a time and beat until smooth. Switch to the whisk attachment (or continue with the hand mixer), add the vanilla, salt and 3 to 5 drops food coloring if using and whip until very light and fluffy, like thick whipped cream, up to 10 minutes with a stand mixer or 12 minutes with a hand mixer.
  • To assemble: Place one layer on a cake plate, spread frosting on top and repeat with the 2 remaining layers. Frost the sides and decorate with candies and sanding sugar if using.

I wanted to make something creative for Christmas, but I didn't want to make a simple red velvet cake. So this is what I came up with! A very colorful red and green velvet cake! This is fairly simple, and meant to prevent dirtying up a lot of dishes.

½ cup vegetable shortening
1 ½ cups white sugar
2 eggs
1 cup buttermilk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 9x13-inch sheet pan.
  • Mash vegetable shortening and sugar together in a large bowl until smooth and creamy; beat in eggs until fully incorporated.
  • Stir buttermilk, cocoa powder, salt, and vanilla extract into the shortening mixture until the liquid ingredients are an even color and texture.
  • Sift flour into the liquid ingredients until combined.
  • Pour half the batter into a separate bowl.
  • Lightly stir red food color into one bowl of batter and green food color into the other bowl of batter.
  • Quickly fold 3/4 teaspoon baking soda and 1 1/2 teaspoon white vinegar into the bowl of red batter; quickly fold 3/4 teaspoon baking soda and 1 1/2 teaspoon white vinegar into the bowl of green batter.
  • Pour the red and green batters into the prepared sheet pan in alternating colors.
  • Bake in the preheated oven until the cake is lightly browned on top and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Allow to cool completely before frosting.

2 1/2 c all-purpose flour
2 c sugar
1 Tbsp unsweetened baking cocoa
1 tsp salt
1 tsp baking soda
2 eggs
1 c cooking oil
1 c buttermilk

1 oz green food coloring
CREAM CHEESE FROSTING
1 8 oz package cream cheese, room temperature
1 stick butter, room temperature
3 c confectioners' sugar
1 tsp vanilla extract

Steps:

  • 1. Combine wet ingredients in a mixer and blend.
  • 2. Combine all your dry ingredients in a separate bowl.
  • 3. Next, gradually add the dry ingredients to the wet.
  • 4. Once blended, put the mixture in a greased cake pan or lined cupcake pan. For a pan, grease and flour two 8-inch round cake pans.
  • 5. Bake at 350 F. for 35 minutes. Cupcakes will probably take 22 to 25 minutes until knife inserted near the center comes out clean.
  • 6. Let it cool for 15 minutes and remove from pans on wire rack and cool completely.
  • 7. Cream together the cream cheese and butter.
  • 8. Add the confectioners' sugar and vanilla.
  • 9. Mix until spreading between layers and over top and on sides of a cake.
