Yield Makes 1 quart

Number Of Ingredients 7

2 cups milk
2 cups heavy cream
1 cinnamon stick
6 Bartlett or Anjou pears, peeled and cored
6 large egg yolks
1/2 cup sugar
2 tablespoons brandy, (optional)

Steps:

  • Combine milk, cream, and cinnamon stick in a medium saucepan over medium-low heat. Heat until small bubbles appear around the edge. Remove from heat, cover, and let steep for 30 minutes.
  • In a large saucepan over medium-high heat, cook pears for 45 minutes, or until they make a thick sauce. Let cool a bit, then puree in a food processor or blender.
  • Beat together egg yolks and sugar in a small bowl. Bring milk mixture back to a simmer, and whisk about 1 cup hot milk into egg mixture. Return to pan, and cook over low heat, stirring constantly with a wooden spoon until thick enough to coat the spoon, about 5 minutes.
  • Stir puree into ice-cream base. Chill, then stir in brandy, if desired. Freeze in an ice-cream maker according to manufacturer's instructions. Store in an airtight plastic container up to 2 weeks.

BLUE CHEESE-PEAR ICE CREAM

1 cup sweet late harvest Riesling, Muscat, Sauternes or Montbazillac
1/2 cup pear nectar
2 tablespoons sugar
1 pound firm-ripe Anjou pears, peeled, cored, and chopped
1 teaspoon fresh lemon juice
2 cups heavy cream
4 large egg yolks
4 ounces Danish Blue, or other creamy blue cheese, rind removed and crumbled
Pinch salt
Honey
Toasted chopped walnuts
Phyllo cookies, recipe follows
2 sheets phyllo dough
2 tablespoons melted unsalted butter
2 tablespoons chopped walnuts
2 tablespoons sugar

Steps:

  • In a saucepan, combine the pears, wine, nectar, 2 tablespoons of sugar, and lemon juice. Bring to a boil, then reduce the heat and simmer until the pears are tender and the liquid is reduced by 1/2. Puree in a food processor and transfer to a bowl to cool. Refrigerate until well chilled, at least 2 hours.
  • In a medium saucepan, heat the cream to a gentle boil over medium heat. Remove from the heat.
  • Beat the egg yolks in a medium bowl. Whisk 1/2 cup of the hot cream into the egg yolks. Whisking, gradually add the egg mixture to the hot cream. Return to medium-low heat and cook, whisking, until the mixture is thick enough to coat the back of a spoon, about 5 minutes. Remove from the heat and strain through a fine mesh strainer into a clean bowl. Add the blue cheese and salt, and whisk until fairly smooth. Cover with plastic wrap, pressing down against the surface to keep a skin from forming. Refrigerate until well chilled, at least 2 hours.
  • Whisk together the pear and cheese mixture and pour into the bowl of an ice cream machine. Freeze according to the manufacturer's instructions. Transfer to an airtight container and freeze until ready to serve.
  • To serve, scoop the ice cream into bowls, 2 scoops per person. Drizzle with honey and sprinkle with chopped nuts. Place 2 phyllo cookies in the ice cream and serve.
  • Preheat oven to 350 degrees F. Grease a baking sheet and set aside.
  • Place the phyllo on a work surface and cover with a damp kitchen towel. With a pastry brush, paint the top sheet with melted butter, and lightly sprinkle with nuts and sugar. Repeat with the remaining ingredients. Fold the phyllo stack in 1/2 over itself. Cut the phyllo twice lengthwise and twice across to make rectangles.
  • Bake until golden brown and just crisp, about 10 to 12 minutes. Remove from the oven and cool on the pan until ready to serve.

ROASTED PEARS AND ICE CREAM

1 lemon, zested and 4 lemon twists of rind

Steps:

  • Preheat oven to 400 degrees F.
  • Place the butter in the bottom of a shallow baking dish. Drain off 3/4 of the liquids from each can ¿ pears should remain wet but not swimming in syrup. Add pears to the dish and season with lemon zest, nutmeg and crystallized ginger then roast 20 minutes. Serve warm pears with scoops of French vanilla ice cream on top, garnish with lemon twist.

Steps:

  • In a large skillet, melt butter over medium-high. Add pears, one cut side down, and cook until browned, then reduce heat to medium and cook 3 minutes. Turn pears to other cut side and cook 4 minutes. Add sugar and 1 tablespoon water, swirling pan to combine. Turn pears skin side down and cook until sauce is thickened slightly, 2 minutes. Stir in vanilla and pinch of salt. Serve warm with ice cream.

ROAST PEAR & SHERRY ICE CREAM

900g ripe pears
4 tbsp light brown soft sugar
200ml sweet sherry
20g butter , melted
400ml whipping cream
100ml whole milk
150g caster sugar
1 vanilla pod
6 egg yolks (medium eggs)
2 tbsp sweet sherry

Steps:

  • Heat oven to 200C/180C fan/gas 6. Peel, halve and core the pears, then put them in a gratin dish or roasting tin in which they can sit without too much surface area around them (otherwise the juices that come out of them will just burn off ). Sprinkle with the sugar and drizzle over 4 tbsp sherry and the melted butter. Bake for 30-40 mins; the pears should be completely tender and the juices around them slightly caramelised (check on them after 20 mins - if the pears are small it will take less time). Cut the pears up - still in the dish - and pour over the remaining sherry. Leave to cool completely, then purée (including all the juice) and push through a sieve. Cover and chill.
  • To make the ice cream base, put the cream and milk in a heavy-based pan and add half the sugar. Slit the vanilla pod along its length and scrape the seeds out into the pan. Drop in the pod as well. Bring to just under the boil, stirring, then take the pan off the heat and leave to infuse. Remove the vanilla pod.
  • Put the egg yolks in a bowl with the rest of the sugar and whisk with electric beaters until the mixture has increased in volume and falls in ribbons (this will take about 2 mins). Gradually stir about half the cream mixture into the eggs and sugar, then add this to the rest of the cream in the pan. Set the pan over a very low heat and cook, stirring all the time with a wooden spoon, for 8-10 mins, or until the mixture has thickened enough to coat the back of a spoon. Be really careful not to let the mixture overheat or it'll curdle.
  • Pour the custard into a bowl set in a sink of iced water (this stops it cooking immediately) and leave to cool, stirring a little every so often. Chill for 3 hrs. Stir the pear purée and the 2 tbsp sherry into the custard, then churn in an ice cream maker following the manufacturer's instructions. Spoon into a container, cover and store in the freezer. Alternatively, if you don't have an ice cream maker, put the custard and pear mixture into a freezer-proof bowl, cover and put it in the freezer. Beat the mixture every hour until it's frozen (about 4 hrs) to break down the crystals.

2 1/4 pounds ripe Anjou or Comice pears, peeled, halved, cored, thinly sliced (about 4 cups)
1 cup pear nectar
1 tablespoon fresh lemon juice
6 large egg yolks
3/4 cup sugar
2 cups whipping cream
1 2-inch piece vanilla bean, split lengthwise
1/2 cup light corn syrup
Pear Compote
2 cups GewÜrztraminer wine
1/2 cup sugar
2 whole cloves
1 4 1/2-inch piece vanilla bean, split lengthwise
2 1/2 pounds firm but ripe Anjou or Comice pears (about 6), peeled, halved, cored, cut into 1/3-inch-thick slices

Steps:

  • For ice cream:
  • Combine pears, pear nectar and lemon juice in heavy medium saucepan. Bring to boil over medium-high heat. Transfer to processor; puree until smooth. Chill until cold.
  • Whisk yolks and sugar in medium bowl to blend. Bring 1 cup cream to simmer in heavy medium saucepan. Gradually whisk hot cream into yolk mixture. Return to same saucepan. Scrape seeds from vanilla bean into mixture; add bean. Stir over low heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 7 minutes (do not boil). Pour through strainer into bowl. Mix in 1 cup cream. Cool 15 minutes.
  • Add corn syrup and 3 cups pear puree to custard and whisk until blended (reserve any remaining pear puree for another use). Chill custard until cold, at least 4 hour or overnight.
  • Transfer custard to ice cream maker. Process according to manufacturer's instructions. Transfer to covered container and freeze. (Can be made 2 days ahead.)
  • For compote:
  • Combine wine, sugar and cloves in heavy large saucepan. Scrape seeds from vanilla bean into saucepan; add bean. Stir over medium heat until sugar dissolves. Bring to boil. Add pears; simmer until tender, about 5 minutes. Using slotted spoon, transfer pears to medium bowl. Boil liquid in saucepan until slightly thickened and syrupy, adding any juices from bowl of pears, about 12 minutes. Pour over pears. Chill until cold, at least 4 hours or overnight. Discard vanilla bean and cloves (Can be made 1 day ahead. Cover and keep chilled.)
  • Scoop ice cream into goblets. Spoon pears and syrup over and serve.

2 tablespoons white sugar
1 teaspoon lemon juice
¼ teaspoon coarse salt
1 tablespoon vanilla extract
6 egg yolks
1 cup white sugar
2 ½ cups heavy whipping cream
1 ½ cups whole milk
1 cup light corn syrup
1 cup brown sugar
¼ cup unsalted butter
⅛ teaspoon sea salt, or to taste
½ cup heavy whipping cream
2 tablespoons heavy whipping cream

Steps:

  • Cook pears, 2 tablespoons white sugar, lemon juice, 1/4 teaspoon coarse salt, and vanilla extract in a saucepan over medium heat until pears are soft, 6 to 7 minutes. Remove from heat; cool pear mixture for 5 minutes. Transfer to a blender. Puree pear mixture and strain through a fine mesh strainer into a bowl.
  • Whisk egg yolks and 1 cup white sugar in a bowl. Heat 2 1/2 cups cream and milk in a large saucepan over medium-low heat just until bubbles appear at the edge; do not boil. Remove cream and milk from heat and whisk egg yolk mixture into cream and milk by small amounts until all egg yolk mixture is incorporated. Transfer to a bowl, cover, and chill in refrigerator overnight.
  • Combine corn syrup, brown sugar, unsalted butter, and 1/8 teaspoon sea salt in a heavy saucepan. Place over medium-low heat and stir until smooth; bring to a low boil. Stirring constantly, cook caramel until thickened and light golden brown, about 3 minutes; remove from heat, and let caramel cool for 5 minutes. Whisk 1/2 cup plus 2 tablespoons cream into caramel. Transfer caramel to a bowl, cover, and chill overnight.
  • Pour custard into an ice cream maker and freeze according to manufacturer's instructions. When ice cream is softly frozen, lightly mix about 1 cup caramel into ice cream to make caramel swirls. Transfer ice cream to a bowl, cover, and freeze overnight.

1 quart vanilla ice cream, softened
1/4 cup good-quality brandy
4 firm ripe pears (Bosc, Bartlett, D'anjou)
1/4 cup lemon juice
1/4 cup butter, melted

1 tablespoon orange zest, grated
1 tablespoon lemon zest, grated
1/4 teaspoon cinnamon

Steps:

  • For the brandy ice cream:.
  • Stir together the ice cream and the brandy until well blended. Freeze until serving time.
  • Preheat oven to 350 degrees.
  • For the pears:.
  • Halve, peel and core pears. Immediately sprinkle with lemon juice to prevent browning. In a large, rimmed baking pan, mix the remaining lemon juice with the butter, honey and vanilla. Stir in the orange and lemon zest, and the spices. With a small, sharp knife, score the rounded part of each pear half diagonally in one direction, then the other, to form a diamond pattern. Place pears cut side down in baking pan. Spoon honey mixture over pears.
  • Bake pears 40-45 minutes, basting them with pan juices every 10 minutes or so, until the are very soft when pierced. Place one pear half on each plate and place scoops of ice cream around them. Garnish with the lemon and orange slices.

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch baking dish with 1 tablespoon butter. Sprinkle 1 tablespoon sugar into buttered dish.
  • Rub remaining 1 tablespoon butter over pear halves; arrange pears cut sides down in prepared baking dish and sprinkle with remaining 1 tablespoon sugar.

2 firm pears
Juice of half a lemon
1/2 cup apple juice
1/2 cup water
2 tablespoons brown sugar
4 small scoops vanilla ice cream, for serving

Steps:

  • 1. Preheat the oven to 375°F.
  • 2. Peel the pears with a vegetable peeler. Cut them in half lengthwise, leaving the stems on two of the halves if possible, and remove cores with a small melon baller. Place in an 8x8-inch baking pan, cut-side down.
  • 3. Combine the lemon juice, apple juice, water, and brown sugar; pour over the pears. Set the pan over medium heat and bring the juices to a boil. Cover the pan with aluminum foil. Bake for 40 minutes (basting after 15 minutes), or until the pears are tender when tested with a toothpick.
  • 4. Chill the pears overnight in the refrigerator, covered with the cooking syrup. Serve in four small dessert bowls to fit, cored-side up, with a small scoop of ice cream in the center of each. Spoon a little of the syrup into each bowl.

1 cup granulated sugar
2 cups water
1/2 small lemon, zest of, cut into strips
1 inch cinnamon stick
1/2 teaspoon vanilla
5 medium fresh pears, peeled, cored, and chopped (about 5 cups)
2 tablespoons lemon juice
fresh mint sprig, garnish

Steps:

  • In a 2-quart pan, combine sugar, water, lemon zest, cinnamon stick, and vanilla. Bring to a boil over high heat, stirring, and cook until sugar dissolves; continue boiling, uncovered, for 2 minutes. Add pears and bring to a boil again. Cover, reduce heat, and simmer until pears are very tender (about 15 minutes). Remove and discard lemon peel and cinnamon stick.
  • Transfer pear mixture to a blender or food processor. Add lemon juice and whirl until smooth. Pour into a 9-inch square pan and freeze until edges are frozen but center is still soft.
  • Spoon mixture into a large bowl and, with an electric mixer, beat until smooth and creamy (or whirl in a food processor). Transfer to a freezer container and place a piece of plastic wrap directly on sherbet. Cover container tightly. Freeze until firm (6 to 8 hours at 0ºF or colder).
  • To serve, scoop into 6 dessert dishes and garnish with mint.

  • Place the chopped pears into a large nonstick saucepan on medium-high heat and cook the peas for30-45 minutes until they cook down into a thick jam-like sauce. Let the pears cool slightly, then add them to a blender and puree them into a smooth sauce.
  • Place the half and half, heavy cream, cinnamon stick, and rosemary sprig into a saucepot and cook the cream mixture on medium-low for 5-6 minutes until small bubbles appear around the perimeter of the pot (this is called scalding milk). Cover the cream mixture with a lid and allow it to steep for a few minutes.
  • Meanwhile, add the egg yolks and sugar into a bowl and beat well with a whish until it is a pale yellow color. Remove the cinnamon and rosemary from the cream and whisk 1 cup of the hot cream mixture into the egg mixture. Pour the tempered eggs and cream mixture back into the pot with the remaining cream and simmer on low for 5-7minutes, frequently stirring with a wooden spoon until the rosemary-infused custard thickens and coats the spoon.
  • Stir the pear puree, vanilla extract, and almond extract into the custard base, cover the ice cream base with plastic wrap, pressing it directly onto the surface of the custard, and chill it in the refrigerator overnight. Churn the pear ice cream in an icebcream machine according to the manufacturer's directions, then transfer the pear ice cream to an airtight container and freeze for 4-6 hours until the icebcream is set.
