1/2 cup low-sodium chicken stock
1/2 cup lite coconut milk
2 tablespoons low-sodium soy sauce
1 shallot, sliced thin
1 clove garlic, minced
1 1/2 teaspoons Thai fish sauce (or 2 additional teaspoons low sodium soy sauce)
1 tablespoon brown sugar
1/2 teaspoon lime zest
1 tablespoon minced fresh ginger
1 pound skinless, boneless chicken breast pounded slightly and cut into 1-inch strips
8 (8-inch) bamboo skewers, soaked for 20 minutes
3/4 cup Spicy Peanut Dipping Sauce, recipe below
2 tablespoons minced fresh basil or cilantro leaves
1/4 cup chopped toasted peanuts
1/2 cup natural creamy peanut butter
1/4 cup low-sodium chicken broth
3 tablespoons low-sodium soy sauce
1 1/2 tablespoons brown sugar
1 1/2 tablespoons minced fresh ginger
2 tablespoons lime juice
1 teaspoon minced garlic
1/2 teaspoon chili flakes
1 teaspoon red curry paste
1 shallot, peeled and roughly chopped

Steps:

  • In a medium sized bowl, whisk together the chicken stock, coconut milk, soy sauce, shallot, garlic, fish sauce, brown sugar, lime zest, and ginger. Add the chicken strips and marinate for 1 hour. Remove the chicken from the marinade and discard the marinade.
  • Spray a nonstick grill pan with cooking spray and preheat over a medium-high flame. While pan is heating, thread chicken onto skewers. Grill 2 to 3 minutes per side, until meat is cooked through and has light grill marks.
  • Serve chicken skewers with Peanut Dipping Sauce, and garnish with basil or cilantro and chopped peanuts.
  • Yield: 4 servings (2 skewers and 2 tablespoons peanut sauce per serving)
  • Place all ingredients in blender and blend until smooth.
  • Sauce can be made 1 day ahead of time, and will keep 3 to 4 days in the refrigerator.

Steps:

  • To make the dipping sauce: combine the first 6ingredients in a small bowl and season, to taste, with red pepper flakes. Set aside.
  • To make the rolls: in a large bowl combine the bean thread noodles, cabbage, carrots, green onion, and sesame seeds. Place the cilantro, mint and shrimp in separate work bowls nearby.
  • To soften the rice paper, fill a pie plate or shallow baking dish with tepid water. Place 2 or 3 rice paper sheets in the water and allow to soak about 45 seconds to 1 minute. Remove 1 at a time and carefully stack between sheets of paper towels. Continue soaking and draining until you have softened 16 rice sheets.
  • Turn over the stack and begin working from the bottom of the stack first. Place a softened rice paper sheet on a clean work surface. On the bottom third of the sheet, pile 1/4 cup of the noodle mixture. Just above the noodles, place a shrimp half, skin side down, and top with a cilantro leaf and mint leaf. Fold the bottom of the paper up and over the noodle mixture, then fold each side toward the center, rolling gently and as tightly as possible from the bottom until completely rolled. Place rolls seam side down on a plate and continue until all ingredients have been used.
  • Keep assembled rolls under wet paper towels covered with plastic wrap. Store at room temperature up to 3 hours, do not refrigerate.

1 pound boneless, skinless chicken breasts (cut into 1-inch strips)
2 tablespoons low-sodium soy sauce (or tamari for gluten free)

2 tablespoons freshly squeezed lime juice (from 2 small, juicy limes)
1 tablespoon honey
1 tablespoon Sriracha sauce

1 tablespoon honey

The intro to this recipe says, "Serve this delicious and extremely versatile sauce with steamed vegetables or spring rolls, or toss with hot or cold cooked noodles." For a natural sweetener I use agave nectar although any other natural sweetener is fine if not using refined sugar. My husband and I are always in need of a peanut dipping sauce for his awesome homemade rice paper spring rolls. I haven't yet found a store-bought sauce that I'd buy again.

1 teaspoon curry powder
3/4 teaspoon turmeric

1/2 teaspoon Sriracha
3 cloves garlic (finely minced)
1 tablespoon soy sauce
juice and zest of one lime

1/4 cup coconut milk ((canned, not coconut milk beverage))

2 tablespoons rice vinegar
1/4 teaspoon red pepper flakes

Steps:

  • Slice the chicken breasts into long thin slices and set aside.
  • In a medium bowl, combine the curry powder, turmeric, cumin, brown sugar, ginger, peanut butter, Sriracha, garlic, soy sauce, lime juice and zest, fish sauce and coconut milk, whisking everything together until combined.
  • Add the chicken pieces to the marinade and place in a fridge-safe container (or cover the bowl), and let sit in the fridge for one to four hours.
  • While the chicken is marinating, if you're using wooden skewers soak them in water for about 30 minutes. This will prevent the skewers from burning during cooking.
  • You can also prepare the dipping sauce while the chicken is marinating. Simply whisk together the soy sauce, rice vinegar, red pepper flakes, brown sugar, ginger, sesame oil, peanut butter and coconut cream in a small bowl until smooth and creamy. Set aside at room temperature while you cook the chicken.
  • Weave the chicken pieces onto the soaked skewers (or metal ones, if you have them), making about 8 skewers in total.
  • Grill the chicken skewers for about 7-8 minutes per side on an indoor grill on medium-high heat (or in a large cast iron frying pan, or on a pancake griddle) until completely cooked through. Chicken should reach an internal temperature of 165 Fahrenheit (75 Celsius) when it's safe to eat, so be sure to test it with an instant-read meat thermometer.
  • Serve the chicken skewers immediately with the peanut sauce for dipping, either as an appetizer or as a main dish alongside some rice and steamed veggies. Garnish with chopped peanuts and fresh cilantro, if desired.

1 Tbsp. soy sauce
1-1/2 tsp. chili powder
3/4 cup coconut milk
1/4 cup creamy peanut butter
1 Tbsp. sugar
1 Tbsp. minced fresh ginger
1-1/2 tsp. nam pla (fish sauce)
1 tsp. ground ginger
1 tsp. chili paste
1 tsp. ground coriander

Steps:

  • Cook ingredients in saucepan on medium-low heat 5 to 8 min. or until heated through, stirring frequently.
  • Serve warm.

1/3 cup plus 1 tablespoon minced fresh lemongrass (from bottom 6 inches of stalk)
3 tablespoons fresh lime juice
2 tablespoons dark brown sugar
1 tablespoon soy sauce
2 garlic cloves, minced
3/4 pound pork tenderloin, trimmed, cut into 3-inch-long, 1/2-inch wide, 1/4-inch thick slices
1 cup (or more) canned low-salt chicken broth
1/2 cup creamy peanut butter (do not use old-fashioned style or freshly ground)
1/2 cup chopped onion
1 tablespoon coriander seeds
1/2 jalapeño chili, minced
12 8-inch bamboo skewers, soaked in water 30 minutes
Minced green onion tops

Steps:

  • Mix 1 tablespoon lemongrass, 1 tablespoon lime juice, 1 tablespoon sugar, soy sauce and garlic in large bowl. Add pork; toss to coat with marinade. Let stand 30 minutes to 1 hour.
  • Meanwhile, mix remaining 1/3 cup lemongrass, remaining 2 tablespoons lime juice, remaining 1 tablespoon sugar, 1 cup broth, peanut butter, onion, coriander and jalapeño in heavy medium saucepan. Bring to boil, whisking frequently. Transfer mixture to blender and puree. Strain into heavy small saucepan, pressing on solids with back of spoon; discard solids. Simmer until reduced to thick sauce consistency, stirring frequently, about 6 minutes. (Can be prepared 1 day ahead. Cover and refrigerate. Reheat before using, thinning with more chicken broth if necessary.)
  • Preheat broiler. Thread 3 pork strips on each skewer. Broil until cooked through, about 3 minutes per side. Pour sauce into bowl; set in center of platter. Sprinkle with green onion. Surround with pork skewers and serve.
