Steps:

FANCY FISH AND ZUCCHINI FRIES

- Fill a large deep pot halfway with vegetable oil and heat over medium-high heat to 375 degrees F on a deep-fry thermometer.
- Preheat the oven to 200 degrees F. Place a wire rack on a sheet pan and set aside.
- For the zucchini fries: Add the milk and lemon juice to a bowl and mix. Add the cornstarch and salt to a separate bowl and mix.
- Place the zucchini batons first in the milk and then in the cornstarch and toss to coat.
- Carefully add the zucchini batons to the hot oil in 2 batches and fry until golden brown, about 4 minutes per batch. Remove to the prepared wire rack and sprinkle with sea salt. Keep warm in the oven while you make the fish goujons.
- For the fish goujons: Place 1/2 cup of the flour in a shallow dish, add 1 teaspoon of the salt and the pepper, then mix.
- Combine the cornstarch, baking powder, remaining 1 teaspoon salt and remaining 1 1/2 cups flour, then whisk together. Slowly add the brown ale and mix until just combined.
- Dredge the fish, one piece at a time, in the seasoned flour, shaking off the excess, then dip into the batter, coating well. Lower the fish into the hot oil in 2 batches and cook until golden brown, about 3 minutes per batch, flipping halfway. Remove to a paper towel-lined plate and sprinkle with sea salt.
- To serve, place the goujons on one end of a platter or board. Remove the fries from the oven and arrange on the other end.
- Place a ramekin of tartare sauce on the platter, then garnish with lemon wedges and the parsley to serve.
RANCH ZUCCHINI FRIES
These round "fries" are breaded and baked for an addicting crunch. Plus, the easy homemade ranch seasoning makes them super-zesty.

Steps:
- Heat oven to 450ºF.
- Cut zucchini crosswise in half, then cut each piece into 1/4-inch-thick matchlike sticks. Whisk egg in medium bowl until blended. Combine bread crumbs and cheese in separate medium bowl.
- Spray rimmed baking sheet with cooking spray. Place zucchini in large bowl. Add flour; toss to evenly coat zucchini with flour. Working with 1 zucchini stick at a time, gently shake excess flour off zucchini, then dip zucchini in egg, then bread crumb mixture, turning to evenly coat zucchini stick with each ingredient. Place on prepared baking sheet.
- Bake 12 to 13 min. or until zucchini is tender and golden brown, turning after 7 min.
- Serve with ketchup.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Drizzle 2 tablespoons olive oil onto the prepared baking sheet; place zucchini slices in the oil. Drizzle 3 more tablespoons olive oil over zucchini slices; season with salt and black pepper. Toss coated zucchini slices with 1 cup bread crumbs.

ZUCCHINI OVEN " FRIES"
These are really good and have the added bonus of very little fat! We eat these often during the summer, sometimes in place of oven "fries" made with potatoes. You can add some cayenne pepper for a kick if you want. Give them a try and tell me what you think! EDIT!: Given some reviewers advice, I tried them again. 45 minutes was way too long for us, we just ended up with a crispy shell and no zucchini left. But 30 minutes was very good, keeping the taste of the zucchini, with one turn. The problem with the "flouriness" not cooking away, I've found that if you spray them VERY well with cooking spray it resolves this problem for me. I'm editing the recipe to reflect this.

- Lightly coat baking sheet with cooking spray.

I have loved this ever since I was a little girl. It takes a while to make but it's really easy and totally worth it. Cooked zucchini is the best!! **However, I must mention that I use garden zucchinis for this recipe that tend to be quite a bit larger than those purchased in a grocery store. If you are using smaller zucchinis, you will need less of the coating mixture.

If you like crispy, battered zucchini, this is the lowfat alternative for you!! I could not believe it, but they came out crispy!! The egg whites are the secret. The recipe below is straight off the WW website. The flour definitely needs MORE seasoning though - garlic? Cayenne? Salt after they're out of the oven? I will be perfecting this for our family's tastes, but these zukes are going into our regular rotation!!
