½ cup crunchy peanut butter (you could use creamy too, but I love the crunchy kind in this recipe)
8 oz. container Cool Whip (thawed)
¾ cup powdered sugar
1 graham cracker crust

Steps:

  • Combine the cream cheese and peanut butter in a bowl and beat with an electric mixer for about 2-3 minutes. Add the Cool Whip and powdered sugar and continue beating until smooth.
  • Spoon the filling into the crust and freeze for at least 8 hours or overnight.
  • I like to drizzle the pie with some chocolate syrup and I usually add some chocolate shavings to the top also - it makes a fabulous dessert even better and it looks fancier that way too! Enjoy!

3 tablespoons melted unsalted grass feed butter, ghee, or coconut oil

1/2 cup pitted medjool dates
2 teaspoons vanilla extract
2 cups heavy whipping cream (or 1 cup cream + 1 cup plain greek yogurt)

  • 1. In a food processor, combine the cashews, coconut, and cacao powder and pulse until finely chopped and combined. Add the butter and pulse until the crust is moist. The dough should stick together when squeezed into a ball with your hands.2. Press the crust into an 8-9 inch tart pan, using your finger to press the dough up the sides. Place the pan in the freezer and freezer for 15 minutes.3. Meanwhile, make the filling. Steps:

  • Using a food processor, crush the cookies until they are in fine crumbs.
  • Pour the crumbs in a bowl and add the melted butter. Mix well.
  • Spray the bottom of a 10" springform pan with cooking spray.

1 sleeve chocolate graham crackers*
1/4 cup sugar
6 tbsp melted butter
8 oz mascarpone cheese (at room temperature)
1 cup peanut butter (creamy or crunchy, up to you)
1 cup confectioner's sugar ((4 ounces by weight))
1 tsp vanilla extract
1.5 cups heavy cream
1/2 cup heavy cream
1 tbsp sugar
chopped peanut butter cups (for garnish (about 6 mini, or 2 regular))

Steps:

  • Preheat oven to 350 degrees F.
  • In a food processor, pulse together the graham crackers and sugar, until ground.
  • Add the melted butter, and pulse until evenly moistened, about 10 times.
  • Press the mixture evenly into a 9" pie plate, pushing the crust about halfway up the sides.
  • Bake for 8-10 minutes, until it looks dry and has lots its sheen, then cool completely on a wire rack.
  • To make the filling, with a hand mixer, beat the mascarpone, peanut butter, confectioner's sugar, and vanilla extract, until fluffy and light, about 2 minutes.
  • In a separate bowl, whip the cream to soft peaks, then gently fold it into the peanut butter mixture in 3 separate installments.
  • Spoon the mixture evenly into the cooled crust, cover with plastic wrap, and chill completely. It will take about 6 hours in the refrigerator, or you can expedite the process by freezing for 2 hours.
  • To serve, whip the 1/2 cup cream and 1 tbsp sugar to soft peaks, and spread over the pie. Garnish with chopped peanut cups, and serve.

1 stick (1/2 cup) unsalted butter, melted
1/2 cup sugar
