Adapted from a listing in Bon Appétit (Nov 1998), this is a Thanksgiving favorite! I make a double batch the night before and save a little for another use. Spread a thick layer over a small round of brie and bake 10 mins at 400 degrees F for an impressive appetizer.

2 1/2 cups cranberry juice (not juice cocktail)
1 (8 ounce) package dried tart cherries (about 2 cups) or 1 (8 ounce) package craisins
1 cup sugar
1 (12 ounce) package cranberries
1/4 teaspoon ground cloves (or more)
1 dash nutmeg

Steps:

  • Bring juice to simmer in heavy, large saucepan.
  • Remove from heat.
  • Add cherries and let stand 8 minutes.
  • Mix in sugar, then cranberries, cloves, and nutmeg.
  • Cook over medium-high heat until cranberries burst, stirring occasionally, about 9 minutes.
  • Refrigerate at least 4 hours (it will thicken as it cools) or up to 48 hours before serving.

1 pound cranberries (fresh or frozen)
2 cups sugar
1/2 cup tart cherry juice
1/2 cup dried cherries
1 sprig rosemary
Kosher salt

Steps:

  • Combine the cranberries, sugar, 1 1/2 cups water, the cherry juice, dried cherries, rosemary and a pinch of salt in a medium saucepan. Bring to a simmer over medium heat and cook, stirring occasionally, until the cranberries burst and the sauce thickens, 15 to 20 minutes. Let cool slightly. Discard the rosemary sprig.
  • Puree the sauce in a blender until smooth. Strain through a fine-mesh sieve into a serving dish, pressing the sauce through with a rubber spatula. Refrigerate until set, at least 3 hours or overnight.

Steps:

  • Combine all ingredients in a medium saucepan and cook over medium heat intil cranberries pop. Reduce heat to low; cook, stirring occasionally, until cranberries release their juices, about 15 minutes. If the cranbgerry sauce becomes too thick, add water until the desired consistency is reached.
  • Transfer to a bowl to cool.

1 ½ cups water
5 whole cloves
5 whole allspice berries
3 cinnamon sticks
2 cups white sugar

Steps:

  • Place fresh cranberries and water in a medium saucepan over medium heat.
  • Wrap cloves, allspice berries and cinnamon sticks in a spice bag. Place in the water with cranberries.
  • Cook until cranberries begin to burst, about 10 minutes.
  • Stir in sugar and reduce heat to low. Continue cooking 5 minutes, or until sugar has dissolved. Remove from heat and allow to cool. Discard spice bag. Chill in the refrigerator 8 hours, or overnight, before serving.

6 ounces organic frozen cranberries (thawed)
1 cup organic orange juice
1 cup raw sugar
2 1/2 teaspoons agar, powder

  • Put everything except the agar into a large sauce pan and heat until the cranberries burst and the liquid is reduced by half.
  • Add the agar and stir. Bring back to a boil and then simmer for 5 minutes. Place in the fridge and let it set up.
